EASY GINGERBREAD HOUSE COOKIES



Easy Gingerbread House Cookies image

Gather the family to bake and decorate gingerbread houses. It's sweet fun, made easy with cookie mix.

1 pouch (1 lb 1.5 oz) Betty Crocker™ gingerbread cookie mix
1/2 cup butter or margarine, softened
1 tablespoon water
1 egg
1 container (1 lb) Betty Crocker™ Rich & Creamy creamy white or vanilla frosting, if desired
Assorted small candies, if desired

Steps:

  • Heat oven to 375°F. In medium bowl, stir cookie mix, butter, water and egg until dough forms. Divide dough in half.
  • Working with half of dough at a time, roll out on floured surface into 9x6-inch rectangle. Cut rectangle into 6 (3-inch) squares. Place 4 squares on ungreased cookie sheet. Cut remaining 2 squares diagonally in half to form 4 triangles. Place 1 triangle on one side of each square for roof; press dough to seal.
  • Bake 8 to 11 minutes or until set. Cool 5 minutes. Remove from cookie sheet. Cool completely, about 15 minutes. Decorate with frosting and candies.

1 package (14-1/2 ounces) gingerbread cake/cookie mix
1/2 cup butter, softened
1/4 cup sugar
1 large egg
2 tablespoons all-purpose flour
1 tablespoon water
1/4 teaspoon ground ginger, optional
FILLING:
4 ounces cream cheese, softened
1/4 cup butter, softened
1/2 teaspoon vanilla extract
1-3/4 cups confectioners' sugar
Ground cinnamon and nutmeg
Crystallized ginger, chopped, optional

Steps:

  • In a large bowl, beat cookie mix, butter, sugar, egg, flour, water and, if desired, ginger until blended. Refrigerate 30 minutes or until firm., Preheat oven to 350°. Shape dough into 1-in. balls; place in ungreased mini-muffin cups. Press evenly onto bottoms and up the sides of cups. Bake 10-12 minutes or until edges are lightly golden. Cool in pans 2 minutes. Remove to wire racks to cool completely., For filling, in a large bowl, beat cream cheese, butter and vanilla until blended. Gradually beat in confectioners' sugar until smooth. Pipe into cookie cups; sprinkle with cinnamon, nutmeg and, if desired, crystallized ginger. Refrigerate in an airtight container.

1 cup sugar
1/2 cup shortening
1/2 cup molasses
1 cup boiling water
2 teaspoons baking soda
1 teaspoon baking powder
2 cups white whole wheat flour
6 tablespoons egg whites
1 1/2 teaspoons ginger
3 teaspoons cinnamon
1 cup heavy cream, whipped
1 tablespoon white sugar
fresh raspberry
mint sprig

Steps:

  • Preheat oven to 350°.
  • Spray 9x13" baking pan with non-stick cooking spray. Line bottom of pan with parchment or waxed paper.
  • Prepare cake: Cream together sugar and shortening.
  • Mix together dry ingredients.
  • Add molasses and boiling water to sugar and shortening mixture.
  • Slowly add dry ingredients to mixture; mixing well between each addition.
  • Beat eggs well & add into mixture. Pour into prepared pan.
  • Bake until toothpick inserted in center comes out clean (20-30 minutes).
  • Allow to cool.
  • Using 1 3/4" cookie cutter or glass rim, cut into 10 rounds. (If too thick, cut horizontally to 1/2" thickness).
  • Bake on cookie sheet at 300°F 30 minutes more to toast.
  • Garnish: Whip cream with sugar to soft peaks.
  • Add whipped cream to each gingerbread piece, top with fresh raspberries & a mint sprig.
  • Serve.

These gingerbread men have a real bite. I found this old recipe for gingerbread men somewhere, and when I went to make them I decided to add my own personal touches! This is my own recipe and it is always a favorite at the cookie swap and at the holidays. The icing gives me the shivers because I like to add a lot of lemon juice (it goes wonderfully with the spicy gingerbread), and that is how it got its name.

2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoon cinnamon
1 teaspoon ground cloves
1 teaspoon ground ginger
1/2 teaspoon nutmeg
1/2 cup butter, at room temperature
1/2 cup sugar
1 egg
1/2 cup molasses
2 1/4 cups confectioners' sugar
1/4 teaspoon cream of tartar
2 egg whites*
Lemon juice, to taste

Steps:

  • For the cookies:
  • Preheat the oven to 350 degrees F.
  • In a medium bowl, sift the flour, baking powder, baking soda, cinnamon, cloves, ginger and nutmeg. Set aside. In a mixer, beat the butter and sugar until fluffy. Add egg and molasses, and beat until smooth. Add the flour mixture, a little at a time, and mix until incorporated and a dough is formed. Refrigerate until firm, at least 3 hours.
  • Roll dough out to 1/4-inch thick, and cut gingerbread men with cookie cutters. Transfer to an ungreased cookie sheet and bake until set, about 6 to 8 minutes. Cool on wire racks.
  • For the icing:
  • In a mixer, combine sugar, cream of tartar, and egg whites*, and beat until stiff peaks form, about 7 minutes. Mix in the lemon juice to taste. Transfer icing to a piping bag and decorate gingerbread men.

⅔ cup molasses
2 eggs
4 cups all-purpose flour, divided
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground allspice

½ teaspoon ground cinnamon
½ teaspoon ground ginger
1 pound confectioners' sugar
½ teaspoon cream of tartar
3 egg whites

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter and brown sugar until smooth. Stir in the molasses and eggs. Combine 1 1/2 cups of the flour, baking soda, salt, allspice, cloves, cinnamon, and ginger; beat into the molasses mixture. Gradually stir in the remaining flour by hand to form a stiff dough.
  • Divide dough into 2 pieces. On a lightly floured surface, roll out dough to 1/8 inch thickness. Cut into desired shapes using cookie cutters. Place cookies 1 inch apart onto ungreased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
  • In a medium bowl, sift together confectioners' sugar and cream of tartar. Blend in egg whites. Using an electric mixer on high speed, beat for about 5 minutes, or until mixture is thick and stiff. Keep covered with a moist cloth until ready to frost cookies.

  • Whisk flour, baking powder, baking soda, cinnamon, ginger, salt, nutmeg, allspice, and cloves together in a large bowl.
  • Place molasses, canola oil, applesauce, brown sugar, white sugar, and eggs into a mixing bowl and beat until well combined. Add flour mixture and mix, starting on low speed, until just combined. Mix in boiling water until combined; mixture will be very wet. Pour into the prepared baking dish.
