1 1/2 lbs cube steaks
1 cup all-purpose flour, plus
3 tablespoons all-purpose flour, divided
1 1/2 teaspoons salt, divided
1 1/4 teaspoons pepper, divided
1 teaspoon paprika
2 1/2 cups milk, divided
3 eggs, beaten
4 tablespoons oil
butter

Steps:

  • Place 1 cup flour, 1/2 cup milk, and eggs in 3 separate shallow bowls in the working area.
  • Mix 1 tsp salt, 1 tsp pepper, and the paprika into the flour and mix well.
  • Season both sides of cube steaks with additional salt and pepper, if desired.
  • Dip cube steaks in milk, then dredge in seasoned flour.
  • Dip floured steaks in egg wash, then again in the seasoned flour.
  • Heat 2 tbsp oil in a large skillet on medium heat and do half the cube steaks at a time, or work with two skillets, if you desire.
  • Brown the cube steaks on each side, about 8-10 minutes total cooking time; remove from heat and set the steaks aside.
  • Drain all but 1 tbsp oil (if any- I don't usually have any, but the steaks are less greasy with less oil) from the pans.
  • Add enough butter to the pan to equal 3 tbsp along with the oil.
  • Melt the butter and add 3 tbsp flour and stir with a whisk to make a roux, deglazing the bottom of the pan, and cook for a few minutes on LOW heat; do not burn.
  • Slowly add the remaining 2 cups milk, and stir or whisk constantly until mixture comes to a boil and thickens; cook for another minute or so and remove from heat.
  • Serve Country Fried Steaks (Chicken Fried Steak, as we call it) with plenty of gravy on top, and mashed potatoes on the side (double gravy recipe if you use a LOT of gravy on your potatoes, etc).

8 oz cube steak, 4 steaks, 8 oz (225 g) each
1 ½ teaspoons kosher salt, plus more to taste
1 teaspoon black pepper, plus more to taste
2 large eggs
2 ¾ cups whole milk, divided
1 ½ cups all-purpose flour, divided, plus 3 tablespoons
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 cup vegetable oil
3 tablespoons unsalted butter
½ cup heavy cream

Steps:

  • Preheat the oven to 225˚F (110˚C).
  • Set a steak in the center of a cutting board and cover with a piece of plastic wrap. Using a meat mallet, pound the steak evenly to ¼-inch (½ cm) thick. Season with salt and pepper on both sides. Repeat with the remaining meat.
  • In a wide, shallow dish, whisk together the eggs and 1 cup (240 ml) of milk. In a separate shallow dish, mix together the 1 ½ cups (190 g) of flour, pepper, salt, garlic powder, onion powder, and paprika.
  • Dredge the steaks in the flour mixture, then dip in the egg mixture, letting any excess egg drip off. Coat again in the flour mixture. Set aside for 10-15 minutes, until the coating has dried out a bit.
  • Meanwhile, heat the oil in a 10-inch (25.5 cm) pan over medium-high heat until it reaches 375˚F (190˚C).
  • Fry the steaks, 2 at a time, for 3 minutes, until golden brown and crispy. Flip and cook on the other side for 3 minutes more, until golden brown and cooked through when the internal temperature reaches 155˚-165˚F (170˚-175˚C). Transfer the steaks to a paper towel-lined plate or baking sheet and immediately season with salt. Once all of the steaks are done frying, transfer to the oven while you prepare the gravy.
  • Pour the hot oil into a heatproof bowl and let cool before discarding. 9. Leave any browned bits in the pan.
  • In the same pan, without wiping it out, melt the butter over medium heat. Add the remaining 3 tablespoons of flour, whisking to incorporate. Cook for 2-3 minutes, until the roux is a light brown color. Add the heavy cream and remaining milk. Bring to a simmer and cook, whisking constantly, until thickened, 5-7 minutes. Season with salt and pepper.
  • Ladle the gravy over the steaks and serve with your favorite side dishes.

