- In a large bowl, dissolve yeast in warm water. Add buttermilk, butter, honey, salt, baking soda, wheat germ and 4 cups flour. Beat until smooth. Gradually stir in enough remaining flour to make a soft dough. , Turn onto a heavily floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a floured surface; divide into thirds. Divide each portion into thirds; shape each into a 12-in. rope. Braid three ropes; pinch ends to seal and tuck under. Place in a greased 9x5-in. loaf pan. Repeat with remaining dough. Cover and let rise until doubled, about 45 minutes. , Preheat oven to 350°. Bake 40-45 minutes or until golden brown. Remove from pans to wire racks to cool.

- Mix the yeast and water in the bowl of your mixer and let proof for 5-10 minutes.
- Meanwhile, heat the buttermilk and butter over low heat until the butter melts.
- The mixture will look badly curdled- don't worry, that's what happens when buttermilk is heated.
- It will be fine.
- Mix the salt, baking soda and sugar into 1 cup of the flour.
- Pour over the yeast, and mix until thoroughly combined.
- Put the bowl on your mixer with the dough hook attachment, add another cup of flour and mix until the flour is incorporated.
- Keep adding flour until the dough comes together and is no longer sticky.
- Then let the dough knead in the machine 5-10 minutes.
- Take out of the bowl and finish kneading by hand until the dough is smooth.
- Turn into a buttered bowl, cover with plastic wrap, then a towel, and then let it sit to rise until doubled.
- Punch down the dough, divide and shape into 2 loaves, then place in greased loaf pans.
- Set aside for the second rising.
- Heat the oven to 350 degrees F.
- Bake the loaves until done, about 30-45 minutes.

EASY BUTTERMILK BREAD

- Butter a 9-by-5-by-3-inch loaf pan, using about 1 tablespoon of the butter.
- In a large mixing bowl (or in the bowl of a stand mixer, if you have one), combine 1 ½ cups (180 grams) of the flour with the sugar, salt, and yeast.
- In a small saucepan, heat the buttermilk and 2 tablespoons of the butter over medium heat until the butter is melted and the mixture reaches about 130 degrees Fahrenheit on an instant-read thermometer (Don't worry if you don't have an instant-read thermometer. The mixture should be warm, but not hot to the touch).
- Remove from the heat.
- Using the stand mixer fitted with the flat beater or a hand-held electric mixer, add the warm buttermilk mixture to the flour mixture and combine well.
- Add the egg and beat 1 minute more.
- Add the remaining 1 3/4 cups (210 grams) flour and continue mixing for 5 minutes. If you are using a hand-held mixer, you'll need to scrape the dough off the beaters several times.
- After a few minutes, scrape it onto a board, wet your hands and, without drying them, knead the dough another minute or two. To be honest, the dough will be quite sticky and floppy at this point, so it's more flopping it on top of itself a few times than it is actually kneading. You may need to re-wet your hands to keep the dough from sticking too much.
- Transfer the dough into the prepared loaf pan and spread it out to the corners.
- Cover loosely with a clean dishtowel and place the pan in a warm place (like a sunny windowsill, provided the day is not too hot, or in the oven with the light turned on if your house is chilly) and let rise about 1 hour, until the dough rises above the top edge of the pan.
- While the dough is rising, preheat the oven to 375ºF.
- When dough has risen sufficiently, make a shallow cut lengthwise down the center of the loaf (this keeps it from pulling away from the sides of the pan as it bakes).
- Melt the remaining tablespoon of butter and brush it over the loaf.
- Bake in the center of the preheated oven for about 35 minutes, until the top is firm and lightly browned.
- Place the pan on a wire rack and let cool 10 minutes.
- Remove bread from pan and cool completely on the rack before slicing.

- Combine buttermilk, butter, and sugar in a mixing bowl. In a separate bowl, combine dry ingredients, including yeast. Whisk dry ingredients together to combine, then add to buttermilk mixture in the mixing bowl. (I use a Kitchenaid Mixer.) Mix ingredients until well combined. I like about a quarter sized amount of dough to be sticking on the very bottom. If your dough looks a bit dry, add in another splash of buttermilk. Once you've achieved a good consistency, mix the dough on low for about 6-7 minutes. (Or knead by hand about 10 minutes.) Proper kneading is critical to great textured homemade bread!

- Preheat the oven to 200C | 400F and position a rack in the middle. Lightly grease a 9-inch cast iron skillet or 9-inch square baking dish with butter and place skillet/dish into the oven to heat up. (Alternatively for cast iron skillets: heat 1/2 cup of unmelted butter in your cast iron over stove top on medium heat until melted, turn heat off then allow the butter to cool slightly before adding to the batter.)

