PLUM TART

Plum Tart image

We have a plum tree in our yard, and some years it's so full of fruit that its branches have to be propped up. I always make one or two tarts to freeze for later.

ORIGINAL PLUM TORTE

Original Plum Torte image

The Times published Marian Burros's recipe for Plum Torte every September from 1983 until 1989, when the editors determined that enough was enough. The recipe was to be printed for the last time that year. "To counter anticipated protests," Ms. Burros wrote a few years later, "the recipe was printed in larger type than usual with a broken-line border around it to encourage clipping." It didn't help. The paper was flooded with angry letters. "The appearance of the recipe, like the torte itself, is bittersweet," wrote a reader in Tarrytown, N.Y. "Summer is leaving, fall is coming. That's what your annual recipe is all about. Don't be grumpy about it." We are not! And we pledge that every year, as summer gives way to fall, we will make sure that the recipe is easily available to one and all. The original 1983 recipe called for 1 cup sugar; the 1989 version reduced that to 3/4 cup. We give both options below. Here are five ways to adapt the torte.

Time 1h15m

Yield 8 servings

Number Of Ingredients 8

3/4 to 1 cup sugar
1/2 cup unsalted butter, softened
1 cup unbleached flour, sifted
1 teaspoon baking powder
Pinch of salt (optional)
2 eggs
24 halves pitted purple plums
Sugar, lemon juice and cinnamon, for topping

Steps:

  • Heat oven to 350 degrees.
  • Cream the sugar and butter in a bowl. Add the flour, baking powder, salt and eggs and beat well.
  • Spoon the batter into a springform pan of 8, 9 or 10 inches. Place the plum halves skin side up on top of the batter. Sprinkle lightly with sugar and lemon juice, depending on the sweetness of the fruit. Sprinkle with about 1 teaspoon of cinnamon, depending on how much you like cinnamon.
  • Bake 1 hour, approximately. Remove and cool; refrigerate or freeze if desired. Or cool to lukewarm and serve plain or with whipped cream. (To serve a torte that was frozen, defrost and reheat it briefly at 300 degrees.)

PLUM TART

Plum Tart image

I found this recipe on another site and really like the contrast of the sweet dough and tart plums. The dough bakes up around the plums allowing them to become like a fruit filling.

Provided by Ms B.

Categories     Dessert

Time 1h15m

Yield 10 serving(s)

Number Of Ingredients 10

1 cup sugar
1/2 cup butter, softened
2 eggs
1 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
1/8 teaspoon salt
12 plums, halved and pitted
2 tablespoons sugar (more or less)
1 tablespoon cinnamon

Steps:

  • Grease and flour a 9-inch springform pan.
  • Preheat oven to 350C.
  • Cream 1 cup sugar and butter together; beat in eggs and vanilla.
  • Sift dry ingredients and stir into batter.
  • Spoon into prepared pan.
  • Place plum halves, skin side up, on batter.
  • Sprinkle with 2 tablespoons sugar and cinnamon, adjusting to tartness of the fruit.
  • Bake for 1 hour.
  • Best served warm with vanilla ice cream.
  • This is also best served the day of baking as the moisture of the fruit can seep into dough and affect the texture of the tart; it still tastes great, though!

EASY FREE-FORM PLUM TART

Easy Free-Form Plum Tart image

Thank you Wolfgang Puck - Though my recipe describes the tart as more or less circular, the shape is not even important: Everything will look beautiful and taste delicious whether your tart is oval, square, rectangular, or resembling an amoebae. Cut it into wedges, top with vanilla ice cream if you like, and dessert is ready. Now that's what I call plum perfect!