4 cube steaks (about 1/3 lb each)
1 1/2 cups all purpose flour
2 tsp fresh ground black pepper, divided
2 tsp kosher salt or sea salt, divided
1/2 tsp smoked paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp baking soda
1/2 tsp baking powder
1 1/2 cups buttermilk
2 tsps TABASCO® Sauce (original)
2 eggs
1 cup vegetable oil
4 tbsp grease
4 tbsp flour
2 to 3 cups whole milk
1/2 cup heavy whipping cream
salt and pepper to taste

Steps:

  • In a shallow bowl, whisk together flour, one teaspoon black pepper, one teaspoon salt, paprika, onion powder, garlic powder, baking soda, and baking powder. Set aside.
  • In a separate shallow bowl, whisk together buttermilk , TABASCO® Sauce, and eggs. Set aside.
  • Pat cube steaks dry with a paper towel, removing as much moisture as possible. Season with one teaspoon of salt and one teaspoon of pepper. Let sit for 5 minutes and pat dry again with paper towel.
  • Dredge the cube steaks in the flour mixture, shaking off excess, then dredge in the buttermilk-egg mixture, letting excess drip off, and then once again in the flour mixture, shaking off excess.
  • Place breaded cube steaks on a sheet pan or metal rack and press any of the remaining flour mixture into the cube steaks making sure that the entire steak is completely coated. Let sit for 10 minutes.
  • Preheat oven to 225 to 250 F.
  • Meanwhile, heat vegetable oil in a heavy skillet or large cast iron skillet over medium high heat. How much oil you need depends on the size of your skillet. You want it to be about 1/4-inch deep. We aren't deep frying the steaks, just shallow frying.
  • Test the oil by dropping a bit of the breading into in. The oil should sizzle and bubble around the breading. Look for the oil to be glistening but not smoking - about 320-340 degrees F. Now we're ready to fry.
  • Place two steaks into the pan at a time and fry for 3 to 4 minutes on each side or until golden brown. Do not flip more than once or the breading will fall off. Do not fry more than two steaks or the pan will be too crowded and the breading will fall off.
  • Remove steaks from pan and drain on paper towels. Place in preheated oven. Turn skillet heat to medium.

1 1/2 cups whole milk
2 extra large eggs
2 cups all-purpose flour
2 teaspoons lawry's seasoned salt
1 1/2 teaspoons freshly ground black pepper
3/4 teaspoon paprika
1/4 teaspoon ground cayenne pepper
3 pounds cube steak, (tenderized round steak that's been extra tenderized)
1 pinch of kosher salt
1/2 cup canola oil, (or use vegetable oil)
1 tablespoon butter
3/10 cup all-purpose flour
3 cups whole milk
1/2 teaspoon lawry's seasoned salt
1 pinch of freshly ground black pepper
6 cups mashed potatoes, for serving

Steps:

  • Arrange three bowls in a line. In the first, mix the milk with the eggs. In the second, mix the flour with the seasoned salt, black pepper, paprika and cayenne. Place the steak in the last bowl. At the end of the line, place a clean plate, ready for the breaded steak. Take the first steak and sprinkle both sides with kosher salt and pepper. Coat it in the flour mixture, then place in the milk/egg mixture, coating thoroughly. Finally, place it back into the flour mixture and turn it, making sure it is well coated. Place on the clean plate, then repeat with the other steaks. Heat the oil and butter over a medium heat in a large skillet. Test by dropping in a few sprinkles of flour, which will sizzle when the oil is hot enough. When the oil is ready, add 3 pieces of the steak at a time and cook until the edges start to look golden. This will take around 2 minutes each side. Place the meat on a plate lined with paper towels and keep warm whilst you cook the rest. Once all the steak is cooked, pour the grease from the pan into a heatproof bowl and return the skillet to the stove (don't clean it first). Set the heat to medium-low and return 1/4 cup of the grease back to the skillet. Once the grease is hot, sprinkle the flour for the gravy over it evenly. Whisk the flour into the grease, which will create a golden brown paste (roux). If it looks too greasy, add a little extra flour. If it seems too clumpy, add a little more grease. Once the roux is a deep, golden brown color, whisk in the milk. Add seasoned salt and black pepper to taste and cook until the gravy is thick and smooth, stirring constantly. This should take 5 to 10 minutes. If the gravy becomes too thick, add a little more milk. Serve the meat with mashed potato and top with the gravy.

