PORK ROAST WITH APPLE MUSTARD GLAZE
Steps:
- Preheat the oven to 350 degrees F. Take the pork out of the refrigerator 45 minutes before you are ready to roast to allow the pork to come to temperature.
- Place the pork into a roasting pan fitted with a rack or onto a baking sheet, fat side up, and season with salt and pepper. Put in the oven and roast for 1 hour. Meanwhile, make the glaze.
- In a saucepan over medium-high heat, bring the apple juice to a boil and reduce it by half, about 10 minutes. Whisk in the brown sugar, soy sauce, Worcestershire sauce, and mustard and simmer until thickened, another 5 to 7 minutes.
- After the pork has roasted for 1 hour, start brushing it with the glaze every 15 minutes. Cook until the roast reaches an internal temperature of 150 degrees F, about 2 hours total cook time. Remove from the oven, give it another coating of glaze, and let it rest, uncovered, for 15 minutes before carving. (Reserve 1 cup of the meat for the Round 2 Recipe Pork Hash).
PORK WITH A BLUE CHEESE APPLE AND MUSTARD SAUCE
Keep some extra mustard and applesauce ready, depending on the saltiness of the cheese you use you might want to add some more. I buy the ready-made applesauce. If I do use fresh sage I like to use the pineapple sage that I grow in my garden. This is a simple but elegant dish and easy to double for dinner parties. It is from the Good Food magazine, I just changed it a bit to make it easier to put together.

Steps:
- Trim the pork fillets from any fat, season with salt and pepper.
- Melt the butter and oil in a frying pan, add the pork, brown on all sides, add the sage, turn down the heat and cook until almost done.
- Time will depend on the thickness of the fillets.
- While the pork is cooking mix together, the cream, cheese, mustard and applesauce.
- When the pork is almost cooked, remove from the pan to a plate and keep warm.
- Put all sauce ingredients in the frying pan, stir until the cheese has melted and you have a sauce with a nice consistency.
- Now do a taste check, maybe you want to add more applesauce and/or mustard.
- Serve the pork sliced with the sauce spooned over it.
PORK CHOPS WITH APPLE BALSAMIC SAUCE AND BLUE CHEESE TOMATO GRATIN
Steps:
- Cook garlic and shallot in 1 tablespoon oil in a 3-quart heavy saucepan over low heat, stirring occasionally, until softened, 3 to 5 minutes. Add wine and vinegar and boil until reduced to about 1/2 cup, 8 to 10 minutes. Add chicken and veal stocks and boil until reduced to about 1 1/3 cups, 15 to 20 minutes.
- Preheat oven to 400°F.
- Heat remaining 2 tablespoons oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking. While oil is heating, pat pork chops dry and season with salt and pepper. Sear 3 chops, turning over once, 4 minutes total, then transfer to a shallow baking pan. Sear remaining chops in same manner, then transfer to baking pan (reserving fat in skillet). Roast in middle of oven until an instant-read thermometer inserted horizontally into center of chops (do not touch bone) registers 155°F, 8 to 12 minutes.
- While pork is roasting, peel apple and cut into 1/3-inch dice. Pour off all but 1 tablespoon fat from skillet, then cook apple and raisins over moderate heat, stirring occasionally, until apple is golden brown and caramelized but not falling apart, 2 to 3 minutes. Add sauce and simmer, stirring, 1 minute. Season with salt and pepper.
- Spoon sauce over pork chops.

- Cut tenderloin into 8 pieces. - In food processor, place walnuts. Cover; process, using quick on-and-off motions, until consistency of coarse meal. Add 1/2 cup butter, the blue cheese and pepper; process until combined. Add bread crumbs; process until combined, stopping to scrape down sides as needed. Divide butter mixture evenly among 4 sheets of plastic wrap or waxed paper; flatten each to match width and shape of pork chops, forming 4 disks. Wrap tightly; freeze at least 20 minutes.
- Heat oven to 450°F. In 15x10x1-inch pan, arrange apple wedges. Bake 30 to 35 minutes or just until tender. In large bowl, toss apples with 1 tablespoon butter; cover to keep warm.
- Spray 12-inch cast-iron or other ovenproof skillet with cooking spray; heat over medium-high heat. Add pork chops; cook 6 to 8 minutes, turning once, until browned. Remove from heat; top each chop with 1 butter disk. Set oven control to broil. Broil chops in skillet 3 to 4 inches from heat 2 to 3 minutes or until butter begins to bubble and turns golden brown. Place chops on serving plates. Spoon apples evenly over chops; drizzle with balsamic glaze and garnish with chopped fresh sage leaves.

SMOTHERED PORK CHOPS WITH APPLES AND CHEDDAR CHEESE

- Preheat the oven to 450°F. Spray a large foil-lined baking sheet with cooking spray.
- Separate the onion rings. Lay the onion rings and apples in a single layer on the prepared baking sheet. Spray lightly with cooking spray, and season with salt and pepper to taste. Roast the apples and onions until the apples are tender and beginning to brown, about 20 minutes.
- Turn the broiler on high. Broil the apples and onions until they are slightly charred, about 3 minutes.
- Put about 3/4 cup of the apple-onion mixture into a blender, and add the chicken broth. Puree until the mixture is smooth. (Set the remaining apples and onions aside.)
- Heat a large cast-iron skillet over high heat. Season the pork with salt and pepper to taste. When the pan is hot, spray it with cooking spray and add the pork. Sauté until the pork is golden brown and just cooked through, about 3 minutes per side. Transfer the pork to a serving platter, and tent it with foil to keep it warm.
- Reduce the heat under the skillet to low and add the pureed apple mixture. Whisk in the mustard. Add the remaining roasted apples and onions and the tarragon to the skillet. Remove the skillet from the heat, and season with salt and pepper to taste. Stir to evenly coat the apples and onions with the sauce.
- Spoon the apple mixture over the pork chops, sprinkle with the cheese, and serve.

Steps:
- Preheat oven to 400°F.
- Spread the apples in a lightly buttered gratin dish, large enough to hold the pork chops in a single layer.
- Place gratin dish in the oven and bake apples for 15 minutes.
- While apples are baking, saute the salted pork chops over medium heat until nicely colored on each side-7 to 8 minutes per side.
- Remove gratin dish from the oven and arrange the chops on top of the apples.
- Deglaze the saute pan with the white wine and reduce by half.
- Drizzle reduction over the chops.
- Mix cream (or sour cream/yogurt and milk) and mustard, adding mustard little by little until you are happy with the taste.
- Pour evenly over the chops and apples and grate pepper overall.
- Return to oven and bake an additional 15 minutes.