- Combine all ingredients into bread machine pan in the order listed above.
- Select the DOUGH cycle and press START.
- Check the dough at least twice during the mixing and kneading phase by lifting the lid to take a peek. The first time, look immediately after the machine starts mixing to ensure the paddles are engaged correctly. Look again 15 minutes into the DOUGH cycle to assess the consistency of the dough. For most recipes, the dough should stick to the side, then pull away cleanly.If your dough is too wet, add flour one tablespoon at a time.Conversely, if the dough is too dry, add one tablespoon of liquid at a time until the dough looks just right. - When the DOUGH cycle has finished, check the dough to be sure it has risen to double the original size. If so, remove the dough to a lightly-floured surface for shaping. If your kitchen is warm, check the size of the dough before the DOUGH cycle completes. The dough may need to be removed and shaped early to avoid overproofing.
- Shape dough with your hands or a rolling pin into a rectangle roughly 14 x 10 inches. If dough is too elastic to shape, cover with a tea towel and let it rest for 10 minutes before trying again.
- Be sure there are no large visible bubbles, especially on the sides of the rectangle. Press them out or pinch them with your fingers to avoid tunnels in your bread. Also, brush off any excess flour as you go.
- Starting from the short side nearest you, roll the dough into a cylinder. Try not to stretch the dough, but neither should it be too loose. Pinch the seam shut and pull up the ends toward the seam and pinch them closed.
- Turn the cylinder of dough over so you can see the smooth top. Drop it into a lightly greased 8½ x 4½-inch loaf pan or a 9 x 4 x 4-inch Pullman pan. Gently smoosh the dough with your palms to make it level throughout the pan.
- Cover with a cheap shower cap or a tea towel. Let rise until peaking over the edge of the pan.
- About 15 minutes before you think your bread will be ready to bake, preheat your oven to 350˚F.
- Brush the top of the loaf with melted butter. Make one slash down the middle with a sharp knife or a razor blade. Pop into the oven for 30-40 minutes or until the internal temperature is 200˚F.
- Let cool for 5 minutes. Remove loaf from the pan and cool on a wire rack. To avoid squashing the loaf, let it cool at least 30 minutes before cutting.

- Unplug your bread machine.
- Remove the bread pan from the bread machine.
- Pour the buttermilk into the bread pan and then add the other ingredients. Place the instant yeast (bread machine yeast) in last and the yeast should not touch the liquid (until the bread machine is turned on and the ingredients start to be mixed together by the bread machine). Some bakers like to make a small indent on top of the flour to prevent the yeast from spilling into the liquids or mixing with the salt before the machine is turned on.
- Put the bread pan with ingredients back into unplugged bread machine.
- Plug in bread machine. Enter the "Dough" setting on your bread machine and then press the "Start" button.
- When the bread machine has finished making the bread dough, unplug the bread machine.
- Remove the bread pan (with the dough) from the bread machine.
- Now go to the instruction section below on "preparing the dough & baking the bread". FYI - Ignore the instructions for the electric stand mixer below if you are using a bread machine to make your dough. Skip down to the preparing the dough & baking the bread section below.
- Unplug your electric stand mixer.
- Remove the mixing bowl from the electric mixer.
- Insert a dough hook into the electric mixer.
- Pour the buttermilk into the mixing bowl and then add the other ingredients. Place the instant yeast in last and the yeast should not touch the liquid (until the electric mixer is turned on and the ingredients start to be mixed together). Some bakers like to make a small indent on top of the flour to prevent the yeast from spilling into the liquids or mixing with the salt before the machine is turned on.
- Place the mixing bowl back into the electric stand mixer.
- Plug in the electric mixer and use a low speed (i.e. setting 2) to mix the dough. Mix & knead the dough for 7-10 minutes.
- Turn off the electric mixer and unplug machine.
- Remove the mixing bowl from the electric mixer. Pour the dough into a second large mixing bowl that has been lightly "greased" with olive oil, melted butter, cooking spray, etc.
- Optional - Lightly coat the top of dough with vegetable oil in order to prevent dough exterior from drying out.
- Loosely cover the bowl with plastic wrap and let the dough rise for 60-90 minutes until it doubles roughly in size. See tips below for more information.
- After the dough has risen, go to the instruction section below on "preparing the dough & baking the bread".
- Sprinkle a little bit of flour onto a large cutting board.
- Remove the dough from the bread pan or mixing bowl and place the dough on the cutting board.
- Press down on the dough with your hands and create a "flattish" rectangle with the dough. The dough should be roughly 1 inch high.
- Roll up the dough into a tight "jelly roll". FYI - Please see the short instructional videos in the tips section on how to shape the dough if you haven't shaped bread dough before. It is easier to watch & learn from these short videos versus trying to explain the rolling technique step by step.
- Place the rolled up dough into the bread pan.
- Press down on top of the dough so the edges of the dough press out towards the sides of the bread pan. This should result in little or no gaps between the dough and the bread pan. This helps the bread to turn into a nice loaf shape without any misshapen edges. Make sure that the top of the pressed down dough is roughly level (so one side isn't much higher than the other).
- Optional - Lightly coat the top of dough with vegetable oil in order to prevent dough exterior from drying out.
- Loosely cover the top of the bread pan with plastic wrap. Set the covered bread pan aside for 45-60 minutes for the dough to rise into a loaf shape. When the dough has risen modestly (1/2 inch to 1 inch) over the top of the bread pan, it is time to place the bread pan in the oven. FYI - Do not wait for the dough to rise higher (or the bread top will be too large after baking). The dough will continue to rise naturally in the oven.
- During this "rising" period, preheat the oven to 350 F. This should be done at least 10-15 minutes before you expect to put the dough & bread pan into oven.
- Place the bread pan in the (preheated) oven to bake at 350 F for 37-42 minutes. Wear oven mitts when dealing with a hot oven. Place the bread pan in the middle of the oven.
- Rotate the bread pan in the oven after 15-20 minutes (in order to ensure an even browning of the bread).
- After the 37-42 minute baking period has finished, remove the bread pan from the oven. Wear oven mitts.
- Remove the bread from bread pan and place the bread on a wire cooling rack. Wear oven mitts.
- Optional - Brush melted butter on top of the bread with a pastry brush. This "basting" helps to create a more golden & tasty crust.
- Allow the bread to cool down on the wire cooling rack for 1-2 hours before cutting the bread.

