A tangy tomato-herb sauce and Parmesan accent chicken that's cooked in a flash.

Number Of Ingredients 12

Ingredients

4 boneless chicken breast halves, skinned
Salt
1 cup seasoned dry breadcrumbs
1 teaspoon dried oregano, crumbled
1 teaspoon dried basil, crumbled
2 eggs, beaten to blend
3 tablespoons butter
3 tablespoons olive oil
3 garlic cloves, minced
1 14 1/2-ounce can tomatoes, drained, diced
1/4 cup tomato sauce
1 cup grated Parmesan

Steps:

Preheat oven to 300°F. Place chicken between sheets of waxed paper. Flatten to thickness of 1/4 inch using meat mallet or rolling pin. Season with salt. Combine breadcrumbs, 1/2 teaspoon oregano and 1/2 teaspoon basil in shallow bowl. Dip chicken in eggs. Dredge in breadcrumbs.
Melt butter with oil in heavy large skillet over high heat. Add chicken and cook until golden, about 2 minutes per side. Transfer chicken to ovenproof platter. Place in oven.
Add garlic to same skillet and sauté over medium heat until golden, about 1 minute. Add tomatoes, tomato sauce and remaining 1/2 teaspoon oregano and 1/2 teaspoon basil. Simmer until thickened, stirring frequently, about 2 minutes. Spoon sauce over chicken. Sprinkle with Parmesan. Return chicken to oven just until cheese begins to melt.

This is a dressing or stuffing served as a side dish with chicken or turkey. Chicken may be de-boned and added to dressing if you prefer. This is real southern cookin' y'all! Everyone tells me this dressing is so good it makes their tongues wanna slap their brains out! Hope you enjoy!

Ingredients

¼ cup bacon grease
2 (8.5 ounce) packages corn bread mix
.66 cup milk
2 eggs
1 onion, diced
1 green bell pepper, diced
1 cup butter, divided
2 (16 ounce) packages herb seasoned stuffing mix
4 (14.5 ounce) cans chicken broth
2 tablespoons poultry seasoning
3 tablespoons baking powder

Steps:

Preheat oven to 350 degrees F (175 degrees C). Generously coat a 9x13 inch baking dish with bacon grease.
Mix corn bread mix with milk and egg according to package directions. In a medium skillet over medium heat, cook onion and bell pepper in 1/2 cup butter until tender. Stir onion mixture into corn bread batter. Pour into prepared 9x13 inch pan.
Bake in preheated oven 35 to 40 minutes, until golden brown. Cool completely. Increase oven temperature to 375 degrees F (190 degrees C).
Processed cooled corn bread in a food processor until soft and mushy. Pour into a large aluminum roasting pan. Stir in herbed stuffing mix. Stir in chicken broth, a can at a time, until mixture is well moistened, but not soupy. Stir in poultry seasoning and baking powder. Dot with remaining butter, and press butter down into dressing.
Bake in preheated oven until puffed and golden, 30 to 45 minutes.

6 (8-ounce) boneless chicken breasts halves
1 cup flour
1 egg, beaten with 1 cup milk
3 cups good quality fresh bread crumbs
1/2 - 1 cup light cooking oil

Herb Butter:
1/2 cup chopped green onions
1/2 cup chopped fresh parsley
2 cloves garlic
1 teaspoon basil (2 tablespoons fresh)
1/2 teaspoon oregano (1/2 tablespoon fresh)
1 teaspoon marjoram (1 tablespoon fresh)
1 teaspoon tarragon (1 tablespoon fresh)
1 teaspoon dill weed (1 teaspoon fresh)
1 teaspoon black pepper
dash of Tabasco
1 pound unsalted butter

Steps:

Dip chicken breasts in flour, dip in egg/milk mixture, then thoroughly coat in bread crumbs. Sauté in hot oil until well browned on each side. Cook until done (do not overcook). Serve with a dollop of herb butter. Herb Butter: Mix all above thoroughly in food processor. The herb butter is delicious on toasted French bread, or toast triangles. Can also be used on steaks, hamburgers, veal scaloppini or steamed vegetables. Francis Hopkinson, a signer of the Declaration of Independence, designed the first American flag, which was adopted by the Continental Congress in 1777.
