Found this one in "Cooking Pleasures" magazine. This would be great for Thanksgiving or Christmas...great for any fall gathering really. Hope you like it!

1 (9 1/2 inch) deep dish pie shells
1 (15 ounce) canned sweet potatoes, in light syrum drained and rinsed
1/3 cup sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 eggs
1 (12 ounce) can evaporated milk
1/4 cup butter, melted
2 tablespoons spiced rum (Captain Morgans comes to mind)
1/4 teaspoon vanilla extract

Steps:

  • Heat oven to 400°F.
  • Place pie crust in 9 1/2" deep dish pie pan; crimp edges. Line crust with foil, fill with pie weights. Bake 15 - 20 minutes or until pale brown on edges and set. Remove foil and weights. Cool on wire rack.
  • Increase oven temperature to 425°F Mash sweet potatoes in medium bowl. Place in large bowl, along with sugar, salt, cinnamon and nutmeg; beat at medium speed until combined. Add eggs one at a time, beating just until blended. At low speed, beat in evaporated milk, butter, rum and vanilla until smooth.
  • Pour mixture into crust. Cover edge of crust with foil and bake at 425F for 10 minutes. Reduce oven temperature to 300F and bake 50-60 minutes or until knif inserted in center comes out clean.
  • Cool completely before cutting.

2 lbs sweet potatoes or 2 lbs cut yams, canned
1/4 cup brown sugar, packed
1/4 cup pure maple syrup
2 -3 tablespoons cognac or 2 -3 tablespoons brandy
1/4 cup roughly chopped pecans
miniature marshmallow, to put on top (optional)

Steps:

  • Spray 2-quart casserole dish with non-stick cooking spray. Heat oven to 350 degrees Fahrenheit.
  • Mix brown sugar, maple syrup, and cognac in small saucepan. Heat over medium to medium-high heat until bubbly. Stir and cook for 1-2 minutes until thickened slightly.
  • Drain sweet potatoes and place in prepared 2-quart casserole dish.
  • Pour sauce from saucepan over sweet potatoes and mix gently to coat. Sprinkle with pecans. Sprinkle with marshmallows if desired.
  • Bake for 30-40 minutes or until sauce is thick and bubbly and marshmallows (if using) are lightly browned.

Thanksgiving wouldn't be Thanksgiving without this dish. I've no idea where the recipe came from originally--my grandmother has been making it since long before I was born.

3 -4 lbs sweet potatoes
butter
salt
milk
mini marshmallows
1/4 lb butter
3/4 cup dark brown sugar
1 egg, beaten
3 -4 ounces Jim Beam bourbon whiskey

Steps:

  • Boil the potatoes until done.
  • Skin and mash potatoes while still warm. Add butter and salt to taste. Add milk until the consistency is like creamy mashed potatoes.
  • Put potatoes in a 2 quart casserole dish. Scoop a hollow in the center of the potatoes and create a rim of potatoes around the edge of the pan. Set aside.
  • In a double boiler, cook 1/4 lb butter, brown sugar, egg, and bourbon, stirring constantly, until thickened (1/2-3/4 hour--in my experience it never really thickens).
  • Poor this syrup into the center hollow of the casserole and over the whole top.
  • Line the edges of the casserole with the mini marshmallows.
  • Bake at 350F for 45 minutes or until the sauce is a very dark brown.

1 (1 pound) sweet potato
½ cup butter, softened
1 cup white sugar
½ cup milk
2 eggs
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon
1 teaspoon vanilla extract
1 (9 inch) unbaked pie crust

Steps:

  • Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato, and remove the skin.
  • Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.
  • Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.
