EASY CAKE MIX BUTTER PECAN COOKIES

Steps:

• Preheat oven to 350 degrees
• Pour cake mix into a large mixing bowl.
• Crack two eggs.
• Pour in melted butter.
• Add pecans and mix well.
• Refrigerate for one hour.
• Roll the dough into tablespoon sized balls.
• Place on non-stick baking sheet or lay out a piece of parchment paper and place on top of that.
• Bake for 10 minutes or until cookies are set and lightly browned at 350 degrees.
• Serve & enjoy!!!

PUMPKIN PECAN PEANUT BUTTER COOKIE CUPS

Steps:

• Heat oven to 350°F.
• In medium bowl, beat cookie mix, butter and egg with spoon or electric mixer on medium speed until blended. Shape level tablespoons of dough into balls to make 36 balls. Place a dough ball in each of 36 ungreased mini muffin cups.
• Bake 10 to 12 minutes or until golden brown around edges. Immediately place 1 candy in center of each cookie. Cool 10 minutes; remove to cooling rack. Press pecan half onto top of each candy. Cool completely, about 1 hour.

BUTTER PECAN COOKIES

Steps:

• Place chopped pecans and 1 tablespoon butter in a baking pan. Bake at 325° for 5-7 minutes or until toasted and browned, stirring frequently. Set aside to cool. , In a large bowl, cream brown sugar and remaining butter until light and fluffy. Beat in egg yolk and vanilla. Gradually add flour and mix well. Cover and refrigerate for 1 hour or until easy to handle. , Roll into 1-in. balls, then roll in toasted pecans, pressing nuts into dough. Place 2 in. apart on ungreased baking sheets. Beat egg white until foamy. Dip pecan halves in egg white, then gently press one into each ball. , Bake at 375° for 10-12 minutes or until golden brown. Cool for 2 minutes before removing to wire racks.

PECAN SANDIES - CAKE MIX COOKIES

Steps:

• Pour cake mix into a large bowl. Whisk dry mix to remove lumps or sift it into the bowl.
• Add pecans to the dry cake mix and stir well.
• In a liquid measuring cup, add the egg. Add enough oil to the egg to bring the mixture to 1/2 cup. Add enough water to bring the mixture to 2/3 cup. Beat mixture together with a fork.
• Add egg mixture to cake mix in large bowl. Mix well.
• Using a teaspoon or small ice cream scoop, gather balls of dough, rolling them into perfect circles. Place 12 on a cookie sheet and bake 8-12 minutes at 350 degrees F. If they get golden brown, they are too done. Pulling them out around 10 minutes should be perfect.
• Let the cookies cool 5 minutes before transfering them to a plate or container.

Steps:

• Preheat an oven to 350 degrees F (175 degrees C).
• Beat the butter and sugar with an electric mixer in a large bowl until smooth. Add the egg and beat until incorporated; then beat in the peanut butter until evenly mixed. Stir in the cake mix until just incorporated. Shape the dough into 1 inch balls, place onto ungreased baking sheets, and flatten with a fork.
• Bake in the preheated oven until the edges are golden, about 10 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.
