PARMESAN RANCH CHICKEN TENDERS RECIPE

Steps:
- Preheat oven to 375°F. Line a baking sheet with foil (for easy cleanup, if desired); spray with nonstick spray. Set aside.
- Combine Corn Flakes, dry ranch dressing mix, and Parmesan cheese in a shallow dish.
- Place melted butter in a separate shallow dish.
- Use paper towels to pat the chicken dry.
- Working with one piece of chicken at a time, dip the dry chicken in the melted butter to coat, then dredge in the Corn Flakes mixture.
- Place the breaded tenders on the prepared baking sheet. Spritz lightly with nonstick spray or mist with oil (this helps them brown even more in the oven).
- Bake for about 14-15 minutes, flipping halfway through, or until chicken reaches an internal temperature of 165°F and the coating is browned and crispy.

- Preheat the oven: Preheat the oven to 375°F. Spray a 9x13-inch baking dish with cooking spray.
- Prep Dredge: In a shallow plate, combine the ranch dressing mix with the breadcrumbs and parmesan cheese. Place the mayo in another shallow plate.
- Coat Chicken: Dredge the chicken breasts first through mayo on both sides, then through the breadcrumb mixture. Place into the prepared baking dish.
- Bake: Transfer the baking dish to the preheated oven and bake for 40 minutes or until a thermometer reads 165°F when inserted into the thickest part of the chicken breast.

- Preheat over to 400 degrees.
- Cover baking sheet with aluminum foil for easier clean-up. Spray with non-stick cooking spray.
- Mix together ranch seasoning, Parmesan cheese, and garlic powder.
- Place chicken leg quarters on baking sheet, leaving room for potatoes. (Do not crowd the pan to allow for the extra moisture to evaporate and a crunchy crust to develop as the chicken bakes.)
- Add a layer of mayonnaise to the chicken. Sprinkle the Parmesan cheese mixture, about half the mixture, over the chicken.
- In a large bowl, pour olive oil over potatoes. Add salt and pepper to the remaining Parmesan mixture as desired. Pour over potatoes. Toss to coat. Add the potatoes to the sheet pan with the chicken.
- Bake for about 60 minutes or until the chicken reaches an internal temperature of 170 degrees and juices run clear.

BAKED CHICKEN LEG QUARTERS
Chicken leg quarters are still fairly reasonable at the grocery store. Often, a single chicken thigh looks a little skimpy on a dinner plate. Leg quarters yield two or three extra bites, and they are visually very satisfying. Bonus: cooking with the bones included gives a lot of flavor. A simple, tasty seasoning blend makes prep a breeze.

- Preheat the oven to 425 degrees F (218 degrees C). Line a sheet pan with aluminum foil.
- Stir together smoked paprika, granulated garlic, onion powder, salt, and pepper in a small bowl.
- Pat chicken leg quarters dry with paper towels. Gently lift the skin and sprinkle in 1/4 to 1/2 teaspoon of the seasoning blend, using a fingertip to spread the seasoning around under the skin. Brush both sides of each leg quarter with melted butter.
- Evenly sprinkle remaining spice mixture on both sides of each quarter and set cut side up onto the prepared sheet pan.
- Bake in the center of the preheated oven for 20 minutes. Turn the quarters cut side down using tongs and continue baking until chicken is no longer pink at the bone and the juices run clear, about 20 more minutes. An instant-read thermometer inserted near the bone should read 160 degrees F (71 degrees C).
- Turn on the broiler and broil each side of the chicken leg quarters until skin is nicely browned, 3 to 4 minutes per side. Test for a final internal temperature with an instant-read thermometer of 165 degrees F (74 degrees C).
- Transfer chicken leg quarters to a serving plate. Tent with foil and let rest for 5 minutes before serving.

- Preheat the oven to 375 degrees F (190 degrees C). Butter a 9x13-inch glass baking dish.
- Mix crushed crackers, bread crumbs, Parmesan cheese, ranch dressing, salt, and pepper in a resealable 1-quart storage bag.
