DRIED CHILE PEPPER BUTTER



Dried Chile Pepper Butter image

Use any dried peppers to make this colorful and piquant butter.

Yield Makes two 8 1/2-by-1 1/2-inch logs

Number Of Ingredients 2

1 dried ancho chile, pasilla, or other dried pepper
1 pound unsalted butter, room temperature

Steps:

  • Break apart dried pepper, and remove seeds and stem. Transfer pepper to a spice grinder or a mortar and pestle, and grind to a fine powder. There should be 2 tablespoons powder.
  • Place butter in a medium bowl. Use a rubber spatula to smooth butter into a paste. Stir in ground chile pepper until evenly distributed. Divide evenly between two pieces of parchment paper. Wrap in the parchment, forming an even cylinder; tie ends, and label. Transfer to the refrigerator to chill. To use, unwrap paper, and slice off pieces of butter. Will keep refrigerated 2 weeks or frozen up to 1 month.

Cooking time is chilling time. Herb butters are a nifty way to spice up any meal. I like herbed butters as a quick easy way to flavor frozen or canned veggies. Just add a dab of herbed butter and heat up the veggies. You can substitute margarine for the butter. If you choose to use dried herbs instead of fresh use 1 1/2 times the amount called for.

8 ounces sweet unsalted butter
2 green chili peppers, roasted and pureed
3 garlic cloves, pureed
1 tablespoon fresh chives, chopped
1/4 teaspoon cayenne
3 drops lemon juice
1/4 teaspoon fresh ground pepper

Steps:

  • Let butter soften to room temperature.
  • Beat in other ingredients.
  • Pack butter into molds or crocks or form balls with a melon baller.
  • Chill for at least 3 hours before serving.
  • Can be stored for upto 1 month in the refrigerator or 3 months in the freezer.

To add earthy heat to your cooking, roast dried Thai chiles in the oven before grinding them to a powder.

Number Of Ingredients 1

2 cups dried red chiles, such as Thai, de árbol, or japones

Steps:

  • Preheat the oven to 350°F. If you have an oven hood fan, turn it on.
  • Spread the chiles evenly across a sheet pan and roast for about 6 minutes, checking them halfway through. The chiles are done when they change color from red to a very dark reddish brown. Watch closely near the end to make sure they don't burn.
  • Transfer chiles to a plate and let cool completely. Place them in a mortar and grind with the pestle until they're the size of red pepper flakes (or use a spice grinder or small blender on high speed for 10 to 15 seconds; make sure the blender is totally dry). Store the chile powder in an airtight container; it keeps for about 3 months or longer if kept in the freezer.
