DUTCH OVEN GROUND BEEF GOULASH
This is a smoky, rich, Dutch oven goulash. The cavatappi pasta captures large amounts of this great paprika sauce. While the red pepper and lemon, added towards the end of cooking, add a little freshness which helps balance the sauce. Serve with a dollop of sour cream and some chives.

- Heat oil in a Dutch oven over medium heat. Cook and stir onion in the hot oil until translucent, about 5 minutes. Increase heat to medium-high. Add ground beef, black pepper, and salt; cook and stir until browned and crumbly, about 10 minutes.
- Pour in tomatoes, beef broth, wine, paprika, garlic, Worcestershire, thyme, caraway seeds, rosemary, and bay leaves. Reduce heat to medium and simmer until reduced to a thick, stew-like consistency, about 45 minutes.
- Meanwhile, bring a large pot of lightly salted water to a boil. Cook cavatappi in the boiling water, stirring occasionally, until tender yet firm to the bite, 9 to 10 minutes.
- Stir bell pepper and lemon juice into the beef mixture and cook for 10 minutes more. Stir in cooked pasta to coat.

EASY CLASSIC GOULASH
This version of classic American beef goulash makes an easy one-pot meal for the whole family. We love it.

- Heat a large pot or Dutch oven over medium-high heat. Cook and stir beef in the hot pot until browned and crumbly, about 10 minutes; drain and discard grease. Stir onion and garlic into beef; cook and stir until onion is translucent, about 10 minutes.
- Stir tomato sauce, diced tomatoes, water, sofrito, Worcestershire sauce, Italian seasoning, seasoned salt, and bay leaves into beef mixture. Bring mixture to a boil, reduce heat to low, cover the pot, and simmer, stirring occasionally, until flavors blend, about 20 minutes.
- Pour macaroni into beef mixture, cover the pot, and continue simmering until pasta is tender and flavors are completely blended, about 25 minutes. Discard bay leaves.

DOWN-HOME GOULASH
This is my take on American Goulash, Down-Home Goulash. Originally I ran across a recipe for goulash while enjoying some good ol Paula Deen ( Bobby's Goulash.) The recipes are similar, enough so that I have to make sure I give a wink and a nudge to the Deens. Now Bobby might not like mine as much as his mama's but in this house we think it is pretty darn good (we liked Paula's too don't get me wrong.) Now the pasta turns out really soft for those who aren't familiar with country goulash. It is also one of the most versatile recipes. The additions you can add are endless and all just as good. Mushrooms, bell peppers, olives, corn, etc. are all great. It really just all depends on what you and your family enjoy. We garnished with shredded cheddar and sour cream, but again its all about what you like. Just experiment and have fun and let me know how it turns out! If you make it and really do not like the mushy noodles (I know some folks just don't) they you can boil and drain the pasta separate, you will just want to lessen the amount of broth. Just add in until it is the consistency you like, and be sure to watch your salt so you don't make it too salty. If you are unsure just half the recipe and try it out since this does make a pretty healthy pot of food.

- In a dutch oven brown the meat over medium-high heat. Transfer the meat into a strainer to drain.
- Add onions to the pot and cook until softened. Toss in the garlic and cook until fragrant, 15 to 30 seconds.
- Return the meat to the pot and stir in the broth, tomato sauce, and diced tomato. Add in the Italian seasoning, bay leaves, Worcestershire sauce, garlic powder, and salt and pepper. Taste for seasoning and add more salt and pepper to taste.
- Once it comes to a boil add in the macaroni, stir to combine, and cover, lowering the temperature to a simmer. Continue simmer for 30 minutes. Turn off the heat and allow to rest for 20 to 30 minutes longer. Serve topped with your favorite toppings such as cheese and sour cream.
GOULASH
Not to be confused with the Hungarian dish of paprika-spiced stewed meat and vegetables, this American version of goulash, also referred to as "slumgullion," is made with ground beef and pasta. The beef is cooked down with plenty of aromatics and spices and combined with tomatoes, pasta, and cheese to create the perfect comfort meal. We added paprika to the dish in a nod to its Hungarian counterpart.

- Heat the olive oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute.
- Add the beef and cook, stirring and breaking up the meat with a wooden spoon, until browned and no longer pink, about 8 minutes. Add 1 teaspoon salt, a few grinds of pepper, the paprika, and Italian seasoning to the beef and stir to combine. Cook, stirring, until the paprika begins to toast and become fragrant, about 1 minute. Stir the tomato paste into the beef mixture to coat, then cook until the paste thickens and deepens in color, about 2 minutes.
- Add the diced tomatoes, tomato sauce, Worcestershire and beef broth to the beef mixture and stir, scraping up any browned bits from the bottom of the pot, to combine. Bring the mixture to a boil over medium heat. Reduce the heat to medium low and add the cavatappi. Cook, stirring occasionally, until the pasta is al dente, 8 to 10 minutes.
- Remove the pot from the heat. Gently stir in the parsley and Cheddar until combined and the cheese starts to melt. Divide the goulash among 6 bowls and top with more shredded Cheddar and chopped parsley.

- In a Dutch oven, saute the ground beef and ground turkey over medium-high heat, until no pink remains. Break up meat while sauteing; spoon off any grease. Add the onions to the pot and saute until they are tender about 5 minutes. Add 3 cups water, along with the tomato sauce, tomatoes, garlic, Italian seasoning, bay leaves, soy sauce, House Seasoning, and seasoned salt. Stir well. Place a lid on the pot and allow this to cook for 20 to 25 minutes.
