Crispy Fried Shrimp Recipe image

The best fried shrimp recipe is dipped in buttermilk, dredged in a light and crispy seasoned flour coating, and fried to golden brown perfection!

Provided by Blair Lonergan

Categories     Appetizer     Dinner

Time 40m

Number Of Ingredients 8

2 cups self-rising flour
Salt
1 teaspoon Old Bay seasoning
½ teaspoon black pepper
2 cups buttermilk
4 cups peanut oil or vegetable oil, for frying
2 pounds medium shrimp, peeled and deveined
Optional, for serving: tartar sauce (or other dipping sauce); lemon wedges; fresh parsley

Steps:

  • In a shallow bowl, whisk together flour, 1 tablespoon salt, Old Bay seasoning, and black pepper.
  • Place the buttermilk in a separate shallow bowl.
  • Pour the oil into a medium Dutch oven or cast iron skillet and warm over medium-high heat until it reaches 375 degrees F.
  • Meanwhile, pat the shrimp dry and dredge them in the flour mixture first, then coat with buttermilk, and dredge in the flour mixture again. Shake the shrimp after each coating to get off any excess flour or batter.
  • Working in batches, fry shrimp until golden brown (about 2-3 minutes). Use a slotted spoon to transfer the shrimp to a paper towel-lined tray. Season with additional salt, to taste. You may need to increase the heat to keep the oil at a steady temperature between 350 degrees F and 375 degrees F as the shrimp fry.
  • Keep the fried shrimp warm in a 200 degree F oven while you fry the remaining batches.

CORNMEAL COATED FRIED SHRIMP

Cornmeal Coated Fried Shrimp image

We lived on the Texas Gulf Coast and my father and family shrimped and fished with a passion. Shrimp was plentiful in our home of 10 people and saved my mother money...imagine that...so we had it often. One of my favorite ways to have shrimp was simple and delicious and still the way I cook it most of the time. It may be easy,...

Time 35m

Number Of Ingredients 6

2 lb medium shrimp, cleaned and deviened
1 c yellow cornmeal, i use quaker brand
1/2 tsp red pepper, more if you like it spicey
1 tsp salt
1 Tbsp steak seasoning, i use texjoy
2 c vegetable cooking oil or other oil for deep frying

Steps:

  • 1. Clean and de-vein shrimp. Rinse thoroughly and leave shrimp in clean water, you want the shrimp to be wet when dredging in cornmeal. In a small bowl mix cornmeal and seasonings well.
  • 2. Heat cooking oil until hot enough for deep frying. Approximately 325 degrees. If you get the oil too hot, it will make the fried shrimp a darker color.
  • 3. Dip shrimp into cornmeal mixture and drop into hot oil to cook. Fry for approximately 5 minutes or until a light golden brown. Serve hot with ketchup, cocktail sauce or tartar sauce.

SHRIMP PO'BOY

Shrimp Po'Boy image

Many believe that brothers Benny and Clovis Martin created the first version of a po'boy as a free meal for striking New Orleans streetcar drivers in 1929. According to legend, the Martins would say "Here comes another poor boy!" when someone approached for a sandwich, which was half a French bread loaf stuffed with fillings like fried shrimp and oysters.

Categories     main-dish

Time 30m

Yield 4 shrimp po'boys

Number Of Ingredients 15

1 cup all-purpose flour
3/4 cup cornmeal
1 tablespoon salt-free Cajun seasoning
Kosher salt and freshly ground pepper
1 1/2 cups whole milk
1 teaspoon hot sauce (preferably Louisiana-style)
1 pound medium shrimp, peeled, deveined and patted dry
Vegetable oil, for frying
1/2 cup mayonnaise
2 tablespoons minced dill pickles
2 tablespoons minced shallot or sweet onion
2 teaspoons hot sauce (preferably Louisiana- style), plus more for serving
Kosher salt and freshly ground pepper
4 French-bread rolls, split
Shredded lettuce and sliced tomatoes, for serving

Steps:

  • Make the shrimp: Whisk the flour, cornmeal, Cajun seasoning, 1 tablespoon salt and 1 teaspoon pepper in a medium bowl. Stir together the milk and hot sauce in a large bowl; add the shrimp. Working in batches, remove the shrimp from the milk mixture, letting the excess drip off, and add to the bowl with the flour mixture; toss to coat. Transfer to a plate and refrigerate 15 minutes to let the coating set.
  • Meanwhile, make the rémoulade: Combine the mayonnaise, pickles, shallot and hot sauce in a small bowl; season with salt and pepper.
  • Fry the shrimp: Line a baking sheet with paper towels. Preheat the oven to 350˚ F. Heat 2 inches of vegetable oil in a large heavy pot over medium heat until a deep-fry thermometer registers 360˚ F. Working in batches, fry the shrimp until golden brown and crisp, 2 to 3 minutes. Remove to the prepared baking sheet with a slotted spoon; season with salt. Adjust the heat as needed between batches.
  • Meanwhile, put the rolls on a baking sheet and bake until toasted, about 5 minutes. Spread the rémoulade on the cut sides and fill with lettuce, the shrimp and tomatoes. Serve with more hot sauce.
