EASY CORNISH HENS
Cornish hens with herbs cooked in the slow cooker are very juicy and the meat falls off the bone.

- Mix 1/3 cup lemon juice, melted margarine, 1/2 teaspoon thyme, garlic powder, cumin, and red pepper flakes in a bowl. Pour and rub lemon juice mixture over Cornish hens. Mix 1/2 teaspoon thyme, salt, and black pepper in a bowl; sprinkle over Cornish hens.
- Pour chicken broth and 1/3 cup lemon juice into a slow cooker.
- Place about 1 tablespoon chilled margarine in the cavity of each hen; place hens in the slow cooker. Arrange the remaining margarine cubes in the chicken broth mixture.
- Cook hens in the slow cooker on High for 4 hours or Low for 8 hours.

DRUNKEN CORNISH GAME HEN
More affectionately known as Beer Butt Game Hen. In the photo I have used a rinsed out coke can as I wanted to use my Arrogant Bastard Ale & it comes in a bottle... The things one must endure... Anyway, simple, easy & delicious, crispy on the outside & moist & tender on the inside, this little birdie will serve two and makes for a lovely romantic dinner (especially when you have some extra beer!!!)

Steps:
- Preheat oven to 400 degrees.
- Line a broiler pan with foil, open the Game bird package (Tyson sells them in packages of two, individually wrapped which is darned convenient, you can freeze the other one for next time) & find an empty beer or soda can (or you can go the cheap route & use a can of Bud which works just as well) and fill to the brim with Arrogant Bastard Ale, get the dark stuff, gives a lovely flavor, pop the top (if going the Bud route) & stick it up that randy little bird's butt. Seriously. If I can add a photo you'll see what I mean, I'll give it my best shot --.
- You can put the dry ingredients in a ziplock bag & shake the bird until good & coated or just sprinkle on once on the can. VERY IMPORTANT - IF YOU USE AN ALREADY IN THE CAN BEER, POP THE TOP, I'm pretty sure you don't want it to explode in your oven -- Place the bird atop the can (really give it a good shove, get it in there good & solid) place the whole shebang in the middle of the broiler pan & then place pan in the middle of your oven. Set the timer for 45 minutes & go have a beer or two while you wait. You could also use this time constructively by getting together some nice veggies to sautee as a side dish but if you're already into the beer you probably won't care either way --.
- Enjoy the heck out of this, make two so you can invite the neighbors over, make sure you open the oven so they can point & laugh and tell you what a freak you are, it adds to the fun!
- When you think the bird is done, usually in about 45 minutes (check the thigh joint to see if the juices run clear, smaller birds don't take as long as bigger ones, duh) remove the tray from the oven & ever so gently extract the can from the bird's behind (it will be very hot so be careful!). I usually slice the bird from stem to stern while still atop the can, makes extraction easier. Whatever you do DON'T SPILL THE BEER, especially if you're naked as it will leave a nasty burn, trust me on this one--.
- Anyway, enjoy the heck out of this recipe, it's simple and you'll really love the Game hen. To substitute a regular chicken use a tall beer can & roast for an hour or more -- .

This is a great recipe for any special occasion... This happens to be my favorite Easter or Mother's Day meal. Cornish hens are intimidating to some people... but they need not be! This is a very easy way to prepare them... and they taste great too! *** I like to make a stuffing/dressing, mashed potatoes & gravy, frozen peas and cranberry sauce. What a festive - comfort foods meal !!! *** Instead of making a big pie, I like to make mini individual pies for dessert... I usually make two or more kinds of pies. *** Many of us have our "family traditions", many of us just "wing it", how ever your family does things.... - Preheat oven to 350 degrees. Butter large baking pan.
- Rub butter all over the Cornish hens and place them into the buttered baking pan.
- Pour the beer and soy sauce all over the Cornish hens. Put any remaining butter in the pan to use it all up. Cover the baking pan with a lid or aluminum foil.
- Bake covered for 40 minutes. Remove cover. Baste the Cornish hens with the liquid in the pan. Return pan to the oven and bake uncovered for 20 minutes, basting a few times.

- Preheat oven to 400°F. Sprinkle the cavity of each hen with salt and pepper; add one onion quarter and one thyme sprig to the cavity of each hen. Place hens in a roasting pan or large baking dish; pour 1 cup of the sherry over hens and inside cavities. Arrange hens, breast sides up, in roasting pan. Rub hens with butter to coat; sprinkle with salt and pepper.
- Roast hens for 50 to 55 minutes or until an instant-read thermometer inserted in an inside thigh muscle of each hen registers 180°F, basting hens with juices from bottom of the pan every 10 minutes. Remove from oven; let stand for 5 minutes before carving.
- Meanwhile, in a medium saucepan combine oil, shallot, and the remaining 1/2 cup sherry. Bring to boiling over high heat. Stir in raisins, dates, apricots, and a pinch of salt; immediately remove from heat. Cover and let stand for 5 minutes. Stir in almonds, honey, and cumin.
- Cut each hen in half lengthwise. Arrange hen halves on serving platter; pour pan drippings over hens. Top with fruit-almond mixture.
