1 cup grated white Cheddar cheese
1 cup grated Monterey Jack cheese
1 cup grated pepper jack cheese
6 tablespoons salted butter
Six 8-inch flour tortillas
Pinch of kosher salt
Pinch of freshly ground black pepper
2 Roma tomatoes, diced
One 4-ounce can diced green chiles, drained
9 fresh cilantro sprigs, for garnish

Steps:

  • Toss together the Cheddar, Monterey Jack and pepper jack in a bowl; set aside.
  • Heat 2 tablespoons of the butter in large skillet over medium heat. Place a single tortilla in the skillet. Sprinkle a little less than a third of the cheese blend over the tortilla. Sprinkle with salt and pepper. Add about a third of the diced tomato and a third of the chiles. Sprinkle a touch more cheese over the whole thing and gently top and press with a second tortilla. Cook until golden on the bottom, about 3 minutes.
  • Carefully flip the quesadilla to the other side. Continue cooking until the second side is golden, 3 to 4 minutes more. Repeat with the remaining ingredients. Slice each quesadilla into wedges and garnish with cilantro sprigs.

These quesadillas are quick to assemble and delicious! They are filled with pepperjack cheese and tomatoes. I made these to serve along side my Easy Tex-Mex Tomato Soup, but they could also be served as an appetizer or a small lunch or snack.

2 tablespoons olive oil
2 flour tortillas
8 ounces monterey jack pepper cheese, sliced thin
1 tomatoes, sliced thin

Steps:

  • To assemble quesadilla, place one tortilla on a dinner plate. Arrange sliced cheese atop tortilla, leaving at least 1/2 inch space from the edge of the tortilla. Arrange sliced tomatoes atop cheese layer followed by another layer of cheese (remaining). Top with remaining tortilla.
  • While assembling the quesadillas, preheat an electric griddle to 350 F (or grill to medium-high heat). I use a griddle (rather than a grill) to cook quesadillas, as it is easier to turn them without losing their insides.
  • Brush 1 tbs. olive oil onto the griddle, covering the surface. Brush the remaining 1 tbs. olive oil onto the top exposed tortilla. Gently slide the quesadilla from the dinner plate onto the griddle (olive oil-less side down).
  • Cook for 5-7 minutes or until bottom tortilla begins to brown. With a large spatula, gently but swiftly turn quesadilla to brown other side. Cook for 5-7 minutes or until bottom tortilla begins to brown. Remove to a cutting board and allow to cool for 5 minutes.
  • Slice into quarters and serve immediately with garnish of your preference. I like to use sour cream, salsa or guacamole. For this particular recipe, I served it with my Easy Tex-Mex Tomato Soup.

1 tablespoons peanut oil
1/2 medium yellow onion, halved lengthwise and thinly sliced
3 medium cloves garlic, thinly sliced
2 medium jalapenos, halved lengthwise, seeded, and thinly sliced crosswise
Salt and freshly ground black pepper
4 medium poblano peppers, quartered lengthwise, seeded, and sliced crosswise into 1/2-inch strips
1 1/4 cups low-sodium chicken broth
12 (6-inch) flour tortillas
3 cups shredded jack cheese

Steps:

  • Heat oven to 500 degrees F and arrange 1 rack in top and a second rack in middle.
  • Heat oil in a large frying pan over medium-high heat. When it shimmers, add onions, garlic, and jalapenos, season well with salt and freshly ground black pepper, and cook until softened, about 3 minutes. Add poblanos and stir to coat. Add broth and cook until the liquid reduces enough to just coat the vegetables, about 10 minutes. Remove from heat.
  • When pepper mixture is cool enough to handle, top 1 tortilla with 1/2 cup cheese and 1/6 of the pepper mixture, close with a second tortilla. Repeat to make 6 quesadillas.
  • Arrange quesadillas on 2 baking sheets and place 1 sheet on top rack and another on middle rack. Bake until cheese is melted, about 5 minutes. Switch baking sheets and continue to cook until tortillas are golden-brown and crisp, about 5 more minutes.

1 1/2 lbs beef, cut into bite sized strips (your butcher may already have them pre-cut for you)
2 tablespoons creole seasoning (I recommend Zatarains)
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon black pepper
8 ounces of shredded monterey jack pepper cheese
4 tablespoons of crumbled feta cheese
4 flour tortillas
nonstick cooking spray
sour cream

Steps:

  • Add the beef, creole seasoning, onion powder, garlic powder and black pepper to a pan and brown the meat until fully cooked.
  • Lay out your four tortillas and evenly divide the pepper jack cheese among them. Keep the ingredients on one half of the tortilla so that you can easily fold it later.
  • Sprinkle one tablespoon of feta on each tortilla, on top of the pepper jack.
  • Evenly divide the beef among the four tortillas, on top of the cheeses.
  • Spray a frying pan with non-stick cooking spray. Fold each tortilla in half and fry on medium-high heat, flipping until both sides are golden brown (about 2-3 minutes on each side).
  • Cut in half and serve with sour cream.

2 small onions, sliced
2 green bell peppers, sliced
1 cup barbeque sauce (such as Bull's-Eye® Texas-Style Bold Barbeque Sauce)
8 (10 inch) flour tortillas
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat a skillet over medium heat; cook and stir beef until browned, 5 to 7 minutes. Add onions and green bell peppers to beef; cook and stir until softened, 5 to 10 minutes. Pour barbeque sauce over beef mixture and simmer until sauce is slightly reduced, about 10 minutes.

6 ounces Monterey Jack cheese, grated (about 1 1/2 cups)
Four 6-inch flour tortillas
1 red or yellow bell pepper, seeds and stem removed, thinly sliced
1 medium jalapeno pepper, seeds and stem removed, thinly sliced
3 ounces soft goat cheese, crumbled

Steps:

  • Place a quarter of the Monterey Jack cheese on half of a flour tortilla. Top with 5 to 6 strips of red and jalapeno peppers. Place a quarter of the crumbled goat cheese on top of peppers, and fold tortilla in half. Press lightly to seal tortilla closed. Repeat process with remaining 3 tortillas, and set aside.
  • Place a folded tortilla in a medium saute pan over medium heat, or on a grill over indirect heat, and cook 1 to 2 minutes on each side, until cheese is melted. Repeat with remaining tortillas.