THE COATING
1 c flour, all purpose
1 1/2 tsp baking powder
1/4 tsp salt, table variety
1 Tbsp shortening, or oil, or softened butter
THE COUNTRY-FRIED STEAK
1/2 c flour, all purpose
1/2 tsp salt, table variety, or to taste
freshly ground black pepper, to taste
1 large egg
2 Tbsp water
2 bottom or top round steaks (1/2 pound each), pounded to tenderize
1/3 c vegetable oil
THE MILK GRAVY
2 1/2 Tbsp flour, all purpose
1/4 tsp salt, table variety
1/8 tsp freshly ground black pepper, or to taste
1 1/2 c milk, whole fat

Steps:

  • 1. Disclaimer: I just want to say, up front, that this recipe probably has enough calories, and fats to service a platoon of soldiers. I think I could have this as a breakfast every day... But I don't.
  • 2. THE COATING
  • 3. Mix together all the dry ingredients in a bowl.
  • 4. Using your hands, or a pastry blender, cut the shortening, or the oil, or softened butter into the dry ingredients, until the mixture resembles a coarse meal.
  • 5. Reserve for later use.
  • 6. Chef's Note: If you make more of this than you need, simply place it in the refrigerator in a tightly sealed container. It should last for several months.
  • 7. THE COUNTRY-FRIED STEAKS
  • 8. Chef's Note: When you tenderize a steak, you are essentially pounding it with a dimpled mallet, which is an excellent way to take out your frustrations. But something else besides tenderizing is happening. You're pounding what's on the surface of the steak into the interior of the steak. If there are any nasty bacteria on the outside, they are now on the inside. Two things: First, make sure that you're working with fresh steaks, and second, make sure you cook them thoroughly, minimum internal temperature should be 160f (71c). No rare or medium rare when it comes to tenderized steaks, or any ground meat products.
  • 9. Add the flour, salt, and pepper to a shallow pan and thoroughly combine.
  • 10. Whisk the egg and water together, and add to a second shallow pan.
  • 11. In a third pan add the coating mix, which you previously made.
  • 12. Start with the flour, and coat the steaks.
  • 13. Next dip into the egg mixture.
  • 14. Finally, coat the steaks generously with the coating mix.
  • 15. Allow the steaks to rest on a parchment-lined baking sheet for 20 minutes.
  • 16. Chef's Note: The resting period will help to set the crust.
  • 17. Chef's Tip: While the steaks are resting, you might want to drop down a bit in the recipe, and make the milk gravy. Then, keep it warm on a side burner, and cook the steaks. And speaking of steaks, let's get to it... I'm hungry.
  • 18. Add the oil into a large frying pan (I prefer cast iron), over medium-high heat.
  • 19. When it begins to shimmer, add the two steaks, and fry 4 to 5 minutes per side, or until they are nice and golden brown.
  • 20. Remove the steaks from the pan, and drain on paper towels.
  • 21. THE MILK GRAVY
  • 22. Remove all but three tablespoons of the oil from the pan that you used to cook the steaks, and place over a burner at medium heat.
  • 23. Add the flour to the pan, and mix until it absorbs all the oil (you're making a roux).
  • 24. Add the salt and black pepper, and combine.
  • 25. Add the milk to the roux, and whisk until thoroughly combined, and thickens.
  • 26. Chef's Tip: To prevent lumps in the gravy, after adding the flour to the oil, slowly add the milk a little at a time and mix with the whisk, and then add more milk and whisk until all the milk has been added, and you have the desired consistency. Check for proper seasoning, and you've got it.
  • 27. Serving Suggestion: Fry up two nice over-easy eggs, lay the steak next to the eggs, with some hash browns and cover in the milk gravy... don't forget a couple of nice skillet baked buttermilk biscuits. Now that's a proper Southern breakfast... Enjoy

Chicken-fried steak is a treat no Southerner can resist! And I can't resist a 5-ingredient version of the recipe. This is really not a hard food to prepare and I give ideas for rounding out a traditional meal using convenience foods. Prepare as much of your menu as possible beforehand because once the meat starts cooking, it goes fast! Treat yourself to some real down-home southern cooking today!

4 cube steaks (one for each of your diners)
1/3 cup flour
salt and pepper
1/4 cup milk
1 egg, beaten
1 1/4 cups dry bread, crumbs (panko may be used)
1/3 cup salad oil

Steps:

