SLOW-COOKED PORK BURRITO BOWLS
Skip the tortillas and serve a spicy pork filling on top of colorful Spanish rice. Olé!

Steps:
- If pork roast comes in netting or is tied, remove netting or strings. In 3- to 4-quart slow cooker, place pork. Pour beans around pork. Sprinkle dry taco seasoning mix over pork. Pour green chiles over beans.
- Cover and cook on Low heat setting 8 to 10 hours.
- About 45 minutes before serving, in 3-quart saucepan, make rice mixes as directed on package, using water and butter.
- Remove pork from cooker; place on cutting board. Use 2 forks to pull pork into shreds. Return pork to cooker; gently stir to mix with beans.
- To serve, spoon about 1 cup rice into each serving bowl, top with 1/2 cup pork mixture, 1/4 cup cheese, 1/4 cup lettuce and about 1 tablespoon salsa.

QUICK AND EASY PULLED PORK BURRITOS

- Pour beans into a pot and bring to a simmer over medium-low heat.
- Place a tortilla on a microwave-safe plate, sprinkle with onion, 2 tablespoons beans, and 2 to 3 tablespoons pulled pork. Sprinkle with Monterey Jack cheese, and roll the tortilla closed. Drizzle over 2 tablespoons of enchilada sauce, and sprinkle with more cheese.
- Microwave until heated through and cheese is melted, about 1 minute. Repeat with remaining tortillas and filling ingredients.

EASY CROCK-POT PULLED PORK BURRITO BOWLS
Easy Crock-Pot Pulled Pork Burrito Bowls are as the name in the title implies, easy!

- In a small bowl, combine the spices: chili powder, cumin, oregano, paprika, salt, and pepper. Rub the meat on all sides with the spice rub.
- In the base of a crock-pot, place the onion wedges and garlic. Place the rubbed pork over the top of the onions and garlic, followed by the beer, lime juice, and then the chipotle peppers. Cook the pork on high for 6 hours.
- After six hours, the meat should easily pull apart when shredded with a fork. Using two forks, shred the meat. Serve the pulled pork over rice (recipe below). Top with your choice of toppings. Retain some of the juice from the crock-pot if you plan to store the meat in the fridge or freezer.
- For the rice: In a large pot, bring the broth, rice, lime juice, salt, and olive oil to a boil. Cover the pot with a lid, and then reduce to a simmer. Simmer the rice for 20 minutes, until the rice has absorbed the liquid. Remove the rice from the heat and stir in the chopped cilantro. Serve under the pulled pork.

PULLED PORK (CROCK POT)
I found this pulled pork recipe years ago, and it's a favorite at potlucks. Freezes well for easy quick meals.

Steps:
- Slice one onion and place in crock pot.
- Put in the roast and cover with the other onion, sliced. Pour over the ginger ale. Cover and cook on LOW for about 12 hours. See Note2 below regarding amount of time needed!
- Remove the meat, strain and save the onions, discard all liquid. With two forks, shred the meat, discarding any remaining fat, bones or skin. Most of the fat will have melted away.
- Return the shredded meat and the onions to the crock pot, stir in the barbecue sauce. Continue to cook for another 4 to 6 hours on LOW.
- Serve with hamburger buns or rolls and additional barbecue sauce. Any leftovers freeze very well.
- TIP: freeze ready-made sandwiches - a scoop of meat on a bun, well-wrapped. These make a great quick meal or snack. To reheat, remove wrapping, wrap in a paper towel, and zap 1-2 minute in the microwave.
- Note: Shoulder or butt are recommended because the meat shreds very well. Other cuts do not shred as readily. It is a fattier cut, but the fat melts away in the cooking and is poured away when you discard the liquid.
- Note 2: I have an older, smaller crock pot. The above times work perfectly for me. But if you have a newer or bigger crock pot, you may need to revise times downward, esp. after the bbq sauce is added. I think you need at least a couple of hours for it all to meld, but that may be all you need. Update: I recently bought a bigger crockpot, I think 5 or 6 qts. I cooked a 6 lb pork shoulder in it for 8 hours and it was shreddable at that point. Shredded, added the sauce, and cooked for another hour or so to meld everything. So use your best judgment on timing!
- Note3: You might want to turn your roast over after it's cooked a while, to ensure more even cooking. I think this may depend on the size and shape of your roast and the size of your slow cooker. Remember that each time you remove the lid you lose heat and be careful, as turning a large piece of meat is awkward.
- Note4: my sister says this takes 2 hours in the Instapot. I don't have one, up to you to figure out the steps.

- Cut roast in half; place in a 4- or 5-qt. slow cooker. In a small bowl, mix broth, taco seasoning, parsley, garlic, pepper and salt; pour over roast. Cook, covered, on low 8-10 hours or until meat is very tender., Remove pork from slow cooker; cool slightly. Shred meat with two forks. Skim fat from cooking juices. Return cooking juices and pork to slow cooker. Stir in beans and chilies; heat through., Spoon 1/2 cup pork mixture across center of each tortilla; add toppings as desired. Fold bottom and sides of tortilla over filling and roll up., To freeze burritos: Roll up burritos without toppings. Wrap individually in paper towels, then foil. Transfer to a resealable plastic bag. May be frozen for up to 2 months. To use frozen burritos, remove foil. Place paper towel-wrapped burritos on a microwave-safe plate. Microwave on high for 3-4 minutes or until heated through. Serve with toppings as desired.
