- Preheat oven to 450 degrees. Place sliced onions and chicken pieces in a 9-by-13-inch baking dish or roasting pan. Drizzle with vegetable oil; season with coarse salt and ground pepper. Toss to coat.
- Arrange chicken, skin sides up, on top of onions; sprinkle with paprika.
- Bake, tossing onions and basting chicken occasionally, until juices run clear when chicken is pierced with the tip of a sharp paring knife, 35 to 40 minutes. Serve hot.
FRENCH ONION CHICKEN RECIPE
French Onion Chicken is made in one skillet. This is probably BY FAR THE best chicken recipe I've made in quite some time

Steps:
- Add butter to pan. Melt.
- Add sliced onions and 3 tablespoons of beef broth.
- Cook the onions on low heat (between 1 and 5) for 20 to 30 minutes or until they are caramelized.
- Remove the onions from the pan and transfer them to a dish.
- In order for the chicken to cook evenly all at once, the thickness of each chicken breast should all be the same size. Pound them out evenly with a rolling pin or meat Mallet.
- Season chicken with salt, pepper, and olive oil. Add the chicken to the skillet and cook 5 to 7 minutes on each side. When chicken is done it should register at 165 degrees or no longer be pink in the middle. If the chicken is not done cooking yet, it will continue cooking when you place it back in with the sauce.
- Remove the chicken from the skillet and set them aside.
- Add the French onions to the skillet again with 2 tablespoons of cornstarch and 1 cup of beef broth. Whisk until everything is combined. The sauce should start to thicken after 2 minutes.
- Place the chicken back in the skillet and let it continue cooking in the sauce. 3 to 4 minutes.
- Lay one slice of provolone cheese on top of each chicken breast and cover the pot with a lid. Melt the cheese with the lid on top.
- Garnish the chicken with more cracked black pepper or chives.
- Serving Size: 1 chicken breast/1 slice of cheese

- Preheat oven to 475 degrees. Rinse chicken pieces; pat dry. Brush chicken with butter, and sprinkle with salt and pepper.
- Place chicken in a small roasting pan. Arrange onions, garlic, and thyme sprigs over and under chicken. Roast; after 20 minutes, baste with pan drippings. Continue roasting until chicken is golden and cooked through, 15 to 20 minutes more. Transfer the chicken to a platter, and set aside.
- Pour pan drippings through a sieve into a small bowl; discard solids. Arrange onions and all but three garlic cloves around chicken on platter. Whisk remaining garlic cloves with pan juices. Strain juices again; discard solids. Pour sauce over chicken; serve garnished with thyme sprigs.
EASY ONION CRUSTED CHICKEN BREASTS
This is a tasty recipe that we really enjoy. I got this recipe from a small deli that served the most delicious hot lunches. The deli changed ownership and shortly there after closed - luckily I had asked for their recipe and have been making it ever since.

- Preheat oven to 350 degrees.
- In a bowl, combine butter (melted), Worcestershire sauce, mustard and pepper. Mix all ingredients together until combined.
- Lightly crush the entire can of French Fried Onions and put into a shallow pan.
- Coat all the Chicken Breasts with butter mixture.
- Place chicken breasts one at a time in crushed Onions and press down to coat/stick the onions to the chicken, turn over and press again, pat onions against all sides of the Chicken breasts.
- Place chicken in a lightly greased 13-by-9-inch baking dish - if any crushed Onions remain, mound them equally on top of the chicken breasts.
- Bake for 30 to 35 minutes or until chicken is cooked through.