  • Mix the flour, salt and pepper together in a bowl; I use soup bowls. You may measure these, as I do, Rachael Ray style ~ in other words I eyeball the amounts. In a second bowl. whisk together the milk and egg until lemon colored. I a third bowl, add the dry bread crumbs. Line the bowls up assemble-line style.
  • Dredge the meat in the seasoned flour, knocking off excess. Dip floured meat in the egg and milk mixture, coating well. Then dredge in the bread crumbs, again, coating well.
  • Heat a cast-iron skillet (traditional but your own skillet will work) over medium-high heat. Add oil. When oil is hot enough to spit back at you if you sprinkle water on it, add meat and brown 2-1/2 minutes per side for rare, 4 minutes per side for medium and 6 minutes per side for well-done. Turn only once. As you see, this goes fast and the meat requires your full attention while cooking. Remove meat to a serving dish and keep warm.
  • Notes: A traditional meal of chicken-fried steak includes:.
  • Mashed potatoes: use a prepared mix or refrigerated potatoes.
  • Country gravy: use an envelope of country-style gravy and prepare according to package directions.
  • Green beans: canned beans work well, perhaps flavored with some bacon.
  • Biscuits: use refrigerated baking powder style biscuits. These are a vital part of the Southerner's meal.
  • Salad: A wedge of lettuce or tossed green salad goes well.
  • Dessert: That's up to you. Mississippi Mud Cake was a fave in our home (recipe is posted).
  • Remember to prepare as much as possible of the menu beforehand so that once the meat is cooked, you're ready to heat.
  • To make CHICKEN-FRIED CHICKEN, I follow this same recipe, but I use pounded boneless skinless chicken breasts (your butcher will do this for you). I do like Panko on the chicken.

1/4 cup cornmeal
1/2 teaspoon salt
1/4 teaspoon pepper
4 beef cube steaks (4 ounces each)
1 large egg white
1 teaspoon water
2 tablespoons canola oil, divided
GRAVY:
1 tablespoon butter
2 tablespoons all-purpose flour
1-1/2 cups 2% milk
1 teaspoon beef bouillon granules
1/2 teaspoon dried marjoram
1/4 teaspoon dried thyme
1/8 teaspoon pepper

Steps:

  • Combine 3 tablespoons flour, cornmeal, salt and pepper; set aside. Coat steaks with remaining flour. Beat egg white and water; dip steaks, then dredge in cornmeal mixture. , In a large skillet, cook two steaks in 1 tablespoon oil over medium-high heat for 5-7 minutes on each side or until crisp, lightly browned and cooked to desired doneness. Remove steaks and keep warm. Repeat with the remaining oil and steaks. , Meanwhile, for gravy, melt butter in a small saucepan; stir in flour until smooth. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Reduce heat to medium-low. Add the bouillon, marjoram, thyme and pepper; simmer, uncovered, for 4-5 minutes, stirring occasionally. Serve with steaks.

2 pounds boneless round steak
Salt
Pepper
Spices (what ever you have available)
Beef tallow or grease
1 quart buttermilk
1 cup flour

Steps:

  • Cut steaks 3/4-inch thick. Pound the steaks with meat tenderizing hammer until about 1/4-inch thick. Season with salt and pepper, to taste, and rub on other spices if you have them.
  • Start heating beef tallow or grease in Dutch oven. Be sure you have enough grease in the pan to cover the steaks (at least 1-inch.) Put the buttermilk in bowl and put the flour on a plate. Wet the steaks in buttermilk and then drag through flour making sure both sides have flour on them. If a thicker crust is wanted, then repeat this procedure again. When grease just begins to smoke, then you are ready to drop in a steak and cook. Cook steak until golden brown on both sides turning steak in grease, if needed. Repeat until all steaks are cooked.

¼ cup milk
1 cup all-purpose flour
1 (4 ounce) packet saltine crackers, crushed
1 ½ teaspoons seasoned salt
1 ½ teaspoons onion powder
1 ½ teaspoons garlic powder
1 ½ teaspoons Montreal steak seasoning
4 (4 ounce) cube steaks
2 tablespoons vegetable oil

Steps:

  • Whisk together the egg and milk in a shallow bowl; set aside.
  • Whisk together the flour, crushed saltines, seasoned salt, onion powder, garlic powder, and steak seasoning. Dip the steaks in the egg mixture, then press each steak in the flour mixture. Pat the flour mixture into the steaks to coat them completely.
  • Heat oil in a large skillet over medium-high heat, and fry the steaks until they are golden brown, firm, hot in the center, and just turning from pink to grey, about 4 minutes per side. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

Country Fried Steak, also known as Chicken fried steak, is a Southern food classic but is so easy to make at home. Tenderized round steak, or cube steak, is breaded and fried to a crispy golden brown. The pan drippings are used to make a flavorful creamy milk gravy so you can smother the steaks. Serve with mashed potatoes for a decadent comfort food dinner.

