Steps:
- Combine the lemon and 4 cups water in a large bowl. Place the sliced apples in the water to keep them from browning.
- Melt butter in a large skillet over medium heat. Drain water from apples, and place them into the hot skillet. Cook and stir for about 2 minutes. Add brown sugar, and cinnamon, and cook, stirring, for 2 more minutes. Stir together cornstarch and 1 tablespoon water. Pour into the skillet, and mix well. Cook for another minute, or until sauce has thickened. Remove from heat to cool slightly.
- Preheat the oven to 400 degrees F (200 degrees C).
- Unfold puff pastry sheets, and repair any cracks by pressing them back together. Trim each sheet into a square. Then cut each larger square into 4 smaller squares. Spoon apples onto the center of each squares. Fold over from corner to corner into a triangle shape, and press edges together to seal. Place turnovers on a baking sheet, leaving about 1 inch between them.
- Bake for 25 minutes in the preheated oven, until turnovers are puffed and lightly browned. Cool completely before glazing.
- To make the glaze, mix together the confectioners' sugar, milk and vanilla in a small bowl. Adjust the thickness by adding more sugar or milk if necessary. Drizzle glaze over the cooled turnovers.

- In a large bowl, whisk together the flour, sugar and salt. Add the cold butter and, toss it into the flour mixture and try to incorporate the butter into the flour.Add cold water, little by little into the flour mixture and, using a fork, gently toss and stir together until large lumps form and all of the flour has been moistened. Using your hands, pat the dough into a ball and wrap with plastic wrap or parchment paper. Refrigerate for 30 minutes or more until the dough is firm
- In a small pan, add the sugar, cinnamon powder,salt,corn flour and water and bring it to boil .When it get thickened,stop cooking and take it out from the stove.
- Line a baking sheet with parchment paper.
- On a lightly floured work surface, roll out one half of the dough to ⅛-inch thickness. Cut the pie dough sheet into circles using a cookie cutter or into long rectangles or squares using a pizza cutter.Spoon about 1 to 2 tablespoons filling onto each dough sheet and fold it in half so the other side comes down over the filling. Seal the hand pie, and make a decorative edge by pressing the edges of the dough together with the tines of a fork.Transfer them to the parchment-lined baking sheet.
- Freeze for 20 minutes or Refrigerate the assembled hand pies for 30 minutes.
- Preheat oven to 400 degrees F
- In a small bowl, whisk together an egg and milk for the egg wash. Remove the chilled hand pies from the refrigerator, and lightly brush with the egg wash. Using a sharp knife, cut a few small slits on the top of each hand pie, then sprinkle generously with coarse sugar.
- Bake @400 F for 10 minutes and then reduce the temperature to 375 F and bake for another 18-20 minutes or Bake until the hand pies are golden brown, the baking time vary according to how thick we rolled the dough.
- Remove the pies from the oven, and let stand to cool slightly before serving.Enjoy!

- In a small bowl, combine flour and salt; cut in 1/4 cup butter until crumbly. Gradually add water, tossing with a fork until a ball forms. On a lightly floured surface, roll dough into a 12x6-in. rectangle., Cut remaining butter into thin slices. Starting at a short side of dough, arrange half of the butter slices over two-thirds of rectangle to within 1/2 in. of edges. Fold unbuttered third of dough over middle third. Fold remaining third over the middle, forming a 6x4-in. rectangle. Roll dough into a 12x6-in. rectangle., Repeat steps of butter layering and dough folding, ending with a 6x4-in. rectangle. Meanwhile, in a small saucepan, combine the sugar, cornstarch and cinnamon. Add apples and lemon juice; toss to coat. Bring to a boil over medium heat, stirring constantly. Reduce heat; simmer, uncovered, until apples are tender, stirring often, 5-10 minutes. Remove from the heat., In a small bowl, combine egg and water. Roll dough into a 12-in. square; cut into four squares. Brush with half of the egg mixture. Spoon about 1/4 cup filling on half of each square; fold dough over filling. Press edges with a fork to seal. Place on an ungreased baking sheet. Brush with remaining egg mixture. With a sharp knife, cut three small slits in the top of each turnover., Bake until golden brown, 17-22 minutes. Remove to a wire rack. Combine glaze ingredients; drizzle over turnovers. Serve warm.

