The classic party appetizer with a Southwest twist. These pretty Southwest Chicken Tortilla Pinwheels are made ahead and are waiting for you in the refrigerator to slice and serve at party time. A great addition to your appetizer menu at any time of year.

8 ounces Neufchatel (light) or regular cream cheese, softened
3 tablespoons light sour cream
10 ounce can RoTel Tomatoes, drained slightly
½ teaspoon minced garlic
½ teaspoon all-purpose seasoning salt (like Lawry's Seasoned Salt)
½ teaspoon freshly ground black pepper
1 cup shredded cheddar cheese
5 green onions (thinly sliced)
2.25 ounce can chopped olives
1 jalapeno (seeded as desired and diced (optional))
2 cups cooked shredded chicken (I use rotisserie chicken)
5 large burrito size flour tortillas or wraps in assorted flavors

Steps:

  • Use a mixer to combine cream cheese, sour cream, diced tomatoes, garlic, and seasonings. Use a spoon to stir in cheese, green onion, olives, jalapeno (if using), and shredded chicken.
  • Divide mixture between the tortillas, spreading out evenly leaving about a ½-inch border at the edge. Roll up tightly. Wrap rollups tightly in plastic wrap and transfer to the refrigerator to chill for at least an hour or until ready to serve.
  • Remove from refrigerator and use a sharp knife to slice into 2-inch pieces.

6 Burito sized flour tortillas
8 oz Cream cheese
1 cup Sour cream
1 1/2 cup Mozzarella cheese, shredded
1/3 cup Red onion, finely chopped
2 tablespoon fresh Parsley, finely chopped
1 teaspoon Garlic powder
Ground Black pepper to taste
Salt to taste

Steps:

  • In a large dish combine cream cheese, sour cream, garlic powder, black pepper and salt and then stir in red onion, parsley, mozzarella cheese and shredded chicken.
  • Next, spread ⅙ of the filling over a tortilla roll it up and then wrap the tortilla with plastic wrap foliage.
  • Repeat the same procedure with the rest of the tortillas and filling.
  • Tortillas should be left in the fridge for a few hours, before serving and then sliced into ½ inch rings

1 ½ teaspoons (7.5 g) garlic powder
1 ½ teaspoons (3 g) onion powder
½ teaspoon (2 g) Creole seasoning
1 green onion (, chopped)
1 tablespoon (4 g) parsley
½ teaspoon (2.5 g) salt
½ teaspoon (1 g) freshly ground pepper
4 (10- inch) flour tortillas
2 cups (270 g) shredded chicken
3 cups (90 g) fresh baby spinach leaves
½ cup (92 g) red bell pepper (, diced)
grated cheese (, optional)
¾ cup (170 g) bacon (, chopped (about 5-6 slices))

Steps:

  • In a medium size bowl, mix together the cream cheese, garlic powder, onion powder, creole seasoning, green onions, parsley, salt and pepper until thoroughly combined.
  • Spread about 3 tablespoons each of the cream cheese mixture evenly over the 5 tortillas, leaving a 1 inch border on all sides.
  • Next, layer the cream cheese mixture with shredded chicken followed by baby spinach. And sprinkle evenly each tortilla with red bell pepper and cheese. Or you can also vary the toppings by sprinkling only with bacon bits in some of the tortillas. Get creative with the stuffing variation.
  • Tightly roll up each tortilla and secure with a foil wrap, place sandwich in the refrigerator for about 30 minutes, this helps to keep it in shape.
  • When ready to serve, take off the wrap, using a sharp knife, slice each tortillas into 4 to 5 pinwheels or in the thickness you prefer.

Steps:

  • Spread whipped cream cheese spread evenly on tortillas. Sprinkle the green onions, black olives and chopped ham slices evenly between all ten of the tortillas. Roll tortillas up jellyroll style. Cover with plastic wrap and refrigerate for 2 hours.

1 (8 ounce) package cream cheese, softened
1 (4 ounce) can canned diced green chiles, well drained

1/2 teaspoon garlic powder, to taste
5 10-inch flour tortillas

Steps:

  • Mix all of the filling ingredients (everything but the tortillas) together thoroughly.

  • Tightly wrap individually in plastic wrap, twisting the ends.
  • Refrigerate for several hours.

1 cup chipotle salsa
2 cups chopped rotisserie chicken meat, still warm from store or warmed in microwave

Steps:

  • Heat a large skillet over medium heat. Add a flour tortilla, blister it on 1 side then turn it over. Scatter cheese on top and cook 1 minute. Remove to cutting board. Top the tortilla with 1/4 cup salsa, spreading it gently with the back of a spoon back to edges. Top with 1/2 cup chicken, then roll tortilla into a log. Let stand a minute before cutting. Repeat with remaining ingredients. Cut pinwheels into 1/2-inch slices and arrange on platter.
