1 orange, quartered (unpeeled)
sugar

Steps:

  • Shred orange in a food processor.
  • Measure orange in a measuring cup and then transfer to a microwave safe bowl.
  • Measure enough sugar to equal shredded orange and add sugar to bowl.
  • Microwave on medium until thickened (5-7 minutes), stirring occasionally. DO NOT OVER COOK.
  • Refrigerate until ready to use.

1 large navel orange, unpeeled
1 cup (250 mL) sugar

Steps:

  • Cut orange into chunks. In a food processor, process orange chunks, using an on/off motion, until coarsely chopped. There should be about 1 1/2 cups (375 mL) chopped orange. Place chopped orange in a microwave-safe bowl. Stir in sugar. Microwave on high for 6 - 8 minutes, stirring every 2 minutes, until mixture is thick and translucent. Serve warm or at room temperature. May be refrigerated for up to 2 weeks.

1 large orange (8 - 10 oz.)
sugar
1/2 teaspoon almond extract (optional)

Steps:

  • Cut orange into large pieces and whirl in a food processor until evenly chopped quite finely.
  • Measure.
  • Add equal volume of sugar & atir well.
  • Microwave at 100% (in 900-1000 watt oven) for 6 - 8 minutes, stirring every 2 minutes until it coats a spoon.
  • Stir in extract, if desired.
  • Let cool put in jar and refrigerate.

  • Cut fruit into chunks. Place in 2 litre microwave safe jug or bowl. Add water. Microwave on high for 10 minutes.Add sugar and stir to dissolve.Microwave on high for 10 minutes then on medium high for a further 10 minutes (watch in case it boils over).By this time it should have reached gel point, where a teaspoon of marmalade on a cold saucer should set.Allow the jam to cool a little before pouring into sterilised jars. Cover and label when cool.Tip: marmalade sets best if fruit is not too ripe.

This recipe was printed in the Jerusalem Post last week, and it's from Lynette Levius of Netanya, Israel. I haven't tried it yet, but plan to make a batch this weekend. February 2010: Since posting this recipe I've made it several times each winter (winter is citrus seaon here). It's a wonderful recipe, totally fail-proof as the title says. It's great on toast and makes a wonderful gift. I especially love a 50/50 orange/clementine mix, a rich citrus flavor with an intense orange color.

6 grapefruits (or any combination) or 6 lemons (or any combination)
1 kg sugar

Steps:

  • Take the 6 citrus fruits and wash well, removing any blemishes.
  • Cut into quarters, and place in a food processor.
  • Chop until finely ground, skin and all.
  • For an optional extra add some crystallized ginger.
  • Boil with the 1 kilo of sugar, stirring occasionally with a wooden spoon, for 20 minutes.
  • It splatters, so be careful.
  • This quantity fills about 5 x 340 gram jars.
  • Do not double the ingredients, rather make two batches.
  • It never goes dark and lasts for up to 6 months in the refrigerator without the need to sterilize the bottles.
