Steps:
- Combine the first 4 ingredients in a medium saucepan over medium high heat.
- Bring to a boil, gradually add polenta, stirring constantly with a wisk.
- Cook 2 minutes until thick, stirring constantly.
- Remove from heat and stir in cheeses.
- Serve immediately.

TWO-CHEESE POLENTA
Steps:
- Bring 3 cups each chicken broth and water to a boil with 1/2 teaspoon kosher salt. Slowly stir in 1 1/4 cups polenta; reduce the heat to low and cook, stirring, 1 minute. Cover and cook, stirring occasionally, until thickened, about 35 minutes. Whisk in up to 1 cup water until creamy. Stir in 1/2 pound chopped fontina and 2 tablespoons grated parmesan until melted.
CHEESY POLENTA
This versatile side dish would work great along with pork, chicken, beef or fish. The trick is to slowly add the cornmeal and whisk constantly to avoid lumps.

Steps:
- In a large pot over medium-high heat, bring milk, water, and salt to a boil. Gradually whisk in polenta. Reduce heat to low, and cover. Cook 20 minutes, until creamy, lifting the lid and stirring every 3 or 4 minutes to prevent sticking. Remove pot from stove, stir in pepper and butter. Gradually stir in cheese. Serve.

CREAMY POLENTA FOR 2
Super creamy, tasty polenta, made especially for 2 people. As far as creamy polenta goes, this recipe is pretty fool-proof. Starting the liquids off cold prevents clumps from forming. I've been using this recipe now for a while and it's pretty forgiving. Cheers!

Steps:
- Pour chicken stock, fat free milk and coarse ground corn into a cold pot.
- Turn burner on Medium/Medium-High.
- Bring contents of pot to a simmer.
- Simmer until contents are no longer "wet" - corn has absorbed most of the liquid.
- Turn burner off and add cheddar cheese, cream cheese, salt and pepper; whisk to combine.
- Serve warm.
DOUBLE CORN POLENTA WITH PROSCIUTTO
Found this recipe in a Redbook Magazine. Actually my granddaughter, Kayla, found it and begged me to cook it, so I did. It was wonderful. Will be making it again because we get tired of ordinary rice, noodles or potatoes. and because, well...it is WONDERFUL! By the way, for those, like me, who are not familiar with polenta, it is course grain corn meal like Albers. I sent my DH to the market to get a bag of dry polenta when I had a whole box of corn meal in the cupboard, lol.

- Steel Knife: With machine running, drop chili through feed tube and mince. Remove from work bowl.
- Shredder: Arrange cheese in feed tube and shred using light pressure.
- Generously grease 8-inch square pan. Bring water, 2 tablespoons oil and the salt to boil in large heavy saucepan. Reduce heat to low. Add cornmeal in thin, steady stream, whisking constantly. Cook until mixture is very thick and film forms on bottom of pan, stirring frequently, about 9 minutes. (Or to microwave: Combine water, 2 tablespoons oil, salt, and cornmeal in 3-quart microwave casserole. Cover and cook on High 4 minutes. Uncover; whisk until smooth. Cover and cook until very thick, about 6 minutes.) Add chili, half of cheese and pepper and stir until smooth. Transfer mixture to prepared pan. Smooth top with spatula. Cool completely. (Can be prepared 3 days ahead. Cover and chill.).
- Position rack in center of oven and preheat to 425 degrees. Grease large baking sheet. Cut polenta into eight rounds using 2 1/2-inch biscuit cutter. Transfer to prepared sheet. Brush tops of rounds with remaining 1 tablespoon oil. Sprinkle with remaining cheese. Bake until cheese is golden, 10 to 12 minutes. (Or to microwave: Arrange 4 polenta rounds in circle on microwave plate. Brush with oil and sprinkle with cheese. Cook uncovered on Medium 7 minutes. Repeat with remaining polenta, oil, and cheese. Serve hot.

- Preheat oven to 350 degrees.
- Spray a 7-1/2" by 11-3/4" pan or 2 quart casserole with cooking spray.
- Break the eggs into a medium bowl and beat lightly.