1 1/2 pounds round steaks (or pre-tenderized cube steaks (4 steaks))
1 teaspoon kosher salt
2 large eggs (beaten)
1 cup buttermilk
2 cups all-purpose flour
2 teaspoons kosher salt (plus more to season meat)
2 teaspoons garlic powder
1 teaspoon smoked paprika
1/2 teaspoon cayenne
1/2 cup Oil (peanut, olive, canola or avocado oil (amount will vary but you need enough to cover the bottom 1/4 inch of your pan))
1/4 cup pan drippings (reserved after making the country fried steak (roughly 4 Tablespoons))
1 tablespoon butter
1/4 cup all-purpose flour ((roughly 4 Tablespoons))
1/2 cup heavy cream (can omit)
2 cups whole milk (amount can vary depending on your preference )
Salt (to taste)
Freshly ground pepper

Steps:

  • Pound the steaks: Flattening one steak at a time, place steak into a large resealable plastic bag and use a meat tenderizer mallet to pound them to a uniform 1/4 inch thickness.
  • Sprinkle a little salt over both sides of each steak. Preheat oven to 200°F.
  • Prep the coating: Using two flat bottomed dishes large enough to fit the tenderized steaks, whisk together the eggs and buttermilk in one dish and combine the flour with the salt and seasonings in the other.
  • Coat the steaks: Press both sides of each steak into the flour mixture. Shake off excess. Dredge both sides into the egg mixture. Shake off excess. Then, set steak in the flour mixture for a second time, ensuring that the entire surface is well coated by shaking it around. Flip to coat both sides, but take care not to pull off any coating. Transfer to a clean plate or large cutting board while you finish remaining steaks.
  • Heat the pan: Over medium high heat, heat pan with oil until the oil reaches a temperature of 350°F.
  • Cook steak: Carefully place one prepared steak in the hot oil. Use a large metal spoon to transfer excess hot oil in the pan to the top of the steak. Fry until you see the edges of the steak turn golden brown, about 2 minutes. Use tongs to carefully turn the steak in the pan and cook for another 2 minutes (no need to spoon hot oil on top of already cooked side).
  • Transfer to rack: Use tongs to lift fried steak out of pan and allow any excess oil to drip off. Transfer to a paper towel lined plate to absorb any excess grease and then a wire rack placed over baking sheet and keep warm in preheated oven until all steaks and gravy are finished and ready to serve.
  • Fry remaining steaks: Follow same process to cook remaining steaks and transfer each on to the rack in the oven to keep warm until done. Adjust heat, if needed, to maintain an oil temperature of 350°F.
  • Reduce amount of oil. Transfer all but 1/4 cup of the drippings to a glass or metal bowl. Do not discard in case more is needed later. Add butter to pan.
  • Make the roux. Reduce heat under pan to medium low. Sprinkle the flour over the hot oil and whisk to combine. Flour should absorb all of the oil and will turn golden brown over the low heat when whisked continually. If mixture seems too greasy once mixed, add a bit more flour. If mixture is to dry, add additional reserved drippings. Cook about 5 minutes while continually whisking, until the roux is a light brown.
  • Finish gravy: Combine milk and heavy cream. Slowly pour into roux, whisking the entire time. Continue to heat and whisk until gravy reaches desired consistency. If gravy doesn't thicken, slowly increase heat. Taste and season with salt and pepper.
  • Serve each chicken fried steak with a side of mashed potatoes and smother everything with the warm gravy.

1 1/4 cups (plus 2 tablespoons) all purpose flour
1 teaspoon seasoned salt
2 cups buttermilk
1 dash Paula Deen Hot Sauce
8 (4 oz) tenderized beef round steaks
for frying vegetable oil
4 cups whole milk
to taste kosher salt
to taste black pepper
sliced for garnish green onions
for serving buttermilk biscuits
to taste Paula Deen House Seasoning

Steps:

  • Add 1 1/4 cups flour to a pie plate and season with salt, pepper and seasoned salt.
  • Add buttermilk to a pie plate and season with a few dashes of hot sauce.
  • Season the meat on both sides with Paula Deen House Seasoning. Dredge the steaks through the buttermilk then the flour.
  • Add an inch of oil to a large heavy skillet set over medium-high heat. Add steaks to the hot oil in batches and fry until golden and brown, about 5 minutes per side. Drain on a paper towel-lined sheet tray and repeat with remaining steaks.
  • Reduce the heat to medium and sprinkle 2 tablespoons flour into oil and stir with wooden spoon. Slowly pour in the milk while stirring. Stir gravy until smooth. Season with lots of black pepper. Add the steaks back to the skillet and reduce the heat to low. Cover and simmer for 20 minutes.
  • Serve on buttered biscuits with sliced green onions.
