Delicious frosting for my "Fudge Cake" or any chocolate cake recipe! Very decadent! (Cook time is after mixture comes to rolling boil)

Yield 1 batch of frosting for layer cake or oblong cake

Number Of Ingredients 7

2 cups sugar
1/4 cup light corn syrup
1/2 cup milk
1/2 cup shortening
2 ounces unsweetened chocolate, cut up (or 6 TBSP.cocoa plus 4 tsp. shortening)
1/4 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Mix all ingredients except vanilla in sauce pan.
  • Stir over low heat until chocolate and shortening melt.
  • Bring to a full rolling boil, stirring constantly.
  • Boil 1 minute.
  • Remove from heat and beat until lukewarm.
  • Add vanilla.
  • Beat until looks ready to spread.
  • Use to frost my Fudge Cake or your favorite chocolate cake recipe!

1 tbsp. corn syrup

Steps:

  • Bring 2 inches water to a gentle simmer in a large saucepan. Place egg whites, sugar, cream of tartar, salt, water, and corn syrup in a very clean bowl. Place bowl over saucepan and cook, whisking on low speed with a hand mixer, until mixture registers 160°F on a candy thermometer, 8 to 9 minutes. Remove bowl from saucepan and continue to whisk on medium speed until thick, glossy peaks form, 2 to 3 minutes.

  • Beat in powdered sugar. Beat in egg white and vanilla, adding a little water, if necessary, to make smooth, slightly soft frosting. Spoon over Chocolate Frosted Marshmallow Cookies cookies to cover marshmallows.

  • Melt chocolate and butter in the microwave, or in the top of a double boiler. In a large bowl, combine confectioners' sugar, vanilla and 1/2 cup of the milk. Blend in the melted chocolate mixture. Add remaining milk, a little at a time, until desired consistency is achieved.

I found this recipe years ago, and it got rave reviews, but I lost it and have looked for it ever since. Only 3 ingredients, VERY simple, and it generously frosts a 13 X 9 pan of brownies or Cake. Works best when slightly warm. I usually use it on brownies, (but usually have a little left for on top of ice cream)....Feel free to experiment....You can use semi sweet, dark, or milk chocolate, and you can garnish the top with nuts etc, but move quickly before it sets up all the way and your garnish won't "stick". Onr try and you will be hooked on the simplicity and the great flavor!

12 ounces chocolate chips
3 tablespoons butter
1 (12 ounce) can sweetened condensed milk (not evaporated milk)

Steps:

  • In microwave safe bowl ,melt the chocolate chips until just melted 1-2 minutes.
  • Stir with a spatula or scraper. Stir in the butter. Let the mixture sit for 4-5 minutes.
  • Add the can of sweeetened condensed milk and stir until smooth.
  • That's it! Frost the brownies or cake immediately as this mixture will set up and become more fudgey as it cools. If it cools too fast for you, place in the micrewave for 15 seconds to loosen it back up a bit.

10 Tablespoons butter
1 1/4 cups unsweetened cocoa powder
5 1/4 cups powdered sugar
2/3 cup milk
2 teaspoons vanilla extract

Steps:

  • In a saucepan, over low heat, melt butter. Stir in cocoa powder. Mixture will resemble a thick paste.
  • Transfer chocolate mixture to a large mixing bowl. With mixer on low speed, add in powdered sugar and milk, alternating the two. Reserve a few tablespoons of milk. If frosting is thick, add in remaining milk. Add vanilla extract.
  • Turn mixer to medium high speed and beat about 5 minutes, until frosting is smooth and creamy.
  • Frost cake or cupcakes as desired.

3 1/2 cups powdered sugar
1/3 cup cocoa powder (I use Hershey's)
1/3 cup Sanders Fudge Dessert Topping (or 1/2 cup - depending on how fudge-y you like it!)
1 tsp vanilla
1-2 tsp half and half

Steps:

  • Sift powder sugar and cocoa powder together. With hand mixer, cream butter with the powdered sugar/cocoa mixture. Add vanilla. Add fudge topping. Add as much milk or half and half to get to desired consistency.

  • In a small saucepan, bring your water to a boil. Have a glass or heat safe measuring cup on hand to measure out 2/3 cup of water.
  • In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, sift together the powdered sugar, cocoa powder, espresso powder (if using) and salt.
  • Cut the butter into 1 tablespoon squares and scatter over the dry ingredients. Pour in the vanilla.

At first, the frosting will look like it's not coming together, but keep going. Stop and scrape the sides of the bowl as needed to make sure all ingredients are incorporated.