Provided by Ceezie

Categories     Dessert

Time 1h30m

Yield 8 serving(s)

Number Of Ingredients 12

2 1/3 cups cake flour or 2 1/3 cups pastry flour
1/3 cup granulated sugar
1/2 lb unsalted butter, chilled, cut into small pieces
2 egg yolks
1 -2 tablespoon heavy cream
2 tablespoons unsalted butter
8 large ripe plums, halved, pitted, and cut into slices 1/4 inch thick
1/4 cup granulated sugar
1 tablespoon lemon juice
1 tablespoon plum brandy (optional)
1 egg
powdered sugar

Steps:

  • First, make the Sugar Dough: In a food processor fitted with the stainless-steel blade, combine the flour and sugar. Add the butter and process until the texture resembles fine meal.
  • In a small bowl, whisk together the egg yolks and 1 Tbs. of the cream. Scrape into the processor and process until a ball begins to form, drizzling in the additional Tbs. of cream, if necessary, to help the dough come together.
  • Remove the dough from the machine and, on a lightly floured surface, press down into a circle. Wrap in plastic wrap and chill in the refrigerator for at least 1 hour. Before assembling the tart, preheat the oven to 350 degrees.
  • Remove the Sugar Dough from the refrigerator and unwrap it. On a lightly floured surface, use a rolling pin to roll out the dough to a rough circle 14 inches in diameter. Lift up the dough and transfer it to a nonstick baking sheet. Put the baking sheet in the refrigerator while you prepare the plums.
  • In a large sauté pan over medium heat, melt the butter. Add the plums and sauté just until they begin to soften slightly, about 3 minutes. Gently stir in the sugar and lemon juice.
  • Remove from the heat and, if you like, drizzle in the plum brandy. Let the mixture cool to room temperature. Remove the dough from the refrigerator. Spoon the cooled plums into the center of the dough, spreading them evenly and leaving a 2-inch border all around the edge. Fold the edge up over the plums, leaving the fruit in the center of the tart exposed.
  • In a small bowl, lightly beat the egg. Brush the exposed rim of dough with the egg. Bake until the crust is golden brown, about 30 minutes. Remove from the oven and sprinkle with powdered sugar. Serve warm or at room temperature, cut into wedges.

3/4 cup sugar, plus more for sprinkling
Juice of 1/2 lemon
2 pounds large plums, halved and pitted
6 tablespoons unsalted butter, diced

Vanilla ice cream, for serving

Steps:

Cook over low heat, tossing, until the plums are soft and the sauce thickens, about 20 minutes. Add the remaining 3 tablespoons butter and swirl to combine.

SUMMER PLUM TART

Summer Plum Tart image

Any firm, ripe plum will work well in this rustic, elongated, rectangular tart. If you prefer, you can make the same recipe in a nine-inch-round tart ring.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Pie & Tarts Recipes

Yield Makes one 4 1/2-by-14-inch tart

Number Of Ingredients 8

1 tablespoon all-purpose flour, plus more for dusting
Pate Sucree for Plum Tart
3 tablespoons almond paste
1 pound plums (4 or 5), pitted and sliced into 1/4-inch-thick wedges
2 teaspoons sugar
1 large egg yolk
1 tablespoon heavy cream
1/4 cup plum or red-currant jam

Steps:

  • Heat oven to 375 degrees. Line a baking sheet with parchment paper, and set a 4 1/2-by-14-inch bottomless tart form on top. Set the baking sheet aside.
  • On a clean work surface, roll out pate sucree to a 7 1/2-by-17-inch rectangle, about 1/8 inch thick. Roll the rectangle onto pin; unroll over form; let extra dough hang over edge. Using knuckles, fit dough into form.
  • Crumble almond paste evenly over dough, and sprinkle flour evenly over almond paste. Arrange sliced plums in a fish-scale pattern on top of the dough; sprinkle plums with sugar.
  • Fold overhanging dough over plums; tear, creating a 1-inch free-form edge. Transfer the baking sheet to the refrigerator; chill dough 10 to 15 minutes.
  • In a small bowl, combine egg yolk and cream; beat lightly. Brush chilled pastry with egg wash.
  • Bake until crust is golden brown and fruit bubbles, about 35 minutes. Transfer tart to a wire rack.
  • In a small saucepan, combine jam and 2 tablespoons water. Set pan over medium heat, and cook until warm. Remove pan from heat, and pass glaze through a sieve; discard any solids. Brush warm glaze over plums in tart. Let glaze cool slightly, remove tart form, and serve.

