Very easy quick meatloaf recipe. I make many varieties of meatloaf... sometimes the Italian with breadcrumbs, garlic, eggs, etc... This version is a tasty quick BBQ recipe that is great for busy nights or dinner in a rush. Sometimes I put the remaining BBQ sauce right on the loaf prior to putting it in oven if you like it a little hardened. For easy clean-up, I use a baking sheet lined with parchment paper that I spray lightly with Pam Olive Oil spray.

1/2 cup barbecue sauce
1/2 cup quick oats, uncooked
1/2 cup onion, chopped finely
1 egg, beaten

Steps:

  • Mix all ingredients except 1/4 cup of the barbecue sauce.
  • Shape into loaf in 12x8-inch baking dish.
  • Bake at 375°F for 45 to 50 minutes or until cooked through. Let stand 5 minutes. Top with remaining barbecue sauce.

1 ½ pounds ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons brown sugar
2 tablespoons prepared mustard
⅓ cup ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
  • In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.

For a popular dish dating back to the 5th century and enjoyed around the world from the Philippine embotido (banana leaf wrapped pork with whole hard boiled eggs) to Jewish Klops to Middle Eastern Kofta to South Africa's sweet bobotie, the humble meatloaf was mankind's way to do more with less. Made with just a few store ingredients With just a little of meat, leftover bread or grains, and some simple seasonings and herbs, many cultures learned how to shape the ground meat into a loaf and cook it over the fire for simple meal. A little meat could flavor a whole loaf and it fed the family during tough times. Mix the meats with instant packaged mashed potato The American version has its roots from a mixture of cornmeal and ground pork enjoyed by German-Americans in the late 16th century. By the late 1900's meatloaf recipes started to show up in contemporary American cuisine and it has been rumored to have become America's 7th most popular dish. Add seasonings and some optional chopped parsley There are hundreds of variations and the common ones involve meat mixed with a binder such as egg. Breadcrumbs and grains are added to soften the mixture and there is often added sauce (tomato or ketchup) and seasonings. An egg helps to bind the loaf together For me, meatloaf is a favorite comfort food. A simple meatloaf dish with mashed potatoes and brown gravy will do it for me. My version is cooked in a pit and is a easy weekday dish that can be made on the weekend and reheated. A non-stick 9X5 pan makes clean-up easy You can also make it in a 9X5 pan, throw it in your cooler, and take it camping or the beach to cook on your campfire. Cover w bacon strips and put into 275 degree oven or pit The bacon strips add flavor and ensure that the mixture does not dry out. 1 lb Jimmy Dean Spicy sausage
4-oz instant mashed potatoes (I used Idahoan Four Cheese package)
½ cup your fav BBQ sauce and a little extra for finishing
1 egg
1 tablespoon SYD Hot Rub or salt and pepper to taste
6 bacon strips
Chopped Italian parsley (optional) Meatloaf was attacked before I could take final photos!

Steps:

  • Pour 4-oz instant mashed potato mixture into mixing bowl. Add ¾ cup warm water (do not follow the package directions as you don't want it to be too mushy). Wait a couple of minute and fluff with a fork. It should have a pebbly texture and not look like mashed potatoes
  • Mix in the Jimmy Dean sausage and ground beef
  • Add 1 ½ tablespoons SYD Hot Rub or salt and pepper to taste. Mix
  • Add 1 egg and ½ cup of your favorite BBQ sauce and mix. Add the optional chopped parsley if you like
  • Fill 9 X 5 inch pan with mixture
  • Cover with 6 bacon strips
  • Place in 275 degree oven or pit with some apple wood chunks and cook until internal is 165 (about 1 hour to 1:15)
  • Remove from pit and place under broiler until bacon is crispy
  • Let it cool 20 minutes. Slice and serve with an extra drizzle of BBQ sauce It was wolfed down fast!

Steps:

  • Preheat the oven to 350° and have ready a rimmed sheet pan lined with foil, preferably nonstick foil.
  • In a large bowl, use a fork to mix together breadcrumbs, salt, chili powder, pepper, cumin, garlic powder, and onion powder. Add the milk, egg, Worcestershire, and liquid smoke and mix once more.

4 ounces thick-cut bacon (about 3 slices), cut into 1/2-inch-thick pieces
1 medium yellow onion, finely chopped (about 1 1/2 cups)
3 cloves garlic, minced
1 pound prepared BBQ ribs, bones removed, meat finely chopped (about 2 cups)
1 cup prepared pulled pork in BBQ sauce
1 pound 80/20 ground beef
2 large eggs
1/2 cup plain breadcrumbs
2 teaspoons mustard powder
1 1/2 teaspoons smoked paprika
1 teaspoon dried basil
1 teaspoon dried thyme
Kosher salt and freshly ground black pepper
1/2 cup prepared BBQ sauce, plus more for serving

Steps:

  • Position a rack in the center of the oven and preheat to 325 degrees F. Line a large baking sheet with parchment paper.
  • Put the bacon in a large saute pan and cook over medium heat until most of the fat has rendered and the bacon is crispy, about 10 minutes, stirring occasionally. Use a slotted spoon to remove the bacon to a large bowl. Increase the heat slightly (between medium and medium-high) and add the onions to the bacon fat in the pan and cook until tender, about 5 minutes, stirring occasionally. Add the garlic and cook until tender, about 1 minute, stirring constantly. Transfer to the bowl with the bacon. Stir in the chopped ribs and pulled pork. Cool completely.
  • Add the beef, eggs, breadcrumbs, mustard powder, smoked paprika, basil, thyme, 1 to 1 1/2 teaspoons salt (depending on how salty the ribs and pulled pork are) and several heavy grinds of pepper. Use your hands to mix until well combined. Form into a 9-by-3 1/2-inch loaf that is about 2 inches tall on the prepared baking sheet. Spread 1/4 cup of the BBQ sauce evenly over the top of the meatloaf.
  • Bake for 30 minutes, and then spread the remaining 1/4 cup BBQ sauce on top of the partially cooked meatloaf. Continue to bake until a thermometer inserted into the center of the meatloaf registers 160 degrees F, about 45 more minutes.
  • Serve with additional warm BBQ sauce alongside.

  • Finely dice the Onion

When I've made 'barbeque meatloaf' before I've simply used the standard spoon-the-glaze-on-top-of-the-loaf-and-bake-it method. This time I wanted to line the loaf pan with some of the sauce, press the meat in, and let it roast in the goodness. I was envisioning a beautiful, glossy finish when I turned it on to the serving platter. It wasn't quite as aesthetically pleasing as I hoped (ugly). But, hey--this is quick and dirty home cooking. It may not have looked good, but it tasted fine!

1 diced onion

1 1/2 teaspoon salt

2 8-ounce cans tomato sauce
1/2 cup to thin sauce if necessary water
3 tablespoon vinegar
3 tablespoon brown sugar
2 tablespoon dijon mustard
2 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees.
  • Mix together the beef, breadcrumbs, onion, egg, salt, pepper, and 1/2 cup of the tomato sauce. Form this mixture into a loaf and place it in a shallow pan.
