Easy Chickpeas Salad With Feta And Mint image

This Easy Chickpeas Salad with Feta and Mint is a great recipe for any day of the year. Grab that can of chickpeas from your pantry and make the recipe in less than 10 minutes. Use fresh mint and basil in the summer or dried herbs in the winter. Healthy, easy and delicious!

1 can(15 oz) of chickpeas
1-2 medium tomatoes chopped
2-3 green onions chopped
1 medium cucumber chopped
1/4 cup crumbled feta cheese
2 teaspoons fresh chopped mint
2 teaspoons chopped basil
1 lemon(use the juice)
2 teaspoons extra virgin olive oil
salt and pepper to taste
Note: If you do not have fresh basil and mint use a 1/2 teaspoon of dried basil and dried mint)

Steps:

  • Drain and rinse the chickpeas.
  • In a bowl, combine the chickpeas, tomatoes, cucumbers, green onion, feta cheese, basil and mint together.
  • Add the olive oil and lemon juice, salt and pepper to taste.
  • Serve cold.

Mediterranean flavors shine in this salad. Salty feta, refreshing mint, and nutty farro and chickpeas combine with pungent lemon and red onion.

2 1/2 cups cooked farro, tossed with 1 tablespoon fresh lemon juice while warm
1 can (15 ounces) chickpeas, drained and rinsed
2 teaspoons finely grated lemon zest, plus 1 tablespoon plus 1 1/2 teaspoons fresh lemon juice
3 tablespoons extra-virgin olive oil
3/4 cup feta cheese, crumbled (3 ounces)
1/2 cup grape or cherry tomatoes, halved
1/2 cup fresh mint
1/4 small red onion, chopped (optional)
Coarse salt

Steps:

  • Combine farro and chickpeas in a bowl. Stir in lemon zest, juice, and oil. Let cool.
  • Stir in cheese, tomatoes, mint, and onion. Season with salt. Refrigerate until ready to serve. (Salad can be refrigerated up to 2 days.)
