6 medium sweet potatoes (about 12 ounces each)
1/4 cup butter, softened
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups shredded cheddar cheese
6 bacon strips, cooked and crumbled

Steps:

  • Preheat oven to 375°. Scrub sweet potatoes; pierce each several times with a fork. Place in a foil-lined 15x10x1-in. baking pan; bake until tender, 1 to 1-1/4 hours. Cool slightly., Cut a thin slice off the top of each potato; discard slice. Scoop out pulp, leaving thin shells. In a large bowl, mash pulp with butter, salt and pepper; stir in cheese and bacon. Spoon into potato shells., Return to pan. Bake until heated through, 15-20 minutes.

These are the ultimate double-baked Sweet Potatoes! Packed with cheese, bacon, and herbs, these are the perfect side dish to almost any meal!

Number Of Ingredients 8

4 sweet potatoes
4 Tablespoons unsalted butter
1/2 cup milk or cream
4 ounces cheddar cheese
4 ounces bacon, crumbled (optional)
2 tablespoons chives or scallions, chopped
Drizzle of olive oil
Salt and pepper

Steps:

  • 1) Wash potatoes well and lay them out on a baking sheet. Drizzle with olive oil and add a pinch of salt. Bake at 350 degrees until potatoes are very tender, probably 45-50 minutes. You can also poke holes in potatoes and microwave them for 2-minute bursts until they are tender, about 8-10 minutes.
  • 2) Let potatoes cool for a few minutes until you can handle them, then use a sharp knife to slice off the top of each potato.
  • 3) Use a spoon to scoop out the potato flesh and add it to a bowl. Mix in other filling ingredients (experiment with browned bacon, caramelized onions, sage, rosemary, etc). Stir well to combine.
  • 4) Scoop filling back into potato shells.
  • 5) Sprinkle on grated cheese (optional).
  • 6) Stick under the broiler for a few minutes until cheese is melted and the potato is slightly browned around the edges. You could also bake at 500 degrees for about 10 minutes.
  • 7) Serve immediately!
  • You can make these in advance! Fill the potatoes and store them in the fridge. When you're ready to make them, bake them at 400˚ F. for about 25-30 minutes until the potatoes are warmed through and slighly crispy around the edges.

Steps:

  • Heat oven to 400°F.
  • Prick potatoes in several places with fork. Place on foil-covered rimmed baking sheet sprayed with cooking spray. Bake 1 hour 15 min. or until tender. Cool slightly.
  • Cut potatoes crosswise in half; scoop out centers into medium bowl, leaving 1/4-inch-thick shells. Place potatoes, cut sides up, on work surface. Mash potato centers with cream cheese spread until smooth. Stir in half the bacon.

4 strips bacon
3 scallions, chopped, 2 tablespoons reserved for garnish
2 tablespoons maple syrup
4 ounces smoked Cheddar, shredded (about 1 1/4 cups)
Kosher salt and freshly ground black pepper
Sour cream, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the sweet potatoes on a foil-lined baking pan. Bake until a paring knife inserted in the center pierces easily, about 1 hour. Cool slightly.
  • Meanwhile, cook the bacon in a medium skillet over medium heat until crisp and brown, about 7 minutes. Transfer to a paper-towel lined plate to drain. Reserve 1 tablespoon of the bacon fat. Crumble bacon.
  • Halve the sweet potatoes lengthwise. Carefully scoop most of the flesh out into a bowl, leaving enough flesh in the skin so that it holds its shape. 4 orange-fleshed sweet potatoes
½ tablespoon olive oil
1 (8 ounce) package bacon, diced
⅓ cup sliced green onions
¼ cup diced jalapeno peppers
salt to taste
freshly ground black pepper to taste

½ cup shredded sharp white Cheddar cheese
2 tablespoons creme fraiche
2 teaspoons fresh lime juice
2 tablespoons shredded sharp white Cheddar cheese, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place sweet potatoes on a baking sheet. Prick with a knife and drizzle with olive oil; rub to coat. Space sweet potatoes evenly apart.
  • Bake in the preheated oven until completely tender, about 35 minutes.
  • Meanwhile, add bacon to a pan over medium heat. Cook and stir until bacon starts to get crispy and the fat turns foamy, 4 to 5 minutes. Add green onions and jalapeno; cook and stir for 1 minute. Remove from heat and set aside.

5 pounds sweet potatoes
1 pound bacon
½ cup bread crumbs
4 tablespoons butter, melted
½ cup sour cream
¼ cup chopped green onions
¼ cup butter, softened

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a half-sheet pan with foil or parchment paper; spray lightly with nonstick cooking spray.
  • Pierce sweet potatoes well and place on the prepared baking sheet.
  • Bake in the preheated oven until tender, about 90 minutes. Remove from heat and cool until potatoes are cool enough to handle. Remove skins. Leave the oven on.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble.

3 large sweet potatoes
1/2 cup low-fat sour cream
2 tablespoons unsalted butter
1/4 teaspoon salt
1 egg, beaten
1/4 teaspoon pepper

1/4 cup bacon, cooked, crumbled (I use Hormel's Real Bacon Pieces)
1/4 teaspoon paprika (optional)

Steps:

  • Preheat the oven to 400 degrees F.
  • Wash the sweet potatoes & spray them with a nonstick vegetable spray, then place on a baking sheet & bake for 1 hour or until done.
  • Cool the potatoes a bit, then cut them in half lengthwise & scoop out the pulp, leaving enough to make a sturdy shell.
  • In a mixing bowl, combine the potato pulp, sour cream, butter, salt, egg, pepper & sugar, mashing & mixing to combine well.
  • Add the crumbled bacon & mix well, then fill the potato shells with the mixture. If using the paprika, sprinkle that on top.

  • Line a rimmed baking sheet with a silicone baking mat or parchment paper.

  • Preheat oven to 400 degrees. Place the sweet potatoes on a parchment-lined baking sheet; bake until tender when pierced with a paring knife, about 45 minutes. Remove from oven; let cool slightly.

  • Transfer mixture to a pastry bag fitted with a star tip; pipe into reserved halves. Bake until golden, about 20 minutes. Remove from oven; garnish with Gruyere, rosemary, and reserved bacon.
