"KIMCHEE" SALAD

1 head Napa cabbage, finely shredded
4 green onions, thinly sliced
1/4 cup rice wine vinegar
1 tablespoon soy sauce
1 (1-inch) piece fresh ginger, peeled and chopped
4 cloves garlic, chopped
1/4 cup red chili flakes, plus more to taste
1 tablespoon sugar
1/4 cup vegetable oil
Salt and freshly ground pepper

Steps:

  • Place cabbage and green onions in a large bowl. In a blender, combine vinegar, soy sauce, ginger, garlic, chili flakes, and sugar, blending until smooth. With the motor running, slowly add the oil. Season with salt and pepper, to taste. Pour the dressing over the cabbage and gently toss. Cover and refrigerate for 2 to 3 days before serving to let the cabbage wilt and the flavors meld.

9 cups torn mixed salad greens
1 can (11 ounces) mandarin oranges, drained
1/3 cup thinly sliced green onions
2 teaspoons unsalted sunflower kernels
DRESSING:
3 tablespoons canola oil
2 tablespoons sugar
2 tablespoons cider vinegar
1 tablespoon orange juice concentrate
1-1/2 teaspoons red wine vinegar
1-1/2 teaspoons chopped onion
1/2 teaspoon ground mustard
1/4 teaspoon salt

Steps:

  • In a large salad bowl, gently toss greens, oranges, onions and sunflower kernels. In a measuring cup, combine the dressing ingredients. Add water to measure 1 cup. Pour into a jar with a tight-fitting lid, shake well. Pour over salad and toss to coat. Serve immediately.

2 tablespoons tarragon vinegar
1 teaspoon finely minced garlic
1 tablespoon Dijon-style mustard
6 tablespoons olive oil
Salt to taste if desired
Freshly ground pepper to taste
1 tablespoon finely chopped dill
1 tablespoon finely chopped parsley
1 tablespoon finely chopped chives (optional)

Steps:

  • Discard any blemished outer leaves of lettuce. Cut away core. Separate leaves, rinse and drain or spin dry. Place in a salad bowl.
  • In a small bowl, combine vinegar, garlic and mustard. Using a wire whisk, beat in oil. Add salt, pepper, dill, parsley and chives. Pour dressing over salad and toss.

1 teaspoon sugar
2 cups cubed cooked chicken
Oil for deep-fat frying
12 wonton wrappers, cut into thin strips
1 large bunch green leaf lettuce, chopped (about 12 cups)
10 large fresh mushrooms, thinly sliced
4 green onions, chopped
DRESSING:
1/2 cup canola oil
1/3 cup white wine vinegar
1/4 cup sugar
1 tablespoon soy sauce
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a large resealable plastic bag, combine soy sauce and sugar. Add chicken; seal bag and turn to coat. Refrigerate overnight., Just before serving, in a electric skillet or deep-fat fryer, heat oil to 375°. Fry wonton strips for 1-2 minutes or until golden brown. Drain on paper towels. , In a large salad bowl, combine the lettuce, mushrooms and onions. Add the wonton strips and chicken with any remaining soy sauce mixture., In a jar with a tight-fitting lid, combine the dressing ingredients; shake well. Drizzle 1/2 to 3/4 cup over salad; toss to coat. Save remaining dressing for another use.

1/4 cup Chinese chicken salad dressing
1 tablespoon honey

This is great for potlucks or barbecues - so much more flavorful than regular coleslaw. The original recipe is from Bobby Flay but I changed it a bit. Note: the farther in advance you make this, the better it gets!

4 green onions, thinly sliced
1/4 cup rice vinegar
1 tablespoon soy sauce

4 garlic cloves, chopped
1 carrot, shredded
1/8 cup red chili pepper flakes (more if you dare)
1 tablespoon sugar
1/4 cup sesame oil
salt & freshly ground black pepper

Steps:

  • Place cabbage, carrot and green onions in a large bowl.
