MEXICAN TACO MEATBALLS



Mexican Taco Meatballs image

This recipe is wonderful as an appetizer, served with crusty bread, or as a main dish, served in sub rolls and sprinkled with cheese, or you can add a (15 oz.) can of beans and serve as a meatball chili. It is one of my favorite recipes because it is so easy to prepare and so versatile. I often keep this hot in a crockpot to take to pot lucks and a get together with family and friends.

1 lb ground beef
1 envelope taco bell taco seasoning mix (or taco seasoning mix of your choice)
1 egg, beaten
1/2 cup plain fresh breadcrumb
1/4 cup parmesan cheese
2 tablespoons peanut oil
salt and pepper
1 (16 ounce) jar salsa, mild or hot
1 (14 1/2 ounce) can tomato sauce
extra parmesan cheese, as a garnish (optional)

Steps:

  • Combine ground beef, 1/2 of the taco seasoning package, 1/2 cup salsa, bread crumbs, cheese, egg and salt/pepper to taste.
  • Shape mixture into 1 1/2 inch balls and brown in large skillet in the peanut oil.
  • Drain meatballs on paper towels.
  • In a 2 quart sauce pan, add the tomato sauce, remaining salsa, taco seasoning and meatballs.
  • Simmer for 30 minutes.

Easy Mexican Meatballs image

They make a nice switch from more traditional meatball recipes easier to make. Recipe calls for day-old corn bread or corn muffins. If you do not have stale corn bread or muffins, crumble fresh muffins or bread and toast at 250 degrees for 15 minutes to dry out the crumbs slightly. Serve alone with toothpicks and napkins or with tortillas and extra cheese!

2 cups day old corn muffins, crumbled or 2 cups breadcrumbs
1 1/2 lbs ground turkey (not turkey breast, too dry) or 1 1/2 lbs ground beef
20 ounces mild or medium enchilada sauce, divided
salt and pepper, to taste
4 ounces shredded Mexican blend cheese

Steps:

  • Preheat the oven to 350 degrees.
  • Mix together the cornbread, ground turkey or beef, 1/2 cup sauce, and salt and pepper to taste in a large bowl.
  • Form the mixture into cocktail sized meatballs and place on a large jelly roll pan or baking pan.
  • Bake for 20 minutes, or until browned and cooked through, shaking the pan a few times to allow the meatballs to brown evenly.
  • While the meatballs are heating, heat the remaining sauce until piping hot.
  • Place the meatballs in a chafing dish, crockpot, or saucepan over low heat.
  • Add the sauce and toss to coat.
  • Sprinkle the cheese on top and serve.

1 pound meatloaf mix (a mixture of ground pork, veal and beef)
1/2 cup plain dry breadcrumbs
2 teaspoons chili powder
1 teaspoon dried oregano
1/4 teaspoon cumin
1 large egg
Kosher salt and freshly ground black pepper
1/2 cup vegetable oil
1/4 cup Mexican crema
2 tablespoons roughly chopped fresh cilantro

Steps:

  • Gently mix the meatloaf mix, breadcrumbs, chili powder, oregano, cumin, egg, 1/2 teaspoon kosher salt and a few grinds of pepper until combined. Shape into 24 meatballs, about 1 heaping tablespoon per meatball.
  • Heat the oil in a large nonstick skillet over medium-high heat. Working in batches, fry the meatballs, turning occasionally until browned on the outside and cooked through, 5 to 6 minutes. Transfer to a paper-towel-lined plate to drain and sprinkle lightly with salt. Adjust the heat as needed while frying so the meatballs do not burn before cooking through.
  • Drizzle the crema over the meatballs and sprinkle with the cilantro.

⅓ cup Italian bread crumbs
⅓ cup half-and-half
¼ cup grated Parmesan cheese
2 large eggs
1 large egg yolk
2 cloves garlic, minced
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh parsley
¼ teaspoon dried oregano
1 ¼ pounds ground round beef
½ pound ground Italian sausage
1 teaspoon kosher salt
½ teaspoon ground black pepper
2 (24 ounce) jars marinara sauce

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with foil. Spray foil lightly with cooking spray.
  • Combine onion, bread crumbs, half-and-half, Parmesan cheese, eggs, egg yolk, garlic, basil, parsley, and oregano in a large bowl; stir until well combined. Add ground round and sausage and sprinkle evenly with salt and pepper. Mix well until just combined.
  • Dampen hands with water and form mixture into 18 golf ball-sized meatballs. Arrange meatballs on the prepared baking sheet.
  • Bake in the preheated oven until browned, 12 to 15 minutes.
  • Transfer meatballs to a large pot and add marinara sauce. Simmer over low heat for at least 2 hours before serving.
