BERRY STUFFED FRENCH TOAST



Berry Stuffed French Toast image

A creamy blackberry stuffed french toast sprinkled with powder sugar, drizzled with maple syrup and topped with more fresh blackberries. Super Easy and undeniably delicious! The perfect summertime breakfast!

1/4 cup granulated sugar
1 teaspoon cinnamon
4 large eggs
1/2 cup milk (or less)
1/2 teaspoon vanilla
1/4 teaspoon almond extract (optional)
8 slices Artesano Bread (or any bread you prefer)
1 container Whipped Philadelphia Mixed Berry Cream Cheese
1 cup fresh black berries, rinsed
2 tablespoons chopped toasted almonds (optional)
Powder Sugar
Maple Syrup

Steps:

  • In a pie plate combine sugar and cinnamon. Mix well. Add in 4 large eggs. Whip till well blended. Stir in 1/2 cup cold milk, vanilla and almond extract. Set aside till ready to begin cooking.
  • Take two slices of bread. On each slice spread with the Whipped Philadelphia Mixed Berry Cream Cheese. On top of the cream cheese gently press down 4-5 black berries. Sprinkle with half the toasted almonds. Place a plain piece of bread over the top of each of the slices that have the toppings. Gently press down.
  • Heat a skillet or griddle on medium heat. Spray with Pam non-stick cooking spray.
  • Dip the stuffed bread into the egg batter. First one side, then flip, and dip the other side. Be sure both sides are well coated.
  • Place the dipped bread into the hot skillet and cook till lightly golden brown. Flip and cook the other side till it too is golden brown.
  • Remove from heat. Slice and plate. Sprinkle with powder sugar, drizzle with maple syrup, top with more fresh berries.

1 (21 ounce) can blackberry pie filling
4 slices bread
2 eggs
1 (8 ounce) container cream cheese spread (plain)
1/2 cup powdered sugar
2 tablespoons water

Steps:

  • In small bowl combine 1 cup pie filling and 1/4 cup powdered sugar and 1 tablespoon of water. Mix well. Put in saucepan on low heat. This will be for the topping.
  • In bowl add two eggs and beat well. Set aside.
  • In small bowl combine 1 cup cream cheese, 1/4 cup of powdered sugar and 1 tablespoon of water. Mix well. Spread this onto one slice of bread. It will be thick and spreadable.
  • Next, add one to two tablespoons of blackberry pie filling on top of cream cheese. (you can add more filling if you want it extra thick).
  • Place a slice of bread on top so that you have made a sandwich.
  • (Repeat steps to make second serving).
  • Dip sandwich into egg mixture so that it's coated on both sides.
  • Place a dab of butter onto skillet. Cook on medium to medium low heat until both sides are golden brown.
  • Top with warm topping mixture. Add cool whip if you prefer. Serve warm.

this recipe may look a little intimidating, but it's actually very easy! a nice twist on the same ol' french toast! this could be made with any berry/jam combination that you would like, but blackberries happen to be my favorite!

4 slices Texas toast thick bread or 4 slices thick sliced French bread
5 eggs
1 cup milk
3/4 cup sugar or 3/4 cup Splenda sugar substitute, divided
2 teaspoons vanilla
8 ounces cream cheese, softened
1/2 pint fresh blackberries
1/4 cup blackberry jam

Steps:

  • Preheat oven to 300. place bread in oven until crusty and kind of hard. Remove bread from oven. Raise oven temperature to 375.
  • In medium or large bowl, beat eggs with milk, 1/4c sugar (or splenda), and 1 t vanilla.
  • Tear each slice of bread into about 5 or 6 pieces and stir into egg mixture. Let sit.
  • In small bowl, combine cream cheese and 1/2 c sugar (or splenda). Set aside.
  • In another bowl, combine fresh blackberries and blackberry jam.
  • Spray bottom of a loaf pan with non-stick cooking spray.
  • Spoon half of bread/egg mixture into bottom of pan.
  • Put blackberry mixture on top of bread mixture in pan, by spoonfuls. Do the same with the cream cheese mixture.
  • Spoon remaining bread/egg mixture over berries and cream cheese.
  • Bake at 375 for 35-40 minutes, until fluffy and golden brown.
  • Serve with powdered sugar and syrup, if desired.

  • Melt jam in a small microwave safe bowl at 50% power for 1 to 2 minutes, stirring every 30-45 seconds until smooth and melted.
  • Lightly coat a 9x13-inch baking ban with cooking spray. Add half of the bread cubes to the pan and scatter the cream cheese cubes evenly on top. Drizzle with the melted jam and top with the remaining bread cubes.
  • In a separate bowl, whisk together eggs, half and half, cinnamon, and vanilla. Pour over the bread mixture. Sprinkle with brown sugar. Cover tightly with aluminum foil and refrigerate overnight.
