Cajun cooking is one of my specialties. For a meaty meal with a little zip, this is the recipe I reach for. I think you'll enjoy every bite.-James Harris, Columbus, Georgia

2 pounds ground beef
1 cup chopped onion
1 cup chopped green pepper
1 garlic clove, minced
1 can (15 ounces) pinto beans, undrained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 to 2 tablespoons chili powder
1 tablespoon honey
1 teaspoon dried parsley flakes
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon Cajun seasoning

Steps:

  • In a Dutch oven, cook the beef, onion, green pepper and garlic over medium heat until meat is no longer pink; drain. , Meanwhile, in a blender or food processor, process beans with liquid until smooth. Stir the beans and remaining ingredients into beef mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 35-45 minutes.

Got this recipe from my South Louisiana friend. We know it is not authentic cajun cuisine but we don't care. It is well-seasoned (and I don't mean hot), hearty, and delicious.

1 cup chopped onion
1 cup chopped green pepper

1 (15 ounce) can pinto beans, undrained
1 (14 1/2 ounce) can diced tomatoes, undrained
1 (8 ounce) can tomato sauce
2 tablespoons chili powder
1 tablespoon honey
1 teaspoon dried parsley flakes
1 teaspoon dried oregano
1 teaspoon ground cumin
1 -2 teaspoon cajun seasoning

Steps:

  • In a Dutch oven, brown meat with onion, green pepper, and garlic.
  • Meanwhile, in a blender, process beans with liquid until smooth.
  • Drain fat from Dutch oven; add the beans and remaining ingredients.
  • Simmer, uncovered, for 35-40 minutes.

1 pound ground chicken
12 ounces andouille sausage, cut into 1/2-inch slices
2 teaspoons chili powder, divided
2 cups chopped white onion
1 ½ cups chopped green bell pepper
1 tablespoon finely chopped garlic
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon salt
1 (28 ounce) can Hunt's® Crushed Tomatoes
1 (15 ounce) can black beans, drained, rinsed
1 (10 ounce) can Ro*Tel® Hot Diced Tomatoes with Habaneros, undrained
1 teaspoon Sour cream and chopped parsley

Steps:

  • Heat oil in large saucepan over medium-high heat. Add ground chicken, sausage and 1 teaspoon chili powder; cook 5 to 7 minutes or until chicken is no longer pink. Remove meat mixture from saucepan; set aside.
  • Add onion, pepper and garlic; cook 5 minutes or until tender, stirring occasionally. Add cumin, paprika, salt and remaining 1 teaspoon chili powder; cook 1 to 2 minutes more or until spices are fragrant.
  • Return cooked meat mixture to saucepan; stir in crushed tomatoes, beans and undrained tomatoes. Bring to a boil. Reduce heat and simmer 10 minutes or until mixture is hot. Top each serving with sour cream and parsley, if desired.

28 ounces whole canned tomatoes
2 habanero peppers
2 jalapeno peppers
1 red bell pepper
1 green bell pepper
1/4 white onion
15 ounces black beans
15 ounces kidney beans
15 ounces chili beans
1 lb hamburger
1 lb spicy sausage
1 lb kielbasa
Tony Chachere's Seasoning
cayenne pepper
hot sauce

Steps:

  • Slice the veggies up, de-seeding the bell peppers.I like to leave the habs and jalapeno seeds in -- I like the extra heat. I tend to slice things into larger chunks so people can remove if they don't like them.
  • Combine the beans and veggies in a crock pot. A larger one is better. You can set to low or warm, if you like. Add Tony's to taste. I add a little more, you might like a little less. I also add a little cayenne pepper --
  • Slice and fry the kielbasa and then add it to the bean and veggie mix. Add hot sauce to taste. Next, fry the hamburger and sausage in the kielbasa grease. Strain and add to the crockpot and set to low for an hour. After that, you should be good to go.
  • I've heard that it's hot and that it's only warm. I tend to think it has enough spice to give it just enough kick to make you remember it. I'd say 2.5/5 for me.
  • Serve with fresh dinner or Hawaiian rolls.
