This meatless chili recipe is perfect for those days when you don't have time to slave over the stove while your meal simmers and doesn't require much more than opening a few canned goods to create to a delicious and healthy meal.

1 tbsp extra virgin olive oil
1 medium yellow onion, diced
1 cup vegetable broth
1 can (14 oz) black beans, drained and rinsed
1 can (14 oz) kidney beans, drained and rinsed
1 jar (24 oz) Rao's Arrabbiata Sauce ((or jarred marinara sauce of you preference))
1 tbsp ground cumin
1 tbsp paprika
1 tbsp chili powder
1 can (14 oz) refried beans
salt and pepper as needed

Steps:

  • In a large pot, heat the olive oil over medium heat
  • Once warm, add the diced onion and saute until translucent and soft, about 5-8 minutes
  • Add the vegetable broth and stir to pick up any browned onoins that might have stuck to the bottom of the pan
  • Add the drained black beans, kidney beans and jar of marinara sauce. Stir to combine
  • Add the cumin, paprika, and chili powder. Stir to combine and allow to simmer for an additional 10-12 minutes, stiring frequently.
  • Add the can of refried beans to thicken the chili and stir well to combine. Reduce heat to low and simmer an additional 5 minutes.
  • Taste and season with salt and pepper as need. Garnish with your favorite toppings like shredded cheese, a dollop of greek yogurt, scallions, chives, sliced olives or a squeeze of lime.

3 medium ancho chiles
1 quart vegetable or chicken stock-in-a-box
1/4 cup extra-virgin olive oil
8 portabella caps, wiped clean, gills scraped, chopped
4 large cloves garlic, thinly sliced
1 large onion, chopped
1 green or red chile, thinly sliced
Salt and freshly ground black pepper
A scant palmful smoked paprika
A scant palmful cumin
A scant palmful coriander
Pinch ground cinnamon
2 (15-ounce) cans black beans, rinsed and drained
1 (15-ounce) can fire-roasted diced or crushed tomatoes
1 ripe avocado
1 cup sour cream
Juice of 1 lime
A handful fresh cilantro or fresh parsley
Toasted pepitas or sunflower seeds for garnish, optional
Tortilla chips, 2 (1-ounce) bags or couple handfuls, optional

Steps:

  • Stem and seed the ancho chiles and place in a pot with stock, bring the mixture to a boil then reduce the heat and keep warm.
  • Heat a Dutch oven over medium-high heat with 1/4 cup extra-virgin olive oil, 4 turns of the pan. Add the mushrooms to the hot oil and brown 12 to 15 minutes, then add the garlic, onions, chile, salt and black pepper and soften 5 to 6 minutes more, season with a spice mixture of paprika, cumin, coriander, and cinnamon.
  • Puree the reconstituted chiles and stock in a food processor. Add the chile stock mixture, beans, and tomatoes to the chili, cook 15 minutes until thickened, then turn off the heat, cool, cover and chill for make-ahead meal.
  • To reheat: Cover the chili and place over medium to medium-high heat, stirring frequently until the chili bubbles, then uncover and simmer until ready to serve.
  • Combine the avocado, sour cream, lime juice, cilantro, and salt in food processor and process into a smooth avocado-sour cream sauce for stirring into the chili. Serve the chili in shallow bowls and garnish with the avocado sauce, pepitas, if using, and a few tortilla chips, if using.

1 pound baby bella mushrooms
2 tablespoons vegetable oil
Kosher salt
1 yellow onion, diced
2 stalks celery, chopped
1 orange bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
1 poblano pepper, seeded and chopped
1/2 cup chopped fresh cilantro stems (reserve leaves for garnish)
4 cloves garlic, grated
1 tablespoon chili powder
1 tablespoon smoked paprika
2 teaspoons ground cumin
1 teaspoon ground coriander
One 28-ounce can diced tomatoes
One 28-ounce can crushed tomatoes
1 large zucchini, quartered and sliced
1 1/2 cups frozen corn
One 15-ounce can black beans, rinsed and drained
One 15-ounce can pinto beans, rinsed and drained
Assorted toppings, such as sour cream, grated Cheddar, chopped white onion, avocado, pickled jalapeños

Steps:

  • Remove all the stems from the mushrooms and add them to a food processor fitted with the blade attachment. Add half of the mushroom caps, slightly breaking them up with your hands as you add them. Pulse the mushrooms until they are finely chopped. Set aside. Halve and slice the remaining mushroom caps and set aside.
  • Heat a large Dutch oven over medium-high heat. Add the oil and heat until shimmering. Add the finely chopped mushrooms from the food processor and 1/2 teaspoon salt. Cook until the natural liquid from the mushrooms has released and evaporated, about 4 minutes. Add the onion, celery, bell peppers, poblano pepper, cilantro stems and 1/2 teaspoon salt. Cook, stirring occasionally, until the vegetables begin to soften, 4 to 5 minutes. Add the garlic, chili powder, smoked paprika, cumin and coriander. Stir to coat until the spices are fragrant, about 1 minute. Add the diced tomatoes, crushed tomatoes, zucchini and sliced mushrooms. Stir to combine. Bring the mixture up to a boil, then turn the heat down to low. Cover and simmer for 30 minutes.
  • Remove the lid from the Dutch oven and add the corn, black beans and pinto beans. Stir to combine. Continue cooking until the corn and beans are heated through, an additional 5 minutes. Season with salt.
  • Ladle the chili into bowls and top with the desired toppings.

1 cup canned red kidney beans, rinsed, drained

1/2 cups shredded Mexican-style 4-cheese mix

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Add onion and sauté until tender, about 5 minutes. Add chili powder; stir 1 minute. Stir in tomatoes with juices, veggie crumbles, beans and 1/4 cup water. Cook until slightly thickened, breaking up any large tomato pieces and stirring occasionally, about 5 minutes.
