MEXICAN BEEF AND RICE CASSEROLE
This Mexican casserole with beef and rice is a super easy recipe for family dinner. Garnish with your favorite toppings. I like to top with shredded lettuce and chopped cilantro! More shredded cheese is always good, too.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
- Heat a large skillet over medium-high heat. Add ground beef and start to brown, then add onion, garlic, and taco seasoning. Cook until beef is no longer pink, 5 to 7 minutes. Drain and discard any excess oil. Add beans, tomatoes, spinach, chicken broth, 1 cup Mexican blend cheese, rice, and salsa. Pour into the prepared casserole dish.
- Bake in the preheated oven until rice is cooked, 45 to 50 minutes. Take out of the oven, sprinkle with remaining cheese, and bake until cheese is melted, about 10 minutes more.

EASY MEXICAN HAMBURGER AND RICE
This easy Mexican Hamburger And Rice is a simple recipe great for busy nights or a quick vacation meal. Enjoy hamburger, rice and spices served with tortilla chips.

Steps:
- Cook hamburger until no longer pink. Drain any grease and return to pan
- Add taco seasoning, 1/2 cup water and mix well. Add chopped peppers and cook on medium/low for 5 minutes
- Add in tomato sauce and stir
- simmer on medium/low for 5 minutes
- Meanwhile, cook rice according to package directions
- Drain water and add rice to hamburger mixture. Stir well and cook for another 3-5 minutes
- Serve over tortilla chips or as a burrito in a flour tortilla. Garnish if desired

EASY MEXICAN GROUND BEEF AND RICE

Steps:
- Brown the ground beef and onions in a large skillet by cooking over medium high heat for 4-5 minutes. Once done, drain any excess grease.
- Add the green bell pepper, corn, black beans, ROTEL, broth, taco seasoning, and rice to the skillet and mix well. Turn the heat to high and bring to a boil, then cover and reduce the heat to low. Simmer for 20-25 minutes or until the rice is tender.
- Remove from the heat, then sprinkle the cheddar cheese over the top. Place the lid back on for 1-2 minutes or until the cheese melts.
- Garnish with your choice of fresh chopped cilantro, pico de gallo, sour cream, and fresh lime. Serve warm and enjoy!
