2 tablespoons butter, melted
3 tablespoons sugar
1 egg
1 cup all-purpose flour
1 teaspoon baking powder
2 cans (8 ounces each) unsweetened crushed pineapple, drained
TOPPING:
1 tablespoon butter, melted
1 cup sugar
2 eggs
2 cups sweetened shredded coconut

Steps:

  • In a large bowl, beat butter and sugar. Beat in egg. Combine flour and baking powder; stir into egg mixture. Press into a 9-in. square baking dish coated with cooking spray. Spread pineapple over crust; set aside., For topping, in a small bowl, beat butter and sugar until blended. Beat in eggs. Stir in coconut. Spread over pineapple. Bake at 325° for 35-40 minutes or until golden brown. Cool on a wire rack before cutting.

1 1/4 cup crushed pineapple (well-drained)
powdered sugar (for garnish)

Steps:

  • In a large bowl, mix together butter, sugar and eggs.
  • Beat in flour, baking soda and salt.
  • Stir in pineapple.
  • Spread into a greased 9x9 square pan.
  • Bake at 350 degrees F for 28-33 minutes until done. Cool in pan for 10 minutes.
  • Sprinkle with powdered sugar and cut into squares. Serve.

1 cup white sugar
2 1/2 tablespoons cornstarch
1 tablespoon butter
1 cup water
3/4 cup shortening
1 cup packed brown sugar
1 3/4 cups all-purpose flour

1 1/2 cups rolled oats

Steps:

  • Pineapple Filling:
  • Mix 1 cup crushed pineapple and juice (8 1/4-ounce can), 1 cup sugar, 2 1/2 Tablespoons cornstarch, 1 Tablespoon butter, and 1 cup water in saucepan.
  • Cook until thickened, cool.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Cream together shortening and sugar thoroughly.
  • Stir in flour, baking soda and salt.
  • Mix in rolled oats.
  • Press and flatten half of the mixture over bottom of a 13 x 9 1/2 x 2 inch greased pan.
  • Spread with cooled filling.
  • Top with remaining crumb mixture, patting lightly.
  • Bake 25 to 30 minutes, or until lightly browned.

1 box any brand, white or yellow cake mix
3 large eggs
1/3 c canola oil
1/2 stick real butter
1-20 can(s) crushed pineapple (drained of all juice)
1-14oz. can(s) sweetened condensed milk

Steps:

  • 1. Spray 9x13 inch cake pan with nonstick spray, preheat oven to 350 degrees
  • 2. 1. Mix the dry cake mix, 1/3 cup of canola oil and 3 eggs until it looks like stiff cookie dough.
  • 3. 2. In a seperate bowl, add sweetened condensed milk and 1/2 stick of butter. Microwave on normal for 1 minute. Stir until smooth.
  • 4. 3. Spread entire contents of cake mix batter into bottom of cake pan, dump the drained pineapple and smooth out to edges and then pour sweetened condensed milk/butter mixture over and spread to the edges. Bake in 350 degree oven for 25 minutes. Middle will seem a little jiggly. Remove, cool and cut into squares. Enjoy!

  • Roll 2/3 the dough out onto a lightly floured surface into an 11x15-inch rectangle. Place dough into the bottom of a 9x13-inch baking pan, making sure it comes at least halfway up the sides.
  • Combine pineapple and sugar in a small saucepan and bring to a boil over medium heat, about 5 minutes. Meanwhile, pour reserved pineapple juice into a bowl and add cornstarch; stir until dissolved. Add to the saucepan and stir until thickened, about 5 minutes more. Remove from heat and let filling cool in the refrigerator, about 15 minutes.
  • Scrape filling onto the bottom dough in the baking pan and smooth out.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Roll remaining 1/3 dough out onto a lightly floured surface into a 9x13-inch rectangle. Roll the dough onto the rolling pin and unroll on top of the pineapple filling, making sure edges of the dough reach the edges of the pan.
  • Combine flour and sugar in a small bowl. Add vanilla extract and cut in butter until coarse crumbs form. Sprinkle streusel topping over dough.
  • Bake in the preheated oven for 45 minutes. Remove from oven and let cool on a rack. Cut into 24 squares.

Steps:

  • Preheat oven to 350F and line an 8×8-inch pan with aluminum foil, spray with cooking spray; set aside.
  • To a large bowl, add the butter, 1 cup flour, 1/2 cup sugar, and optional salt. Using two forks or a pastry cutter, cut butter into dry ingredients until a sandy mixture with peas-sized buttery bits forms.
  • Reserve 3/4 cup of this mixture; set aside.
