3 tablespoons salted butter
3 tablespoons all-purpose flour
2 cloves garlic, minced or pressed
1 cup whole milk
1 cup heavy cream
1 ½ teaspoons minced fresh thyme leaves or ½ teaspoon dried thyme
Kosher salt and ground black pepper, to taste
⅛ teaspoon freshly-grated nutmeg
½ cup grated cheddar cheese
½ cup grated Gruyere cheese
2 ½ lbs. russet potatoes (about 5 medium), peeled and sliced ⅛-inch thick

Steps:

  • Preheat oven to 400° F. Grease a 2-quart baking dish; set aside.
  • In a large skillet, melt the butter over medium heat. Whisk in the flour and garlic; cook for 1 minute. Gradually whisk in the milk and cream; cook, whisking, until thickened, another 2 minutes or so. Add the thyme, salt, pepper, nutmeg, half of the cheddar and half of the Gruyere. Whisk for about 1 more minute, making sure that all of the cheese is melted. Taste and season with additional salt and pepper, if necessary.
  • Arrange half of the potatoes in the prepared baking dish. Season with a little bit of salt. Pour half of the sauce over top. Arrange the remaining potatoes on top, season with another pinch of salt, and pour the remaining sauce over all. Sprinkle with remaining cheese. Cover and bake for 50-60 minutes (or until the potatoes are just about tender), then uncover and bake until browned on top, an additional 15-20 minutes. Let cool slightly, then serve.

2 1/2 lb potatoes, thinly sliced
1 medium white onion, thinly sliced
2 c heavy cream
8 oz sharp cheddar, shredded and divided
1/4 c all-purpose flour
salt and pepper, to taste
1 c grated Romano cheese

Steps:

  • 1. Preheat oven to 375 degrees. Peel and slice potatoes very thin. Slice onions thin as well. Place them both in a large mixing bowl.
  • 2. Add to the potato and onions, 2 cups of heavy cream, flour, and 1 cup of sharp cheddar cheese. Salt and pepper to taste. Toss until completely mixed.
  • 3. Spray a shallow baking dish with non-stick spray. Transfer the mixture to the baking dish and spread out evenly.
  • 4. Top with remaining cup of shredded cheddar and Romano cheeses.
  • 5. Bake about 45 to 50 minutes until potatoes are tender and the top is nicely browned.
  • 6. Let stand 10 minutes before serving.

1 package gnocchi, fresh or defrosted (375-500 g or 13-16 ounces)
1/4 cup (22.5g) grated fresh Parmesan cheese
1 tablespoon chopped parsley for garnish
1 1/2 tablespoon butter (salted or unsalted butter is fine)
2 tablespoon all purpose flour
1 garlic cloves, minced ((or 1/4 tsp garlic powder))
1 teaspoon poultry seasoning (or more to taste)
1/2 teaspoon salt ((or to taste))
pinch black pepper
pinch nutmeg (optional)
1 1/2 cup (375ml, 12 oz) milk, 2% or whole ((1/4 cup of this can be light or heavy cream for extra richness))
1 cup (83g) grated white cheese e.g. Gruyere, Fontina, Emmenthal, Monterey Jack, Provolone
1/4 cup chopped green onion

Steps:

  • PREHEAT OVEN to 400F/204C. Spray a small 7-8 inch/18-20cm ovenproof baking dish with olive oil or cooking spray
  • BOIL GNOCCHI: Bring salted water to boil in medium saucepan. Put gnocchi in boiling water, bring water back to boil, and lower heat to med heat. Gently boil for 2 minutes. Drain gnocchi and set aside.
  • MAKE CHEESE SAUCE: Melt butter on medium heat in a medium or large saucepan. Add garlic and stir for 30 seconds. Add flour and seasonings, stirring for 2 minutes. Add milk (and cream if using), whisking until slightly thickened, about 4-5 minutes. Turn off heat. Stir in grated cheese until smooth sauce is formed. If too thick, add a bit more milk (but note that sauce will thicken further with baking and standing). Taste and adjust seasonings. Stir in gnocchi and green onions.
  • ASSEMBLE AND BAKE/BROIL: Spoon mixture into prepared gratin dish. Sprinkle 1/4 cup Parmesan cheese and chopped parsley over the surface. Bake for 7 minutes, then broil for 3 minutes to brown, watching to ensure it doesn't burn. Let stand for a few minutes (sauce will thicken more) and serve with toothpicks as an appetizer or as a side or main dish.

1 quart buttermilk
5 tablespoons kosher salt
3 tablespoons freshly ground black pepper
1 (16 ounce) package sharp Cheddar cheese, shredded

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x12 inch glass or ceramic dish with olive oil.
  • Layer potatoes on the bottom of the dish. Pour 1/3 of the buttermilk over the potatoes and sprinkle with 1/3 of the salt, pepper and cheese. Repeat 2 more times, ending with cheese on top.

Cod fillets
Butter
Olive oil
Flour
Shredded Chedder Cheese
Onion
Sea salt
Black pepper
Fresh herbs
Milk

Steps:

  • 1. PreHeat oven to 350° then grease a 8x12 inch pan or 6 small serving dishes. 2. Start the boil on 4 cups of water with a pinch of sea salt, add your cod fillets let boil for about 5 to 10 minutes, then drain. 3. In medium saucepan melt 3 tbsp of butter and 1 tbsp olive oil then add 1 medium chopped onion let it fry until soft. 4. Remove saucepan from heat add your 6 tbsp of flour and 2 cups of milk return to heat and continue cooking until your sauce have thickened then season with sea salt and freshly grated black pepper. 5. Return to your boiled cod, put cod in dish flake apart, then equally portion your cod into 6 small individual baking dishes or one 8x10 pan, pour your sauce over each one and mix it through. 6. Top with shredded cheese of your choice and a pinch of sea salt and freshly grated pepper, bake in a 350° oven for 25 minutes or until golden brown. When done remove from heat top with some green onion and fresh herbs. Serve with steamed rice or baby spuds.
