COLD BREW COFFEE

Cold Brew Coffee image

Let's make cold brew coffee! It's easy to make, and it's so nice to have coffee ready to go. This recipe is written for a 1-quart wide-mouth mason jar; you can scale it up or down using 1 ounce* (28 grams) coffee per 1 cup water. The quantities provided will produce about 2 1/2 cups concentrate, which is enough for 5 cups of cold brew.

Time 20m

Number Of Ingredients 2

3 ounces (85 grams) coarsely-ground coffee (that's about 3/4 cup whole coffee beans turned into about 1 1/2 cups* coarsely-ground coffee)
3 cups water (filtered water if you have it)

Steps:

  • In a 1-quart wide-mouth mason jar, combine the coffee and water. Stir to combine. I like to let my mixture rest for about 5 minutes and stir it again; the coffee grounds seem to gain more water exposure this way.
  • Put a lid on your container and refrigerate it for 12 to 18 hours.
  • When you're ready to strain your cold brew, place a thin paper coffee filter or a small, thin cotton napkin, cloth or handkerchief over a small fine-mesh sieve. Pour the concentrate through the prepared sieve into a liquid measuring cup or pitcher. Let it rest for a few minutes to let the last of the cold brew trickle down.
  • To serve, fill a glass with ice and fill it halfway with water. Then fill the rest of the glass with cold brew concentrate, and stir to combine. Cold brew concentrate will keep well in the refrigerator for up to 2 weeks, although I find that it has the best flavor within the first week.

Time 13h30m

Number Of Ingredients 4

1 cup ground coffee
6 cups water
Large glass pitcher bowl
Fine mesh filter ((I use the filter that came with my Takeya cold brew pitcher))

Steps:

  • Grind whole coffee beans, OR use any previously ground coffee you have on hand
  • Place 1 cup coffee grounds in a covered bowl or pitcher. Cover with 6 cups cold water.
  • Stir up the grounds so they are all wet and mixed fairly well.
  • Let coffee grounds and water sit in the fridge for at least 8 hours (I usually let it sit for 12 hours).
  • Pour the coffee and grounds through a fine-mesh nut-milk bag or layered cheesecloth to separate the coffee from the grounds.
  • This coffee is concentrated a bit, so it's usually double strength. I prepare my cold brewed coffee this way: 1/2 cup coffee concentrate + 1/2 cup unsweetened almondmilk + Stevia drops.
  • To serve: mix with as much unsweetened non-dairy milk or creamer as you like. Since this is concentrated, I usually use equal parts cold brew coffee concentrate and almondmilk.
  • Enjoy!

HOW TO MAKE STARBUCKS-STYLE COLD BREW COFFEE AT HOME

From picking the right coffee to the brewing method that leaves you with super smooth coffee

Provided by Meghan Splawn

Categories     Breakfast     Beverage     Coffee     Iced coffee

Number Of Ingredients 2

8 ounces whole coffee beans
8 cups (2 quarts) water, preferably flitered

Steps:

  • Grind the coffee beans into a coarse grind. Grind the coffee beans in a coffee grinder until they are coarsely ground. Depending on the capacity of the coffee grinder, you may need to grind the coffee in batches. The goal is a coarse grind about the size of demerara or raw sugar.
  • Combine the ground coffee and water in the jar. Pour the ground coffee in to a 3-quart jar or pitcher. Add the water.
  • Stir to incorporate. Gently stir the coffee with the water until well-blended. The coffee will float to the top as it sits, but don't stress about that - just make sure all of the coffee gets wet.
  • Steep the coffee overnight in the fridge. Cover and refrigerate the cold brew for at least 18 hours or up to 24 hours.
  • Strain the coffee concentrate. Line a fine-mesh strainer with cheesecloth and set it over a large measuring cup. Slowly pour the coffee concentrate through the strainer. Depending on the size of your strainer, you may need to strain the coffee in batches. Fight the temptation to squeeze or press the coffee grounds in the cheesecloth.
  • Transfer to the cold brew to a clean jar for longer-term storage. Once strained, transfer the coffee to clean, airtight jars for long-term storage. Cover and refrigerate for up to 2 weeks.
  • Make your iced coffee. To serve, fill a glass with 1 cup ice cubes. Pour 1/2 cup the cold brew over the ice, add 1/2 cup cold water, and stir to combine. Add sweet cream or half-and-half if desired and enjoy.

  • Grind your coffee beans on the coarsest setting. Your ground beans should be chunky, similar to the texture and size of Kosher salt.
  • Place your coffee grounds in a 22 quart container and add 3.5 gallons of water. Stir until the coffee is thoroughly moistened.
  • The following day, strain your mixture through a chinois and cheesecloth. Don't press down on the coffee while it is straining because it can add bitterness and acidity. Strain the mixture a second time, if necessary.