EASY PEASY APPLE TURNOVERS
This recipe was inspired by mliss29's recipe #292754 (which was greatly enjoyed by the DS's recreation group) but put a sweet flavour to it instead of savoury. Please note if you do like it sweet then certainly add the sugar for without it is just the flavour of your fruit and the spices.

Steps:
- Preheat oven to 200 degree Celsius or 400 degrees Fahrenheit.
- Peel, core and small dice apples.
- Place apples, cloves, cinnamon and lemon juice in a medium saucepan and cook on a medium heat until just tender (DO NOT LET GO TO MUSHY STAGE) - about 3 minutes.
- Remove cloves.
- Divide each pastry sheet into 4 squares.
- Place a heaping tablespoon of apple on the diagonal of the pastry square.
- Pull over to form a triangle and seal using a fork, gently pushing in to the edge to seal, using edge of knife put 1 or 2 small slits into the pastry (to let steam escape).
- Continue until all 12 turnovers are filled and sealed.
- Brush top of turnovers with whisked egg (you will only use a small amount of the egg) and sprinkle with sugar.
- Place on a cookie/baking tray covered with baking paper/parchment paper (I get 6 to a tray).
- Put in oven and bake for 15 minutes.
- TO SERVE.
- Serve warm with custard, cream and or ice cream.
- With just a sprinkle of icing sugar (confectioners sugar).
- I have made up the apple mix and only made 6 turnovers and served the extra apple with them with custard.

APPLE TURNOVERS

- Put the Bramley apple, sugar and cinnamon in a small pan with 1 tbsp water. Cover with a lid and simmer over a low heat for 10-15 mins until the apple breaks down and turns into a compote.
- Stir in the butter and the Gala apple and cook for a further 5 mins, uncovered, until the Gala apple is just soft but retaining its shape, and any excess water has evaporated to make a thick compote around the Gala chunks. Remove from the heat and leave to cool.
- Heat the oven to 220C/200C fan/gas 7. Unravel the puff pastry sheet out on a work surface, and cut into 4 even rectangles. Divide the apple filling to one side of each of the puff pastry rectangles, leaving a 1cm border. Brush the border with milk and fold over the empty side of pastry over the filling and crimp together. Brush with more milk and sprinkle over the sugar. Make a small steam hole in the middle of the turnovers.
- Transfer to a parchment-lined baking sheet and bake for 20-25 mins until golden and puffed up. Leave to cool for 10 mins on a wire rack (the filling will be molten when it first comes out the oven) before serving warm with a scoop of vanilla ice cream, or serve at room temperature. Keep for 2 days in an airtight container.

- In a large skillet, bring apple juice and maple syrup to a simmer over medium heat. Split vanilla bean lengthwise. Using the tip of a sharp knife, scrape seeds from the center into skillet; add bean. Cook until liquid has reduced slightly, 1-2 minutes. Add apples and pears; cook and stir until fruit is just tender, 7-9 minutes. Remove from heat; add lemon zest and juice. Cool completely. Remove vanilla bean pods., Preheat oven to 400°. On a lightly floured surface, unroll pastry sheets. Roll each sheet into a 12-inch square; cut each sheet into 4 equal squares. Spoon 1/4 cup apple mixture diagonally over half of each square to within 1/2 in. of edges. Moisten pastry edges with water. Fold one corner over filling to the opposite corner, forming a triangle; press edges with a fork to seal. , Transfer to greased baking sheets. Brush tops of pastries with beaten egg; prick tops with a fork. If desired, combine coarse sugar and cinnamon; sprinkle over pastries. Bake until golden brown, 18-20 minutes. Remove from pans to wire racks. Serve warm or at room temperature., Freeze option: Freeze pastries in freezer containers. - Make the Homemade Puff Pastry: Add the flour, sugar and salt to a food processor and pulse to combine. Add one-quarter of the butter cubes and process in four 1-second pulses. Add the remaining butter to coat the cubes with flour, two 1-second pulses. Transfer the mixture to a medium bowl.
