1 can (29 ounces) tomato sauce
1 cup heavy whipping cream
1-1/2 teaspoons brown sugar
1 teaspoon Italian seasoning
1/4 teaspoon salt
1/8 teaspoon white pepper
Dash hot pepper sauce
Salad croutons, shredded cheddar cheese, quartered grape tomatoes and/or thinly sliced green onions

Steps:

  • In a large saucepan, combine the first seven ingredients. Cook and stir over medium heat until heated through (do not boil). Garnish with croutons, cheese, tomatoes and/or onions.

Steps:

  • Brown onion and ground beef in large stock pot.
  • Add the seasonings and bring to a boil.
  • Reduce heat and simmer.
  • I like to simmer this for at least an hour, then taste test.
  • The trick is to let it simmer to mix the flavors.

This homemade creamy tomato soup is made with a selection of roasted tomatoes, herbs, garlic and onion, and cream (or coconut cream for vegan tomato soup). A simple, fresh tomato soup that packs a flavor punch in under 10 ingredients. Plus, this recipe is gluten-free and can be made keto, paleo, low sodium, and/or dairy-free with just a few tweaks!

2 pounds red tomatoes (I chose cherry tomatoes; check the notes for suggestions)
2 medium-sized yellow onions
1 large red pepper (optional)
1 head of garlic
few sprigs fresh thyme
1.5 cups vegetable stock (more or less depending on how runny you would like it to be)
1/2 cup coconut cream or double cream
1/4 cup olive oil
1/2 tsp salt
1/4 tsp pepper

Steps:

  • Wash and roughly chop the onion and garlic, and slice the pepper in two.
  • Place them together with the tomatoes, herbs, and pepper (if using) on a baking sheet or on a baking tray. Brush or drizzle with olive oil and roast for between 25-30 minutes at 240ºC/475ºF.
  • Once ready, place everything in a food processor and blend until creamy and smooth (or your desired consistency). You could also pour the ingredients into a large pan and use an immersion blender.Taste the soup and adjust the seasonings if necessary- then serve!
  • The tomatoes and peppers come piping hot from the oven and as long as you don't add the vegetable stock and cream straight out of the fridge (room temperature is great), the soup will be hot enough to consume. If you still feel like it needs to be heated, then place it in a large pan and warm it up over medium heat.

Soup Toppers, for garnish, recipe follows
4 slices crusty bread, 4 inches across, 1/4-inch thick-slice artisan breads at counter in market
2 cloves cracked fresh garlic, optional
Extra-virgin olive oil
Freshly ground black pepper
1/2 pound shredded cheese to compliment your soup: provolone, Asiago, Cheddar, Gruyere, Swiss, etc.

Steps:

  • Combine broth and tomatoes in a medium saucepan over moderate heat. When soup bubbles, stir in heavy cream and reduce heat to low. Season with a little salt and pepper and simmer gently 15 minutes, stirring occasionally. With an immersion blender, puree soup. Serve bowls of soup with basil chiffonade and floating Soup Toppers.
  • Toast bread slices in your toaster until golden. Rub the toasted bread rounds with crushed garlic, if using. Arrange bread on cookie or baking sheet. Drizzle each slice with extra-virgin oil and top with a grind of black pepper and a layer of shredded cheese. Place under hot broiler to melt cheese until toppers are golden brown in color.

I was looking for a cream of tomato soup and came up with this variation on a vegetable soup I recently found. It is very tasty, and the chili gives it just that little bit of extra zing. Yummm. (The quantities given yield 2 large portions that can make a meal in themselves. As a starter, you could get 4 smaller portions.)

1 small red onion, chopped
1 garlic clove, minced
2 celery ribs, chopped
1/2 bell pepper, chopped
1/2 red chile, deseeded (leave seeds in if you prefer it to be quite hot)
1 (14 ounce) can chopped tomatoes
1 pint vegetable stock
1 tablespoon mascarpone cheese (optional)
double cream, to taste (or single cream, for a healthier option)
1 tablespoon butter or 1 tablespoon margarine
1 tablespoon vegetable oil
salt, to taste

Steps:

  • Heat a medium-sized pan, melt butter with oil.
  • Sweat onion, garlic, celery, pepper and chili until translucent.
  • Add tomatoes and vegetable stock.
  • Bring to boil, then let simmer until vegetables are soft.
  • Liquidise in a blender (I use a hand-held blender, but watch out for the hot liquid splashing!).
  • Put the soup back on the fire, add mascarpone cheese (if using), cream and salt to taste.
  • Serve with toast or crostini.
