CAESAR'S PASTA SALAD

3 cups 1/3-inch-diced day-old bread
2 tablespoons olive oil
1/2 cup freshly grated Parmesan
1/4 teaspoon kosher salt
1 cup freshly grated Parmesan
1/2 cup reduced-fat buttermilk
1/4 cup reduced-fat Greek yogurt
1/4 cup extra-virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 cloves garlic, smashed and peeled
2 hearts of romaine lettuce, cut into 1/3-inch pieces
2 ears of corn, kernels removed
8 ounces tricolored fusilli, cooked and cooled

Steps:

For the croutons: Preheat the oven to 400 degrees F.
On a small rimmed baking sheet, toss the cubed bread with the olive oil, Parmesan and salt. Bake until golden brown and crispy, about 15 minutes.
For the dressing: Meanwhile, in a large bowl, whisk together the Parmesan, buttermilk, yogurt, olive oil, salt, pepper and garlic. Set aside to let the flavors marry for 5 minutes.
For the salad: Remove the cloves of garlic from the dressing and discard. To the bowl of dressing, add the lettuce, corn, pasta and croutons. Toss well to coat.

Delicious and picnic-safe? Sign us up! This is a great pasta salad sans mayo filled with lots of veggies. So, feel free to whip up a batch and head on out to your summer festivities. It has fantastic flavor and is meant to serve a crowd. Making the dressing, rather than bottled, gives this summer salad a fresh flavor. The pasta salad recipe is terrific as written, but it would also be fairly easy to substitute in any other veggies you have around the kitchen. You can make this a day ahead because it's even better the next day.

1 pound(s) small elbow macaroni, cooked
1/4 pound(s) genoa salami
1/4 pound(s) boiled ham
1/2 can(s) black olives (6.5 oz can)
3 stalk(s) celery
1 large cucumber
3 medium tomatoes
1 medium red onion
2 package(s) Good Seasons Italian dressing (made according to package directions)

Steps:

Cook macaroni. Rinse in cold water and cool macaroni.
Dice ALL ingredients into VERY small pieces.
Toss everything together in a large bowl.
Mix dressing according to package directions.
Stir in dressing and make sure everything is well coated.
Best if made the night or day before and served at room temperature. I put everything in a large white kitchen trash bag. Makes for easy tossing and storing in the refrigerator. Can very easily be halved, doubled, or tripled.

I love pasta salad in the summer and make it often... This is one that I make often, and it's WONDERFUL!

Ingredients

1 (16 ounce) box rotini pasta, cooked and drained (corkscrew)
1 large onion, cut in 1/2, then sliced into thin wedges
1/2 green pepper, diced
2 carrots, diced
2 stalks celery, diced
1 large cucumber, peeled, and diced
2 medium tomatoes, cut in 1/2, then sliced into thin wedges
3 large broccoli florets, separating flowers into bite size pieces and peeling stem, and cutting into thin slices
1 (15 ounce) can black olives (left whole, cut in 1/2, or cut into slices)
16 ounces bottle* of your favorite salad dressing (I use Italian, Caesar or Christy's Greek Dressing, (my favorite)
salt and pepper, to taste

Steps:

Cook pasta according to box directions, drain and let cool (do not overcook pasta, or salad will be mushy). Refrigerate.
Meanwhile, slice and dice all veggies, and put in a big bowl. Refrigerate.
When all is chilled mix veggies in with pasta, and add salad dressing, and salt and pepper to taste. Mix all well.
*Save some of the salad dressing to pour on just before serving. When it's time to serve you can add more salad dressing, if you like more. The pasta has a tendency to soak up salad dressing as it marinates, so I save some to add right at serving time.
Variations:.
Use kalamata, or green olives instead of black.
Add little corn ears.
Add your favorite cheese, any hard, American or Feta.
Add cheese and diced pepperoni, or hard salami.
Add frozen green peas, thawed.
Add radishes, diced, or sliced.
