Easy Spiced Up Black Beans image

EatSimpleFood.com This simple dressed up black bean side or main dish has got beans cooked in their juices with sautéed onions and garlic, cumin, oregano, and chili powder.

15 oz (1 can) of black beans, with liquid
1 Tbsp olive oil
½ cup onions, diced
2 tsp garlic, minced
1 teaspoon ground cumin
¼ teaspoon dried oregano flakes
½ teaspoon chili powder
¼ tsp salt
pinch cayenne, optional for heat
¼ cup cilantro leaves, as garnish

Steps:

  • Bring a small pot to medium high heat and add olive oil and onions. Cook ~ 3-4 minutes or until translucent. You may need to turn the heat down once it starts cooking if it's too hot.
  • Add garlic and cook 1-2 minutes or until fragrant.
  • Stir in cumin, oregano, chili powder, and salt. Add cayenne pepper if you like it spicy. Cook for ~ 1 minute or until fragrant.
  • Add can of black beans with juices and bring to a boil. Reduce heat and simmer covered ~ 15 minutes.
  • Add salt to taste and garnish with cilantro. Happy Eating! Beckie

2 cups dry black beans, soaked overnight
1 quart cold water, or as needed
1 onion, chopped
1 green bell pepper, chopped
5 cloves garlic, chopped
2 bay leaves
1 tablespoon salt
1 tablespoon ground cumin
1 tablespoon dried oregano
½ cup white cooking wine
¼ cup distilled white vinegar
¼ cup olive oil

Steps:

  • In a medium stockpot, combine soaked beans (see Editor's Note), water, onion, green pepper, garlic, bay leaves, salt, cumin and oregano. Bring to a boil over medium-high heat; reduce heat to low. Simmer, covered, until beans are tender, about 1 hour. Stir occasionally and add water as necessary so that the beans don't dry out or scorch.
  • When beans are tender, stir in wine, vinegar, and olive oil.

2 (1 lb) cans vegetarian baked beans
1 (8 ounce) can crushed pineapple in juice, drained and juice reserved
1 tablespoon cornstarch
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/8 teaspoon ground cloves
1/8 teaspoon ground allspice

Steps:

  • In a medium saucepan over medium heat, heat oil and then cook onion and green pepper, stirring frequently, until tender.
  • If necessary, add a bit of water or broth so it doesn't stick.
  • Stir in beans and drained pineapple.
  • In a small bowl, stir cornstarch into reserve pineapple juice.
  • Add to saucepan.
  • Add spices.
  • Cook, stirring, until it boils.
  • Cook and stir 1 minuter longer.
