PINEAPPLE SQUARES
My grandmother always kept this cake in the freezer for unexpected company. A nice change of dessert from the usual bar or square recipe. Garnish with icing sugar sprinkled over the top if desired.

Steps:
- Combine flour, sugar, baking powder, and salt in a bowl. Cut in butter using a pastry cutter or your hands until coarse crumbs form.
- Whisk milk, egg, and vanilla extract together in a small bowl. Add to flour mixture and knead until just combined, adding a little more flour if too wet or a little more milk if too dry. Divide the dough into thirds; 2/3 will be for the bottom, save 1/3 for the top.
- Roll 2/3 the dough out onto a lightly floured surface into an 11x15-inch rectangle. Place dough into the bottom of a 9x13-inch baking pan, making sure it comes at least halfway up the sides.
- Combine pineapple and sugar in a small saucepan and bring to a boil over medium heat, about 5 minutes. Meanwhile, pour reserved pineapple juice into a bowl and add cornstarch; stir until dissolved. Add to the saucepan and stir until thickened, about 5 minutes more. Remove from heat and let filling cool in the refrigerator, about 15 minutes.
- Scrape filling onto the bottom dough in the baking pan and smooth out.
- Preheat the oven to 350 degrees F (175 degrees C).
- Roll remaining 1/3 dough out onto a lightly floured surface into a 9x13-inch rectangle. Roll the dough onto the rolling pin and unroll on top of the pineapple filling, making sure edges of the dough reach the edges of the pan.
- Combine flour and sugar in a small bowl. Add vanilla extract and cut in butter until coarse crumbs form. Sprinkle streusel topping over dough.
- Bake in the preheated oven for 45 minutes. Remove from oven and let cool on a rack. Cut into 24 squares.

Steps:
- Preheat oven to 350F and line an 8×8-inch pan with aluminum foil, spray with cooking spray; set aside.
- To a large bowl, add the butter, 1 cup flour, 1/2 cup sugar, and optional salt. Using two forks or a pastry cutter, cut butter into dry ingredients until a sandy mixture with peas-sized buttery bits forms.
- Reserve 3/4 cup of this mixture; set aside.
- Transfer remaining mixture into prepared pan and using your fingertips or the back of a spatula, lightly press crumbs evenly into pan to form a crust.
- Bake for 10 minutes. While crust bakes, make the filling.
- In a large bowl (same one used to make the crust mixture is fine) add the egg, 1/2 cup sugar, sour cream, vanilla extract, 1/4 cup flour, and whisk until smooth; set aside.
- Remove crust from oven and top evenly with pineapple chunks. About 90% of the surface area will be covered with pineapple; chunks will be very close to each other but not quite touching.
- Carefully and evenly pour the sour cream mixture over the pineapple, making sure to get it into the corners.
- Evenly sprinkle the reserved crust mixture over the top to create the crumble topping.
- Bake for about 35 minutes, or until edges and top are set.
- Place pan on top of a wire rack and allow bars to cool for at least 1 hour before slicing and serving.

- Watergate Salad. For something that takes 10 minutes or less to pull together, Watergate salad certainly is delicious. All you’ll have to do is combine all the ingredients – pistachio pudding mix, crushed pineapples, chopped nuts, whipped topping, and mini marshmallows – and mix thoroughly-
- Hawaiian Pizza. Although it takes a little time for the dough to rise, homemade pizza is remarkably easy to make. You can, of course, use pre-made pizza crust if you prefer, but they don’t have the same robust flavor as their homemade counterparts.
- Do Nothing Cake. Contrary to the name, do nothing cake actually requires you to do a little work, but that amount of work is so tiny that it’s almost nonexistent.
- Pineapple Cobbler. This five-ingredient cobbler requires only 10 minutes of prep time and minimal hands-on effort to make. The crust is warm, flaky, and perfectly crispy, and the pineapples are sweet, tender, and melt-in-your-mouth good.
- Pineapple Angel Food Cake. If you like light, refreshing cake with a spongy texture and sweet, cool icing, you’ll love this one. Use whatever angel food cake mix you like best, and add a can of crushed pineapples to the batter.
- Easy Pineapple Bars. These soft, dense bars are like lemon bars but sweeter, and the coconut drizzle is so amazing, you’ll never want to top anything with simple powdered sugar again.
- Ambrosia Salad. In ancient Greece, ambrosia was the food of the gods; its literal translation is immortality. Ambrosia salad won’t grant you eternal life in the real world, but it will delight your tongue and taste buds, especially if you freeze it and serve it like ice cream.
- Pineapple Coleslaw. Even if you’re not a big coleslaw lover, you may want to give this recipe a try. The pineapple adds a tangy sweetness to the slaw that completely alters its taste.
- Punch Bowl Cake. Punch bowl cake is so pretty, and it tastes so good, which is why I make it a lot more often than is strictly necessary. There’s just so much good stuff in that bowl!
- Hawaiian Chicken. Hawaiian chicken is tender and juicy – succulent, really – and has a fantastically complex flavor. There’s the smokiness from the soy sauce, garlic, and actual smoke from the grill.
