My German grandmother passed this recipe down to my mother, who gave it to me. I remember eating it as a small child. This vegetable dish can be made quickly and goes great with roast pork or barbecued ribs, potatoes and biscuits.

1 medium onion, chopped
1/4 cup butter
1 medium head red cabbage (2 pounds) , shredded
2 medium tart apples, peeled and chopped
1 cup apple cider or apple juice
1/4 cup packed brown sugar
2 tablespoons cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
2 bacon strips, cooked and crumbled
Minced fresh parsley, optional

Steps:

  • In a large skillet, saute onion in butter until golden and tender. Add the cabbage, apples, cider, sugar, vinegar, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for about 1 hour or until cabbage and apples are tender and the liquid is reduced. Sprinkle with bacon and parsley if desired.

1 1/4 pounds red cabbage
1/2 small onion
1 apple
1 tablespoon oil
2 tablespoons dried cranberries
1/4 cup red wine
2 tablespoons currant jelly
1 tablespoon light brown sugar
4 whole allspice
3 whole cloves
1 1/4 teaspoons salt
2 teaspoons balsamic vinegar

Steps:

  • Discard the tough, outer leaves of the cabbage. Quarter the cabbage if whole, remove the core and cut the quarters crosswise into 1/4-inch shreds. Quarter the onion and thinly slice crosswise. Quarter the apple, remove the core and cut each quarter lengthwise into thin slices, then crosswise into thin slices. Heat the oil in a Dutch oven over medium heat. Add the onion and cook until softened, 3 to 5 minutes. Add the cabbage, apple, cranberries, wine, jelly, brown sugar, allspice, cloves and salt. Stir to mix. Cover and cook over medium-low heat until the cabbage is softened, 1 hour. Uncover and stir in the vinegar. Transfer to a storage container, cover and refrigerate overnight. Reheat before serving. This recipe yields 4 to 6 servings. Each of 6 servings: 96 calories; 500 mg sodium; 0 cholesterol; 3 grams fat; 0 grams saturated fat; 17 grams carbohydrates; 1 gram protein; 3.56 grams fiber.

My (Dutch) mother's recipe for "Hollandse Rode Kool". Previously, I never thought of cabbage as exciting, so much as something to be endured. But no longer! This dish is tangy and delicious with a lovely tender consistency; even the kids love it. And it's healthy! And a beautiful vivid red.

1 medium head red cabbage, finely sliced
1/4 cup butter or 1/4 cup margarine
3 tablespoons brown sugar
1/2 cup onion, chopped or finely sliced
2 sliced apples
3 -4 tablespoons vinegar
1/3 teaspoon salt
fresh ground black pepper (lots!)
1/4 cup blackberry jam

Steps:

  • For the apples, green or Fuji work well. Get something that doesn't disintegrate when cooked. For the vinegar, cider is good, but basic white vinegar is fine. For the jam, raspberry, plum, etc makes a fine substitute. Also, my mom puts in some chopped candied ginger for zing.
  • Saute the cabbage in the butter, turning often, for 10-15 minutes. A wok is good if you have a lid for it.
  • Add the sugar, onion, apples, and cook for another 5min. It should be all wilted now.
  • Add the rest, COVER, and simmer slowly for another 20min or so. Be sure to periodically turn it so it doesn't scorch. In the end, it will all be pretty much the same bright purplish red color.
  • This dish is hard to mess up; it still tastes okay mildly scorched. :) It's yummy served hot or cold, but I prefer warm. And it keeps for many days in the fridge.

  • Remove the outer leaves of the cabbage and cut the cabbage into quarters and remove the core, the hard white stem of the cabbage. Finely slice the red cabbage (approximately ¼" / ½cm).
  • Next, add the finely sliced cabbage into a large pan (e.g. a large saucepan, soup pot or Dutch oven). Add the cinnamon stick, cloves, bay leaves, juniper berries, vinegar, sugar, two teaspoons of salt and pour over the water.
  • Cover and leave to simmer for about 1 hour stirring occasionally. If the water starts to evaporate too fast add some more water.
  • Peel and cut the apples. I prefer to cut them into dice but you can also quarter them or finely slice them. Everyone prefers them differently.
