QUICK & EASY BBQ MEATLOAF (5 INGREDIENTS)
Very easy quick meatloaf recipe. I make many varieties of meatloaf... sometimes the Italian with breadcrumbs, garlic, eggs, etc... This version is a tasty quick BBQ recipe that is great for busy nights or dinner in a rush. Sometimes I put the remaining BBQ sauce right on the loaf prior to putting it in oven if you like it a little hardened. For easy clean-up, I use a baking sheet lined with parchment paper that I spray lightly with Pam Olive Oil spray.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.

- Pour 4-oz instant mashed potato mixture into mixing bowl. Add ¾ cup warm water (do not follow the package directions as you don't want it to be too mushy). Wait a couple of minute and fluff with a fork. It should have a pebbly texture and not look like mashed potatoes
- Mix in the Jimmy Dean sausage and ground beef
- Add 1 ½ tablespoons SYD Hot Rub or salt and pepper to taste. Mix
- Add 1 egg and ½ cup of your favorite BBQ sauce and mix. Add the optional chopped parsley if you like
- Fill 9 X 5 inch pan with mixture
- Cover with 6 bacon strips
- Place in 275 degree oven or pit with some apple wood chunks and cook until internal is 165 (about 1 hour to 1:15)
- Remove from pit and place under broiler until bacon is crispy
- Let it cool 20 minutes. Slice and serve with an extra drizzle of BBQ sauce It was wolfed down fast!

- Preheat the oven to 350° and have ready a rimmed sheet pan lined with foil, preferably nonstick foil.
- In a large bowl, use a fork to mix together breadcrumbs, salt, chili powder, pepper, cumin, garlic powder, and onion powder. Add the milk, egg, Worcestershire, and liquid smoke and mix once more.
- Add the ground beef and minced onion and mix with your hands until all of the ingredients are evenly incorporated. Transfer the mixture to the prepared pan and shape into a narrow loaf (the meatloaf will spread as it bakes).

- Position a rack in the center of the oven and preheat to 325 degrees F. Line a large baking sheet with parchment paper.
- Put the bacon in a large saute pan and cook over medium heat until most of the fat has rendered and the bacon is crispy, about 10 minutes, stirring occasionally. Use a slotted spoon to remove the bacon to a large bowl. Increase the heat slightly (between medium and medium-high) and add the onions to the bacon fat in the pan and cook until tender, about 5 minutes, stirring occasionally. Add the garlic and cook until tender, about 1 minute, stirring constantly. Transfer to the bowl with the bacon. Stir in the chopped ribs and pulled pork. Cool completely.
- Add the beef, eggs, breadcrumbs, mustard powder, smoked paprika, basil, thyme, 1 to 1 1/2 teaspoons salt (depending on how salty the ribs and pulled pork are) and several heavy grinds of pepper. Use your hands to mix until well combined. Form into a 9-by-3 1/2-inch loaf that is about 2 inches tall on the prepared baking sheet. Spread 1/4 cup of the BBQ sauce evenly over the top of the meatloaf.
- Bake for 30 minutes, and then spread the remaining 1/4 cup BBQ sauce on top of the partially cooked meatloaf. Continue to bake until a thermometer inserted into the center of the meatloaf registers 160 degrees F, about 45 more minutes.
- Serve with additional warm BBQ sauce alongside.

When I've made 'barbeque meatloaf' before I've simply used the standard spoon-the-glaze-on-top-of-the-loaf-and-bake-it method. This time I wanted to line the loaf pan with some of the sauce, press the meat in, and let it roast in the goodness.
