These quick & delicious garlic refrigerator dill pickles require no processing, stay crisp for a year, and make it easy to keep up with the harvest by putting up a few quarts at a time.

1 quart pickling cucumbers (enough to fill a qt. jar, washed and blossom-ends cut off)
4 garlic cloves (peeled and sliced in half)
1 to 2 large fresh dill heads (add up to 1 tsp. dried dill seed, if desired for more dill flavor)
1/4 teaspoon red pepper flakes (optional)
1¼ cups cider vinegar
1¼ cups water
2 teaspoons pickling spices
1 tablespoon + 1 teaspoon pickling salt
1½ teaspoons sugar

Steps:

  • Prepare the number of quart jars equal to amount of pickles you have by running through the dishwasher or boiling for 10 minutes in a pot of water to sterilize.
  • Place the garlic and dill in the bottom of each jar, along with optional red pepper flakes. Pack the cucumbers on top, leaving a 1/2 to 1 inch of head space.
  • In a large saucepan, combine water, vinegar, spices, salt and sugar. Bring to a boil, reduce heat, and simmer for 5 minutes.
  • Ladle the brine into the jar leaving 1/4 inch of head space. Attach lids.
  • Let cool to room temperature, label the lids with day and year and then store in the refrigerator.
  • The pickles can be eaten after 3-4 weeks and continue to improve over the months of storage.*

Super easy no-canning required dill pickles. No canning required, store in the fridge for months.

Number Of Ingredients 6

9 cups water
1 ½ cup vinegar
1/3 cup canning salt
½ cup sugar
Dill, 2-3 stalks
2-4 inch long cucumbers, enough to fill a gallon jar

Steps:

  • Combine the water, vinegar, salt and sugar and boil one minute. Cool slightly.
  • Wash the cucumbers and cut off about 1/16"from each end. This gets rid of some enzymes that would soften the pickles, and allows better penetration of the brine. Pack the cucumbers in a one gallon jar with the dill.
  • Pour the warm brine over the cucumbers. Let stand, loosely covered, at room temperature for three days. (Drape a towel over the jar opening or let lid sit on loosely.) I rubber band everything, especially in fruit fly season.
  • Cover and store in refrigerator. They are ready to eat after the three days but the flavor improves after a week or two in the refrigerator.

25 fresh dill sprigs, or 8 Tablespoons dried dill seed
4 garlic cloves, peeled and sliced
2 quarts water
1 cup cider vinegar
1/2 cup sugar
1/3 cup salt
1 teaspoon mixed pickling spices

Steps:

  • Cut the ends off each cucumber and discard. Then cut each cucumber lengthwise into 4 spears. *see note for making whole pickles.
  • In a large bowl, combine cucumbers, dill and garlic; set aside.
  • In a large pan add the remaining ingredients. Bring to a boil stirring frequently and just until sugar is dissolved. Pour over cucumber mixture and allow it to cool completely.
  • Transfer pickles and brine to a covered dish/mason jars. Refrigerate for at least 24 hours before eating.

Homemade dill pickles are the perfect combination of salty, sweet and tangy! Crunchy dill pickles made in about 20-minutes!

10-12 pickling cucumbers ((cut lengthwise))
3 cups water
2 cups distilled white vinegar
1/4 cup granulated sugar
3 tablespoons pickling or kosher salt
2 tablespoons pickling spice
5 teaspoons mustard seed
1 1/4 teaspoons celery seed
garlic cloves ((peeled))
fresh dill or dill seeds

Steps:

  • Sterilize your jars by either running them through the dishwasher or simmering in boiling water for 10 minutes.
  • In a large pot heat the water, vinegar, sugar and salt over medium heat and bring to a boil.
  • Add the pickling spice to a piece of cheesecloth or cheesecloth bag and let simmer for in the brine for about 10 minutes. Stir occasionally with a spoon.
  • Wash the cucumbers in cold water and cut the ends off. Cut the cucumbers into spears, halves or 1/2-inch rounds.
  • In each jar, add 1 teaspoon mustard seed, 1/4 teaspoon celery seeds, several peeled garlic cloves and several fresh dill pieces. (or use dill seeds)
  • Divide the cucumbers between the jars. They should fit rather tightly.
  • Ladle the hot pickling brine over the cucumbers, covering them completely. Leave about 1/2-inch head space.
  • Wipe any brine from the edges of the jars with a clean damp paper towel. Put lids with rings on the jars.
  • Let the jars cool to room temperature before placing them in the refrigerator.
  • For the best flavor, let marinade in the fridge for about 3 or 4 days before enjoying. They will last in the fridge for about 2 months.

4 dozen pickling cucumbers (Pickling cucumbers are cucumbers that are not less than 3-inches long and not more than 4-inches)
1 bunch dill
1 quart cider vinegar
8 cups water
1 cup pickling salt
1 garlic clove, Peeled

Steps:

  • Wash the cucumbers and remove any stems.
  • Cover with cold water and refrigerate overnight or for several hours.
  • Pack the cucumbers into pint jars as tightly as possible.
  • Poke in 2 springs of dill.
  • Bring the cider vinegar, water, salt and garlic cloves (12 to 16 cloves depending on your taste) to a boil.
  • Boil for 2 minutes.
  • Fish out the garlic cloves with a slotted spoon and put one in each jar (or to taste) while the brine cools slightly.
  • Pour the hot brine into the jars and seal.

30 -50 sprigs fresh dill
7 tablespoons dill seeds
10 pinches alum (do not use if you use lime)

Steps:

  • You can keep your pickles whole or slice them.
  • Wash the pickles and cut the stems off if you keep them whole.
  • Stir the vinegar, water, and salt in large pot; let it just come to a boil.
  • Have hot jars ready: Put in 1 clove garlic, 1 T pickling spice, several sprigs of dill, 1 T dill seed and 1 pinch alum (if you did not use lime).
  • Pack the jars with cucumbers. Ladle the hot vinegar mixture over to within 1/2 inch of top of jars.
  • Remove the air bubbles; wipe rims clean, seal, and process in hot water bath for 10 minutes.