- Proof yeast in warm water.
- Place the butter or margarine and buttermilk in a small saucepan. Heat slowly until butter or margarine has melted. Cool to lukewarm.
- Place sugar, salt, baking soda, buttermilk mixture, and yeast in large mixing bowl. Add 3 cups flour one cup at a time, and mix with the dough hook attachment of an electric mixer. - Gather Your Ingredients. For this recipe you will need: 6 to 6 1/2 cups of all-purpose flour. 3 tablespoons sugar. 2 envelopes of quick-acting yeast (or 4 1/2 teaspoons)
- Add Dry Ingredients. Add 3 cups of the flour, the sugar, yeast, salt and baking soda (and buttermilk powder, if using) to the bowl of a KitchenAid mixer with a dough hook.
- Add Wet Ingredients. Heat buttermilk, water and butter until very warm (120 -130 degrees F); butter does not need to melt. To gauge the temperature, use a food-grade thermometer.
- Add Remaining Flour. While KitchenAid mixer is still on speed 2, add enough of the remaining flour, 1/2 cup at a time, to make a soft dough. NOTE: I usually use all 6 1/2 cups of flour, but weather conditions can cause this to change.
- Knead the Dough. Continue with the KitchenAid mixer on speed 2 for two minutes in order to knead the dough. NOTE: if you do not have a mixer, instead knead with your hands for 6 - 8 minutes until dough is smooth and elastic.
- Let the Dough Rest. Remove dough from bowl and shape it into a ball on a floured surface. Let it rest on the floured surface, covered with a dry towel, for 10 minutes.
- Shape the Dough. On a lightly floured surface, cut the dough in half. Roll out one half of the dough into a 7" x 12" rectangle. If necessary, use your hands to gently stretch and shape the dough to create as even a rectangle as possible.
- Roll the Dough. Starting with the short end, roll the dough up tight into a log. Pinch the seams together. Seal the ends by flattening with the side of your hand to create a flap.
- Let It Rise! Place the pans in a warm, draft-free location and cover with a dry cloth until double in size, about 30 - 45 minutes.
- Time to Bake! Bake at 375 degrees F for 30 - 35 minutes or until done. Remove from pans; if desired, brush on melted butter with a pastry brush.

- Add the buttermilk mixture to the mixing bowl and beat on low speed just until combined. Increase mixer to medium speed and beat for 2 minutes, scraping down the sides of the bowl with a spatula as needed.
- Add 1 cup of the flour and beat on medium speed for 2 minutes, scraping down the sides of the bowl as needed. Add an additional 1 1/4 cups of flour to the mixing bowl and beat on low speed just long enough to incorporate the flour. Turn the mixer to high and beat with dough hook for about 3 minutes. The dough should be stiff but smooth and elastic and should pull away from the sides of the bowl and cling to the dough hook and center of the bowl.
