Kosher salt and freshly ground black pepper
Olive oil
2 cups thinly sliced yellow or white onions (1/4-inch thick)
3 tablespoons unsalted butter
4 cups thinly sliced green cabbage (1/4-inch thick)
1 1/2 cups low-sodium chicken stock
8 ounces large egg noodles
1/4 cup roughly chopped or torn flat-leaf parsley
1/4 cup sour cream

Steps:

  • Bring a large pot of salted water to a boil.
  • Place a large saute pan over medium-high heat. When the pan is hot, add a film of oil along with the onions and a pinch of salt. Cook, stirring occasionally, until the onions begin to soften and caramelize, 2 to 3 minutes. Move the onions to one side of the pan, and then add the butter, cabbage and a pinch of salt. Cook until everything is caramelized and softened, 4 to 5 minutes. Add the chicken stock. Simmer this mixture until the cabbage is cooked through and the liquid has reduced, about 5 minutes.
  • In the meantime, drop your pasta. Cook at a gentle boil for 2 minutes less than the package directions. Then drain and add to the cabbage mixture. Gently fold in the parsley and sour cream and serve immediately, adding black pepper and a drizzle of oil.

16 ounces extra-wide egg noodles
1/2 cup butter
1 medium sweet onion, chopped
2 garlic cloves, minced

Steps:

  • Cook egg noodles according to package directions; drain.
  • In a large skillet, melt butter and saute cole slaw mix, onion and garlic until tender. Mix in salt and pepper. Gently stir in cooked and drained noodles. Toss together.

Steps:

  • Preheat oven to 325 degrees F. Grease a 2-quart casserole dish with 1 tablespoon butter.
  • Melt 2 tablespoons butter over medium high heat in large saute pan. Add cabbage and onions and season; season with 1 teaspoon Diamond Crystal® Kosher Salt and 1 teaspoon black pepper. Stir; cover and cook for until cabbage and onions are soft, about 10 minutes.
  • Sprinkle in flour, stir. Cook 2 more minutes. Slowly stir in broth and cream; simmer until slightly thickened, about 2 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain.
  • Add cooked noodles to cabbage mixture. Stir to combine. Transfer to prepared casserole dish. Dot with 2 tablespoons butter.
  • Cover and bake until mixture is hot and bubbly, about 30 minutes.

We had this for our meal tonight, and both my DH and I loved it!!! It is easy, very low calorie and delicious. I found this at the Spark People Recipe of the Day site on the Internet. We are neither diabetic, but look for good low calorie, healthy recipes.

3 tablespoons extra virgin olive oil
3 tablespoons apple cider vinegar
2 tablespoons Splenda sugar substitute
1/4 teaspoon fresh ground black pepper
1 tablespoon low sodium soy sauce
1 head green cabbage, shredded
2 green onions, chopped
1 carrot, peeled and grated
1 (3 ounce) package ramen noodles, crushed, not cooked

Steps:

  • Make dressing by combining ingredients in a large bowl.
  • Combine the first three salad ingredients, toss well.
  • Add crushed ramen noodles and dressing to salad and toss again (I did not use the seasoning packet).
  • Serve right away (preferred) or cover and refrigerate to allow the flavors to blend.
  • I also nearly doubled the dressing ingredients.

1 (8 ounce) package egg noodles
3 tablespoons butter
½ pound bacon
1 onion, chopped
1 small head cabbage, chopped
1 dash garlic salt

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the egg noodles; return to a boil. Cook, uncovered, stirring occasionally, until the noodles are cooked through, but still firm to the bite, about 5 minutes. Drain; return to the pot and stir in the butter.
  • Meanwhile, place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
  • Place the onion into the skillet with the bacon grease, and cook and stir over medium heat until the onion begins to soften, about 2 minutes. Stir in the cabbage, and cook and stir until wilted, about 5 minutes. Chop the bacon, add it to the skillet, and cook until the cabbage is tender, about 10 minutes. Stir in the noodles, and continue cooking just until heated through.

Ramen noodle salad is THE BEST summer side dish. You'll love the toasted noodles, crunchy cashews, sweet mandarins, cabbage, Asian veggies, and a sweet and tangy dressing.

2 3-ounce packages of ramen noodles (seasoning packet discarded or saved for another use)
½ cup cashews (bonus if they're spicy!)
2 cups thinly sliced purple cabbage
2 cups thinly sliced green cabbage
2 medium carrots (shredded with the large holes on a grater)
1 cup snap peas (cut in half)
1 red pepper (diced)
¼ cup green onions (chopped)
3 mini mandarin oranges (peeled and segmented)
2 tablespoons sesame seeds
2 tablespoons EACH: cooking oil, rice vinegar, and soy sauce ((gluten-free, if needed))
1 tablespoon EACH: toasted sesame oil and honey
1 teaspoon EACH: minced ginger and minced garlic

Steps:

  • Preheat your oven to 400 degrees.
  • Crush the dry ramen noodles into bite-sized pieces on a rimmed baking sheet. There will be many tiny pieces, but make sure there are some slightly larger pieces as these have the best crunch. Add the cashews to the sheet and toast in the oven for 7-8 minutes, stirring halfway through.
  • Add the cabbage, carrots, snap peas, red pepper, green onions, mandarin oranges, and sesame seeds to a large salad bowl. When the ramen and cashews have cooled, add them to the bowl, too.
  • Add all the dressing ingredients to a jar with a tight-fitting lid and shake well. Pour the dressing over the salad and toss well. Serve right away.

1 medium head of cabbage sliced into small pieces
16 pkg egg noodles cooked and drained
1 stick butter
1 medium onion diced
6 clove garlic minced
1 Tbsp caraway seeds
salt and pepper to taste
1/2 c dry white wine
1 lb velveeta cubed
1/2 c heavy cream

Steps:

  • 1. Add cabbage to a large pot of boiling salted water and boil until crisp tender about 5 minutes.
  • 2. Add butter to large saucepan. Add onions, garlic, and caraway seeds and cook until translucent. Add salt to taste.
  • 3. Deglaze with white wine and reduce until almost evaporated. Stir in drained cabbage. Cook 2 minutes.
  • 4. Meanwhile add heavy cream to pan with cheese. Cook until cheese is melted.
  • 5. Add cooked noodles to cabbage pan and pour in melted cheese. Stir and cook until well combined. Top with a pinch of pepper.
