Steps:
- Slice potatoes into 3/4 inch pieces. Slice onion thinly and split into rings.
- Combine potatoes and onions and microwave on high for 10 minutes, stirring once during cooking.
- Remove from microwave, stir through sour cream , ham, and 1/4 cup cheese.
- Place in greased baking dish and sprinkle remaining cheese over the top.
- Bake at 350°F for 45 minutes.
- This dish can be prepared ahead and refrigerated until ready for the oven. Quantities can be adjusted with potatoes and cheese as desired.

This is my mother in laws recipe. We love it, it is so simple to do and once it is in the oven you just forget about it for an hour and move on to something else. I serve mine with a little sour cream but it tastes great just on its own.

- Set your oven to 180°.
- Put a layer of the sliced potatoes in a shallow rectangular oven-proof dish.
- Sprinkle brown onion soup onto the potatoes.
- Sprinkle chopped onion onto potatoes.
- Salt and pepper to taste - use the salt sparingly as the soup is quite salty.
- Follow with another layer of potatoes.
- Repeat layers until everything is finished.
- Pour the cream over the food.
- Top with grated cheese to taste.
- Pop into the oven for about an hour.

EASY PEASY CHICKEN BAKE
This was something I discovered in my never-ending quest to find simple, one-pan recipes that serve a nice balance of protein and savory vegetables. I tend to keep cooked grains around that I just reheat and serve it over. Barley is my favorite, but it also goes well with quinoa, rice, couscous, etc. The sauce is delectable. I like to add in a splash of red wine vinegar to the marinade, as I feel it really brings the flavors to life. Enjoy!

- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
- Mix together the garlic, shallots, white wine, chicken broth, red wine vinegar, mustard seed, salt, black pepper, and fresh thyme in a bowl, and set aside.
- Place the chicken thighs into the prepared baking dish, and scatter the potatoes, mushrooms, and peas around the dish. Pour the liquid mixture over the chicken and vegetables, lifting the thighs slightly to allow the flavors to spread through the whole dish.

- Preheat the oven to 200c/fan 180c, Chop the potatoes into small squares and boil for about 10 mins. Drain and then leave.
- While the potatoes are boiling chop the bacon, onion, mushrooms and Garlic. Start to fry the onions and when they have gone a little soft add the rest.
- Once everything is cooked in the frying pan, add the soft cheese and stir until everything is coated. Pour the mixture into the potatoes and stir so it covers everything.
- Pour into an oven proof dish and sprinkle some paprika and a third of the cheese, then stir again. Once everything is coated cover with foil and bake for 25 mins.
- After the 25 mins remove the foil and put the rest of the cheese on top of the bake and put back in the oven for about 20 mins until the cheese has gone a nice golden brown.

- Heat the oil in a large pot over medium heat until shimmering. Add the onion and saute for about 3 minutes, until translucent.
- Add the garlic and saute for about 2 minutes, until fragrant.
- Add the curry powder, paprika, cayenne, cumin, allspice, ginger, salt, and pepper. Stir and cook for about 2 minutes until the spices are fragrant.
- Add the potatoes and mix well until well-coated in spices.
