This is one delicious sauce, that I've been making since a teenager...give it a try sometime...if you don't like heat, just leave out the cayenne...so good! Enjoy!

Time 2h10m

Number Of Ingredients 16

1 lb ground beef
2 clove garlic, minced
1 onion, chopped fine
1 small green pepper, minced - optional - i don't always use
3 Tbsp oil
4 c water
2 Tbsp brown sugar
1 1/2 tsp cayenne pepper
pinch cinnamon & ground cloves
2 Tbsp chili powder
1 1/4 Tbsp cumin
1 1/2 tsp kosher salt
1 tsp black pepper
1 1/2 Tbsp ketchup
1/2 Tbsp worcestershire sauce
1 small can, tomato paste

Steps:

  • 1. In a small skillet, saute onions and garlic in oil until just staring to brown. Set aside. In a large bowl add the ground beef and cumin, chili powder, cinnamon, cloves, cayenne, salt, pepper. Add 2 cups of water and mix all together until ground beef is small pieces and spices are thoroughly blended. ( i use my hands; it's easier to get the ground beef to the right consistency...you don't want any large pieces remaining.)
  • 2. Add the burger mixture to a 2 quart dutch oven; stir in the onion mixture. Now, stir in tomato paste, brown sugar, Worcestershire Sauce, ketchup and remaining 2 cups of water. Bring to a boil, then reduce heat to simmer. Remain simmering for 1 1/2 - 2 hours; stirring occasionally until desired thickness is reached. I usually cook mine for 1 1/2 hours.
  • 3. Enjoy with your favorite chili dog condiments..

ABSOLUTELY AWESOME HOTDOG CHILI SAUCE

Absolutely Awesome Hotdog Chili Sauce image

I was craving a chilidog, but not the usual type of dog... So, I went into the test kitchen, and came up with this "Kicked Up" chili sauce. The chorizo takes the flavors of this chili to South-of-the-Border, while the remaining ingredients and spices pull it back north into middle Texas. Let's call that my geographical...

Time 2h15m

Number Of Ingredients 15

PLAN/PURCHASE
8 oz ground chorizo
10 oz ground chuck 80/20
1 c beef or chicken stock, not broth (i prefer chicken stock)
1 medium yellow onion, finely chopped, about 1.5 cups
2 clove garlic, minced
2 Tbsp chili powder, hot or mild, your choice
1 tsp ground cumin
1 pinch ground cinnamon (just a small pinch)
1 Tbsp dehydrated onions (optional)
8 oz tomato sauce
1 c filtered water
1 tsp hot sauce (i prefer frank's)
salt, kosher variety, to taste (very optional)
black pepper, freshly ground, to taste (optional)

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your ingredients.
  • 3. Add the chorizo and chuck to a large heavy-bottomed saucepan over medium heat.
  • 4. Cook until the meat is no longer pink, about 5 - 7 minutes.
  • 5. Add the chopped onions, and the garlic.
  • 6. Cook until the onions soften, about 5 - 7 minutes.
  • 7. Remove any grease by straining the meat.
  • 8. Return the meat to the saucepan, and then add the beef or chicken stock.
  • 9. Reduce heat to medium low, and simmer until the liquid is reduced by about half, about 30 minutes.
  • 10. Mix in the chili powder, ground cumin, dehydrated onions, and the cinnamon, and then allow it to cook, while stirring, for an additional 2 minutes.
  • 11. Chef's Tip: The cinnamon really blooms this sauce, but I'm serious when I mean just a pinch... A little goes a long way.
  • 12. Chef's Note: The dehydrated onions are optional; however, they add another dimension of flavor to the chili. Je Ne Sais Quoi
  • 13. Mix in the tomato sauce, water, and hot sauce.
  • 14. Place the heat to low, and allow the sauce to slowly simmer until the liquid is reduced by about half, and the sauce begins to thicken, about 60 - 90 minutes.
  • 15. Chef's Note: You want the heat so low that there is barely any movement in the saucepan... Low and slow is the way to go. If you go any higher you'll burn the sauce. So, just gently caress the saucepan with the heat.
  • 16. Chef's Tip: Now is the time to add any additional seasoning (salt, pepper, etc.). But be careful with the salt... since this sauce is being reduced, spices like salt will only become more concentrated as time passes. I find that the sauce really doesn't need any salt.
  • 17. PLATE/PRESENT
  • 18. Get out your best doggie and ladle on the sauce... so yummy. Enjoy
  • 19. Keep the faith, and keep cooking.

DOGGIE ESSENTIALS: HOTDOG AWESOME SAUCE

Doggie Essentials: Hotdog Awesome Sauce image

I have two hotdog chili recipes posted, and both are great on a good doggie. This one is a bit different. I am using three different meats, and a few other new ingredients. Served this on top of some prime hotdogs with Bonnie's baked french-fries, coleslaw, and some nice tall cold ones. So, you ready... Let's get into the kitchen.

THE MEATS
1 pound(s) ground beef, lean (80/20)
8 ounce(s) ground pork loin
4 ounce(s) ground italian sausage, mild or hot, your choice
THE VEGGIES
1 medium yellow onion, finely chopped or grated
2 - 3 clove(s) garlic, minced
THE DRY SPICES
2 - 3 tablespoon(s) chili powder, hot or mild, your choice
1 tablespoon(s) dehydrated onions
1 teaspoon(s) ground cumin, or to taste
1 teaspoon(s) smoked paprika
1 teaspoon(s) mustard powder, i prefer coleman's
1 pinch(es) ground cinnamon
THE SAUCE INGREDIENTS
8 ounce(s) tomato sauce, 1 can
1 teaspoon(s) hot sauce (i prefer frank's), or to taste
4 ounce(s) freshly brewed coffee
2 1/2 cup(s) beef stock, not broth
ADDITIONAL ITEMS
salt, kosher variety, to taste
white pepper, freshly ground, to taste

Steps:

  • PREP/PREPARE
  • You will want a large skillet with tall sides, or a good pot to make this recipe.
  • This entire recipe relies on cooking at a low-and-slow temperature. Anything above a simmer is to high. The reason for this is that it gives the ingredients a bit of time to meld their flavors. As a matter of fact, assuming you can spare the time, if you allow it to cool down, stick it in the fridge, and then reheat it the next day, it tastes even better.
  • Gather your ingredients (mise en place).
  • Gently toss the meats together, taking care not to compress them.
  • Add the three meats to a skillet or pot over medium-low heat, cook for 15 - 20 minutes.
  • While the ground meats are slowly cooking, add the dry spices to a bowl and reserve.
  • When the ground meats are nice and browned, add the onions and garlic.
  • Combine and slowly simmer for 15 - 20 minutes.
  • Add the dry spices.
  • Combine with the ground meats and cook for 3 - 4 minutes.
  • Add the tomato and hot sauces and stir for about 2 - 3 minutes.
  • Add the beef stock and coffee, then stir to combine.
  • Turn the heat down to the lowest simmer you can manage, and let the sauce cook until reduces it by about half, and thickens, about 30 - 45 minutes.
  • While the sauce is simmering taste and add a bit of salt and pepper, to taste. But remember that the sauce is reducing, so the salt you add at the beginning will be more concentrated at the end... be careful with the salt.
  • PLATE/PRESENT
  • Serve up with your favorite dogs. Enjoy.
  • Keep the faith, and keep cooking.
