Fresh broccoli is one of my favorite vegetables. This is a great way to dress it up. Tastes incredible.

2 1/2 lbs fresh broccoli
2 garlic cloves, minced
1/3 cup olive oil
1 tablespoon butter or 1 tablespoon margarine
1 teaspoon salt
1/4 teaspoon pepper
1 pinch cayenne pepper
8 ounces linguine or 8 ounces thin spaghetti, cooked and drained
grated romano cheese or parmesan cheese

Steps:

  • Cut florets and parts of broccoli stems into bite-size pieces.
  • In a large skillet, saute broccoli with garlic, oil, butter, salt, pepper, and cayenne over medium heat for about 10 minutes or until just tender, stirring frequently.
  • Place hot pasta in a serving dish; top with broccoli mixture.
  • Sprinkle with cheese.

1 (8 ounce) package fusilli pasta
1 tablespoon olive oil
2 teaspoons salt
⅓ cup butter
⅓ cup all-purpose flour
3 cups milk
¾ cup grated Parmesan cheese
1 teaspoon salt
½ teaspoon garlic salt
⅛ teaspoon ground nutmeg
⅛ teaspoon dried thyme
1 ½ cups shredded sharp Cheddar cheese
1 ½ pounds fresh broccoli, cooked
¾ cup shredded Swiss cheese

Steps:

  • In a large pot of boiling salted water cook rigatoni or fusilli pasta with one tablespoon of oil until al dente. Drain.
  • Meanwhile, in a large saucepan melt butter or margarine. Stir in flour and milk and whisk until mixture boils and thickens. Add grated Parmesan cheese, salt, garlic salt, nutmeg, thyme and grated Cheddar cheese and stir until blended.
  • Add cooked broccoli and drained pasta to cheese sauce. Mix well. Pour into a greased 9x13 inch baking dish. Sprinkle with grated Swiss cheese.
  • Bake uncovered at 350 degrees C(175 degrees C) for 20 minutes. Let stand 10 minutes before serving.

3/4 cup water
2 ounces uncooked spaghetti or linguine, broken into 2-inch pieces
Dash crushed red pepper flakes
1-1/2 cups small fresh broccoli florets

2 tablespoons grated Parmesan cheese

Steps:

  • In a saucepan, saute garlic in oil until tender. Add the water, pasta and pepper flakes. Bring to a boil, stirring occasionally. My husband never liked pasta until he tasted pasta con broccoli from a restaurant in St. Louis. I came up with this quick version at home. Great food without the work.

1 box penne or 1 box bow tie pasta
1 jar alfredo sauce (regular or light, can use mix)
2 -3 teaspoons tomato sauce (or to taste)
1/2 lb sliced mushroom (optional)
2 bunches broccoli (or half of bag of florets)
1 -2 clove minced garlic
salt and pepper

Steps:

  • Cook pasta as directed, BUT add broccoli the last few minutes of cooking, just until slightly tender and bright green in color.
  • Meanwhile saute garlic and mushrooms,then add the sauces and heat.
  • After pasta is drained toss it all together and serve.
  • We like a little parmesan cheese on top.

1 cup olive oil, or more if needed
2 large heads broccoli, cut in 1-inch florets (about 6 cups)
1 tablespoon kosher salt, plus more for salting the pasta water
8 garlic cloves, roughly chopped
1 pound penne rigate (Penne rigate is my favorite because the ridges give it more texture.)
1/2 cup shredded or grated Parmigiano-Reggiano cheese
2 tablespoons chopped Italian flat-leaf parsley, for garnish

Steps:

  • Heat the water for your pasta while you prepare the broccoli.
  • In a shallow, 10-inch saute pot, heat the 1 cup olive oil over medium-high heat (see Cook's Note). Add the broccoli to the oil and season it with salt. Saute the broccoli for about 4 minutes, or until it takes on a toasty color. The broccoli will absorb a lot of the oil, so if you find your pot getting dry, just add a little more oil to it. Throw in the garlic and cook for about another minute, until it's slightly brown. Don't burn the garlic! Take the broccoli off the heat and set it aside.
  • Prepare the penne according to the package directions. Drain the pasta and toss it in the pot with the broccoli, garlic, and olive oil. If the mixture seems dry, add a little more oil.
  • Toss in the Parmigiano-Reggiano cheese, stir, and garnish with the parsley.

5 cloves garlic, smashed and chopped

  • Bring a large pot of salted water to a boil. When water boils, add pasta and broccoli at the same time and cook according to pasta instructions for al dente. When pasta is almost done cooking, reserve about 1 cup of the pasta water and set aside. Drain pasta and broccoli. Return the pot to the stove and set heat to high; add 1 tbsp olive oil, when hot, add garlic. Cook until golden, reduce flame to low and add pasta back to the pot. Mix well, add remaining olive oil, grated cheese, salt and pepper to taste mixing well and smashing any large pieces of broccoli to break up. Add 1/2 cup of reserved pasta water and mix well adding more if needed. Serve in pasta bowls with additional grated cheese on the side.
