CHICKEN CORDON BLEU BITES

I created this recipe to try to duplicate some appetizers I had last summer from Stew Leonard's famous dairy retail store in Connecticut. They are great as appetizers or as a fun food for kids. I love to make them with bread crumbs seasoned with Parmesan cheese. Enjoy!

9 ounces ground chicken
¼ cup cooked, diced ham
1 egg
½ cup bread crumbs
8 ounces Swiss cheese, cut into 1/2 inch cubes
canola oil for pan-frying

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine the chicken, ham, and egg in a large bowl until well blended. Gradually add bread crumbs until the mixture loses its stickiness and can be easily formed into balls.
  • Form the chicken mixture around the cheese cubes, forming 2 inch balls. Place on a plate.
  • Heat 1 1/2 inches of oil in a deep skillet to 350 degrees F (175 degrees C). Fry the balls until the outsides are golden brown, about 4 minutes. Drain on paper towels, and place in baking dish.
  • Bake in preheated oven until cooked through and cheese is soft, about 20 minutes. Cool briefly before serving.

2 boneless, skinless chicken breast halves, cut into 1/2- to 3/4-inch pieces (36 pieces)
1/2 cup Italian dressing
14 to 16 cremini mushrooms, cut into 1/4-inch slices
6 ounces sliced cooked deli ham, cut into 1-inch-wide strips
4 fresh basil leaves, finely sliced

Steps:

  • Place chicken pieces in shallow bowl. Pour dressing over chicken. Cover and refrigerate 30 minutes to marinate.
  • Heat oven to 425°. Line jelly roll pan, 15 1/2x10 1/2x1 inch, with aluminum foil. Spray foil with cooking spray. Place 1 chicken piece on each mushroom slice; wrap with ham strip. Place seam side down (mushroom on bottom) in pan. Drizzle with remaining marinade in bowl.
  • Bake 10 to 12 minutes or until chicken is no longer pink in center. Place basil on top of each bite. Spear bites with toothpicks if desired.

Number Of Ingredients 12

1 cup all-purpose flour
5 large eggs
1 cup buttermilk
1 1/2 teaspoons salt
1 1/2 teaspoons ground black pepper
20 saltine crackers
4 cups kettle cooked potato chips
1 can chopped pork and ham product (recommended: Spam)
Handful sliced pickles
2 pounds cream cheese
All-purpose flour for hands
Vegetable oil, for frying

Steps:

  • Batter: Combine all of the ingredients in a medium mixing bowl.
  • Breading: Pulse the crackers and potato chips in a food processor until finely ground. Transfer the mixture to a shallow bowl.
  • Filling: Cut the canned meat into chunks and put it into a food processor with the pickle slices. Pulse until the mixture becomes chunky. Do not overmix.
  • Roll pieces of the cream cheese into 1 1/2-ounce balls with floured hands to avoid sticking. Fatten each ball with the palm of your hand. Portion out the meat mixture to match the amount of cheese balls. Put a portion of the meat into the middle of a cheese ball and fold the cheese over the meat to enclose. Once you have a ball formed, dip it in the batter and then roll it in the cracker mixture. Repeat with the remaining cheese balls and meat.
  • Heat about 1-inch of vegetable oil in a frying pan over medium heat. Gently fry the bites, in batches, until golden brown. Remove them from the oil to a serving platter and enjoy!

2 boneless skinless chicken breasts, cut into 1-inch cubes
1/2 cup finely chopped sweet red pepper
1 teaspoon chili powder
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon hot pepper sauce
1 tablespoon lime juice
Shredded lettuce

Steps:

  • Combine chicken, red pepper, chili powder, garlic powder, salt, and hot pepper sauce in a medium or large ZIPLOC Brand Zip 'n Steam Bag. Seal bag and shake to mix ingredients. Place ingredients into an even, single layer. Place bag in a microwave., Cook on high for 4 minutes (Medium bag) or 3-1/2 minutes (Large bag) or until chicken juices run clear. If needed, continue microwaving for 30-second intervals until chicken is done., Let stand 1 minute before handling. Gently squeeze bag to distribute seasonings. Carefully open bag. Spoon 1 tablespoon lime juice over chicken. Season with additional salt and hot pepper sauce if desired. Serve over a bed of lettuce.

1/4 cup butter, melted

Steps:

  • Preheat oven to 400°. Line a baking sheet with foil; grease foil., In a shallow bowl, mix the first 7 ingredients. Cut chicken into 1-1/2-in. pieces. Dip in melted butter, then in cracker mixture, patting firmly to adhere. Place on prepared pan., Bake 20-25 minutes or until golden brown and chicken is no longer pink. If desired, serve with sauce.

2 chicken breasts
1 egg, beaten
2 cups panko breadcrumbs
salt
pepper
4 tablespoons soy sauce
4 tablespoons honey
4 cloves garlic, crushed
2 tablespoons hoisin sauce
1 tablespoon sriracha
1 tablespoon grated ginger
spring onion, for garnish
sesame seed, for garnish

Steps:

  • Preheat oven to 400°F (200°C).
  • Cut the chicken breasts into small bite-size pieces.
  • Dip chicken pieces into egg mixture then coat with panko.
  • Place the breaded chicken onto a baking sheet and season with salt and pepper.
  • Bake 20 minutes until golden brown and cooked through.
  • Mix together soy sauce, honey, garlic, hoisin sauce, sriracha and grated ginger in a saucepan and bring to boil, remove from heat.
  • Toss chicken bites in the sauce until thoroughly coated.
  • Serve immediately with chopped spring onion and sesame seeds.
  • Enjoy!

Delishious puffs!!! This recipe can be adjusted to other fillings, try chicken or beef with different cheese, I like to make 2 or 3 different batches.

1 1/4 cups finely diced cooked ham
1/2 cup shredded parmesan cheese (or Gouda)
1/4 cup sun-dried tomato packed in oil, drained and chopped
2 tablespoons sour cream
4 medium green onions, chopped
2 packages frozen puff pastry, thawed

Steps:

  • Heat oven to 400f degrees.
  • Mix all ingredients except pastry.
  • Cut pastry into circles with 2 1/2 to 3 inch round cookie cutter or pastry wheel.
  • Spoon about 1 rounded teaspoon ham mixture on centre of each circle; brush edges with water.
  • Fold each circle over filling, pressing edges to seal.
  • Place in ungreased jelly roll pan, 15 1/2x10 1/2 inch.
  • Bake 18 to 22 minutes or until golden brown.
  • Serve warm.
  • These puffs can be refrigerated for up 24 hours and reheated in a 400f degree oven for 6 to 8 minutes or until heated through.

1 lb chicken tender
1 ball mozzarella cheese
2 cups panko breadcrumbs
1 tablespoon garlic powder
1 tablespoon dried basil
1 tablespoon dried parsley
1 tablespoon salt
½ cup flour
2 eggs
oil, to fry
1 cup marinara sauce

Steps:

  • Cut the chicken tenders into 1.5-inch (4 cm) pieces.
  • Take a knife and carefully cut a hole into the chicken tenders. Make sure to not cut all the way to the other side.
  • Stuff the holes with mozzarella cheese.
  • Add garlic powder, dried basil, dried parsley, and salt to the panko bread crumbs.
  • Batter the chicken in flour, egg, then panko bread crumb mixture.
  • Add around 1-inch (2 cm) of oil to a pan and heat until around 350˚F (175˚C).
  • Fry the chicken on both sides until fully cooked and golden brown.
  • Serve with marinara sauce and garnish with more parmesan cheese.
