I discovered these pastries as an exchange student in Finland and they are my absolute favorite in the whole wide world (my boyfriend's too). I have been searching high and low for a recipe and finally I found this one on Axis of Aevil so I thought I'd share. Can't wait to try it!! There's the traditional Finnish filling as well as an American alternative since quark is pretty hard to find in the States. NOTE: The vanilla cream flour can be replaced by mixing together 1 teaspoon vanilla sugar and 1/4 cup potato or wheat flour

1 cup whole milk
3/8 cup softened butter
1/4 ounce dry yeast (1 packet)
1 egg
1/2 cup superfine sugar
1/2 teaspoon salt
5 cups wheat flour
1/4 cup butter
1 large egg
2 tablespoons sugar
1/2 cup Quark (a.k.a. maitorahkaa)
1/4 cup vanilla cream flour
8 ounces cream cheese (1 package)
1/4 cup granulated sugar
1 large egg
1 teaspoon orange zest or 1 teaspoon lemon zest
1 teaspoon vanilla extract or 1 teaspoon vanilla sugar
2 tablespoons unbleached all-purpose flour
1/2 cup confectioners' sugar
3 teaspoons fresh orange juice or 3 teaspoons lemon juice
1 dash water, to desired consistency

Steps:

  • Prepare filling by mixing ingredients into a smooth paste. Refrigerate until needed.
  • In a saucepan over low heat, warm the milk and butter to about 40C/104°F.
  • In a bowl, crumble the yeast into the warm milk and butter mixture. Add sugar, salt and egg. Mix together well until the yeast is dissolved.
  • Add flour gradually until the dough forms a ball. Add more flour only if it's still sticky and add only a little at a time.
  • Knead dough for about 5 minutes until smooth and elastic.
  • Place a towel over the bowl and let the dough double in a warm, draft-free place for about 30 minutes to 1 hour [warming the oven to ~40C/100F works very well as a proofing box].
  • Turn dough out onto lightly floured work surface. Gently shape dough into rough rectangle with long side nearest you. Lightly flour dough and roll into a 16-inch x 12-inch (40cm x 30cm) rectangle.
  • Spread filling on the dough leaving a 1cm/.5in border on the far edge.
  • Beginning with long edge nearest you, roll dough into taut cylinder.
  • Firmly pinch seam to seal and roll cylinder seam-side down.
  • Very gently stretch and roll to cylinder of even diameter and 18-inch/45cm length; push ends in to create even thickness.
  • Using a sharp serrated knife and gentle sawing motion, slice cylinder in half, then slice each half in half again to create evenly sized quarters. Slice 3,8cm/1.5in pieces from the rolls and place into a rectangular pan using a spatula.
  • Cover with a towel and allow to rise for about 30 minutes while the oven warms to baking temperature.
  • Make icing.
  • Bake in a pre-heated oven at 200-225C/390-435F for about 13-15 minutes.
  • Cut pulla apart and drizzle icing over the tops.
  • Try not to eat them all in one sitting. :).

I made quite a small tart, but if you want to make a bigger version, double the recipes of dough and the filling!

Number Of Ingredients 15

1.25 dl milk (about 0.5 cup)
1/2 sachet of dry yeast (5.5 g)
0.5 tbsp ground cardamom
0.5 tsp salt
0.5 dl sugar (about 0.2 cup)
3.5 dl all-purpose flour (about 1.5 cups)
50 g butter (soft, room temperature)
(egg for the eggwash)
(butter for greasing the tin)
250 g quark
1 dl whipping cream (about 0.4 cup)
1 dl sugar (about 0.4 cup)
2 tsp vanilla sugar
3 eggs
(juice and zest of 1/2 lemon)

Steps:

  • Warm up the milk and mix with the dry yeast in a bowl.
  • Add the ground cardamom, salt and sugar and mix. Add the flour in three parts and mix in between.
  • Knead in the butter until the dough is smooth. Leave the dough to rise in a warm place for at least 1 hour.
  • Preheat the oven to 200°C.
  • Make the filling. Whisk quark, whipping cream, sugar and vanilla sugar together in a bowl. Add eggs one at a time and whisk until the mixture is creamy and smooth. Mix in the lemon juice and zest.
  • Grease a tart tin with butter.
  • Pour the dough onto floured kitchen table and roll out into a circle (about 1 cm thick), just a bit bigger than your pie tin . Place into the greased tart tin and push carefully into the sides. The sides should be thicker than the bottom crust.
  • Pour the filling on top of the dough crust. Eggwash the edges of the dough.
  • Bake the tart in the lower rack of the oven for about 30-40 minutes. Start checking around 20 minutes. If the edges look too dark brown, place another baking tray over the tart to avoid it getting too dark. The filling should set during the baking, but it can still be a bit wobbly when taken out of the oven.
  • Leave to cool. Enjoy just how it is or for example with baked rhubarb like we did!

This is another classic Viennese dessert. Thinly baked crepes, filled with a Quark Cream filling and finished in the oven. It is important to use authenthic German Quark/Topfen. Some of the upscale markets and German deli's in the US carry it but if you can't find it, there is a fantastic recipe for home made Quark already posted. "Recipe #476124", it's easy and inexpensive to make and works perfect for this recipe.

280 g all-purpose flour
120 g sugar
90 g butter, unsalted, softened
1/2 liter milk
1 pinch salt
300 g Quark
50 g raisins
1 lemon, grated zest of
1/8 liter sour cream
powdered sugar, to dust
3 eggs

Steps:

  • For the batter:.
  • Combine milk, one egg, half of the softened butter and salt, mix at medium speed for a minute, reduce to low speed and gradually add the flour, blend for another minute.Cover and refrigerate for one hour.
  • Lightly butter a non stick skillet or omelette pan, heat over medium heat, ladle a little of the batter into the pan. Lift and swirl pan to cover entire surface, cook for @ 1 minute. Lift edge with a spatula to loosen and turn; cook ca. 30 seconds more and remove to a platter. Repeat with remaining batter, adding butter as needed.
  • For the Filling:.
  • Separate the two remaining eggs. Beat egg whites to soft peaks.
  • In another bowl mix the rest of the sugar with the 2 egg yolks, add the Quark, the raisins, sour cream and lemon rind. Fold in the beaten egg whites until well combined.
  • Fill each crepe with 2-3 tsp of the cream filling, roll up and place in a buttered baking dish, 4 to 6 per portion.
  • bake in a 350F oven until golden brown and heated through, Ca. 5 - 6 minutes.
  • Sprinkle with powdered sugar and serve right away.
