CRISPY FRIED SHRIMP RECIPE
Steps:
- In a shallow bowl, whisk together flour, 1 tablespoon salt, Old Bay seasoning, and black pepper.
- Place the buttermilk in a separate shallow bowl.
- Pour the oil into a medium Dutch oven or cast iron skillet and warm over medium-high heat until it reaches 375 degrees F.
- Meanwhile, pat the shrimp dry and dredge them in the flour mixture first, then coat with buttermilk, and dredge in the flour mixture again. Shake the shrimp after each coating to get off any excess flour or batter.
- Working in batches, fry shrimp until golden brown (about 2-3 minutes). Use a slotted spoon to transfer the shrimp to a paper towel-lined tray. Season with additional salt, to taste. You may need to increase the heat to keep the oil at a steady temperature between 350 degrees F and 375 degrees F as the shrimp fry.
- Keep the fried shrimp warm in a 200 degree F oven while you fry the remaining batches.

- In a brown bag or ziploc bag, add flour, cornmeal, seasoned salt, pepper, cayenne, lemon pepper, and paprika and shake together.
- In a deep pie plate or large shallow bowl, whisk together buttermilk, egg and hot sauce.
- Dip shrimp in beaten buttermilk mixture then add back into the cornmeal breading and shake liberally to coat well. Place coated shrimp on a baking sheet.
- While coating sets, add 2 - 2 1/2 inches of oil to a deep pot and heat over medium high heat.
- Fry shrimp until golden brown but don't fry too long. Shrimp doesn't take too long to cook.
- Drain on paper towels and serve.

- Heat 1/2-inch of oil in a large, heavy-bottomed skillet over medium heat. Line a large plate with a paper towel, set aside.
- In a cake pan or pie plate whisk together eggs and buttermilk. Add 1/2 teaspoon of salt and pepper.
- In another cake pan, mix together the flour, cornmeal, salt, pepper, garlic powder, onion powder, and cayenne pepper.
- Add shrimp to the egg mixture and coat well. A few at a time, add the shrimp to the flour and coat completely. Place on a clean plate while you bread the remaining shrimp.
- Add shrimp to skillet making sure not to overcrowd the pan. Fry for 3 minutes, until crispy and golden brown. Drain on prepared plate. Continue until all shrimp is fried.

- 1. Clean and de-vein shrimp. Rinse thoroughly and leave shrimp in clean water, you want the shrimp to be wet when dredging in cornmeal. In a small bowl mix cornmeal and seasonings well.
- 2. Heat cooking oil until hot enough for deep frying. Approximately 325 degrees. If you get the oil too hot, it will make the fried shrimp a darker color.
- 3. Dip shrimp into cornmeal mixture and drop into hot oil to cook. Fry for approximately 5 minutes or until a light golden brown. Serve hot with ketchup, cocktail sauce or tartar sauce.

- Make the shrimp: Whisk the flour, cornmeal, Cajun seasoning, 1 tablespoon salt and 1 teaspoon pepper in a medium bowl. Stir together the milk and hot sauce in a large bowl; add the shrimp. Working in batches, remove the shrimp from the milk mixture, letting the excess drip off, and add to the bowl with the flour mixture; toss to coat. Heat 2 inches of vegetable oil in a large heavy pot over medium heat until a deep-fry thermometer registers 360˚ F. Working in batches, fry the shrimp until golden brown and crisp, 2 to 3 minutes. Remove to the prepared baking sheet with a slotted spoon; season with salt. Adjust the heat as needed between batches.
- Meanwhile, put the rolls on a baking sheet and bake until toasted, about 5 minutes. Spread the rémoulade on the cut sides and fill with lettuce, the shrimp and tomatoes. Serve with more hot sauce.
