The homemade dressing really makes this simple, quick-to-fix salad shine. You get so much flavor without a whole lot of work. Making the dressing in advance and refrigerating will intensify the flavor. Adding blue cheese crumbles is a great option as well.

1/2 cup 2% milk
3 tablespoons lime juice
1 cup mayonnaise
1 shallot, finely chopped
1 tablespoon ranch salad dressing mix
1 teaspoon pepper
1 garlic clove, minced
1 medium head iceberg lettuce
1-1/2 cups grape tomatoes, halved lengthwise
2/3 cup crumbled cooked bacon
Crumbled blue cheese, optional

Steps:

  • In a small bowl, whisk milk and lime juice; let stand for 5 minutes. Whisk in the mayonnaise, shallot, ranch dressing mix, pepper and garlic until blended., Cut lettuce into four wedges. Drizzle with dressing; top with tomatoes and bacon. Sprinkle with blue cheese if desired.

4 slices thick-cut bacon, diced
3 tablespoons tomato paste
2 tablespoons white wine vinegar
2 tablespoons sour cream
1 tablespoon minced shallot
1 tablespoon chopped fresh tarragon
1/2 teaspoon sugar
1/3 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
1 head iceberg lettuce, cut into 6 wedges
1 cup cherry tomatoes, quartered

Steps:

  • Cook the bacon in a skillet over medium heat until crisp, about 10 minutes. Transfer with a slotted spoon to a paper towel-lined plate. Reserve the drippings.
  • Make the dressing: Combine the tomato paste, vinegar, sour cream, shallot, tarragon, sugar and 1 tablespoon bacon drippings in a medium bowl; whisk well. Add the olive oil in a slow stream, whisking until emulsified. Whisk in 2 to 3 tablespoons water to make the dressing thin enough to drizzle. Season with salt and pepper.
  • Arrange the iceberg wedges on a platter and drizzle with the dressing. Top with the tomatoes and bacon.

6 bacon slices (about 1/4 pound)
1/4 loaf Italian bread
1/4 teaspoon minced garlic
1 tablespoon fresh lemon juice
1/4 cup mayonnaise
1 tablespoon water
1 small red onion
1/2 pound cherry tomatoes (about 3/4 pint)
1 head Boston lettuce

Steps:

  • In a skillet cook bacon over moderate heat, stirring occasionally, until crisp. Reserving 1 tablespoon bacon fat in skillet, drain bacon on paper towels and crumble. Cut bread into enough 3/4-inch cubes to measure 1 cup. Heat fat over moderately high heat until hot but not smoking and sauté bread cubes with salt to taste, stirring, until golden brown. Transfer croutons to paper towels to drain and cool.
  • In a small bowl whisk together garlic, lemon juice, mayonnaise, water, and salt and pepper to taste. Slice onion and halve tomatoes. Tear lettuce into bite-size pieces.
  • In a large bowl toss together onion, tomatoes, lettuce, half of bacon and croutons, salt and pepper to taste, and enough dressing to coat.
  • Divide salad between 2 plates and top with remaining croutons and bacon.

1 head romaine lettuce - rinsed, dried and shredded
2 large tomatoes, chopped
2 cups seasoned croutons

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat, turning frequently, until evenly browned. Drain, crumble and set aside.
  • In a blender or food processor, combine mayonnaise, milk, garlic powder and black pepper. Blend until smooth. Season the dressing with salt.
  • Combine lettuce, tomatoes, bacon and croutons in a large salad bowl. Toss with dressing, and serve immediately.

  • Make the sauce several hours before assembling salad. Whisk the mayonnaise and sour cream together in a medium sized bowl. Add the buttermilk, Worcestershire sauce, garlic, and seasoning salt to this mixture. Mix well to combine. Season the dressing with salt and pepper. Gently fold in the blue cheese crumbles and stir to combine. Cover with plastic wrap and refrigerate for several hours (or even better- overnight!) until ready to serve.
  • When ready to serve, take completely chilled lettuce out of refrigerator. Pull off any discolored outer leaves. Remove core by hitting the lettuce (core side down) onto kitchen counter to loosen up the core. Remove the core, and discard.
  • Slice the lettuce into 4 wedges, slicing from the top of the lettuce to the bottom. Place a completely cold lettuce wedge onto each serving plate. Spoon the dressing over the top of the wedge, and allow the dressing to overflow and run down the side.
  • Sprinkle the top of the wedge with crumbled bacon bits, chopped tomatoes, and additional blue cheese crumbles. Serve and enjoy!