PLUM TART

Plum Tart image

When it comes to baking with peak-season plums, simple really is the best route. A golden brown puff-pastry crust-store bought or homemade-makes the perfect canvas for the caramelized plums that get fanned over top.

Provided by Sarah Carey

Categories     Food & Cooking     Dessert & Treats Recipes     Pie & Tarts Recipes

Time 2h55m

Yield Serves 9 to 12

Number Of Ingredients 7

Unbleached all-purpose flour, for dusting
1/2 recipe Rough Puff Pastry or 14 to 16 ounces store-bought frozen puff pastry, thawed
1 pound plums (about 5), pitted and cut into 1/2-inch wedges (3 cups)
1/2 cup sugar
1 tablespoon cornstarch
1 tablespoon fresh lemon juice
1/4 teaspoon kosher salt (we use Diamond Crystal)

Steps:

  • Preheat oven to 400°F. Line a 9 1/2-by-13 1/2-inch rimmed baking sheet (quarter sheet pan) with parchment, leaving a 2-inch over-hang on long sides.
  • On a lightly floured surface, roll out dough to an approximately 14 1/2-by-11 1/2-inch rectangle, about 1/4 inch thick. Trim edges so you're left with a 14-by-11-inch rectangle. Fit into sheet (dough should come all the way up sides without an overhang). Freeze 15 minutes.
  • Stir together fruit, sugar, cornstarch, lemon juice, and salt; arrange mixture in tart shell, in a single, slightly overlapping layer (if using a variety of colors of fruit, arrange by color if desired).
  • Bake 15 minutes, then reduce temperature to 375° and continue baking, rotating sheet twice, until fruit is bubbling and pastry is puffed and cooked through, 1 hour to 1 hour, 15 minutes (if pastry is browning too quickly, tent with foil; if middle puffs up during baking, remove sheet from oven, use scissors to snip a little hole in puffed-up spot, and return to oven).
  • Let cool completely in sheet on a wire rack. Use parchment overhangs to remove before cutting into pieces to serve. Tart can be stored at room temperature, covered loosely with foil, up to 1 day.

MOLLY'S PLUM TART

Molly's Plum Tart image

The free-form crust of this large, rectangular tart is easy to create, but be sure to leave enough of a border (1 to 1 1/2 inches) to fold the edges up over the fruit filling. To serve, cut into squares.

Yield Makes 10 servings

Number Of Ingredients 13

2 cups all-purpose flour
1/2 cup cold unsalted butter, cut into small pieces
1 tablespoon sugar
1/2 teaspoon salt
1 large egg yolk
1/3 cup cold water
1/2 cup whole unblanched almonds
1/4 cup plus 2 tablespoons sugar
1/4 cup all-purpose flour
11/2 pounds small Italian plums, halved and pitted
4 tablespoons unsalted butter, cut into small pieces
1/2 cup red currant jelly
1 tablespoon Grand Marnier

Steps:

  • 1. Prepare the pastry: Combine the flour, butter, sugar, and salt in the bowl of a food processor. Process the mixture until it resembles a coarse meal. Add the egg yolk and cold water; process until the dough just comes together in the side of the bowl. Wrap the dough in plastic wrap and refrigerate for 1 hour to chill.
  • 2. Preheat the oven to 400°F. Combine the almonds, 1/4 cup of the sugar, and the flour in the food processor; process until it resembles powder. Reserve.
  • 3. On a lightly floured surface, roll the dough out 1/8-inch thick into a large rectangle; transfer to a 12x15-inch baking sheet. Spread the reserved almond mixture over the bottom of the dough, leaving a 1- to 1 1/2-inch border.
  • 4. Arrange the plums, cut-side down, over the almond mixture. Fold the dough up over the plums, pressing and pinching it together to make a nice edge. Sprinkle the remaining 2 tablespoons of sugar over the plums, then dot with butter.
  • 5. Bake for 1 hour, or until the filling is bubbly and the crust is golden. Meanwhile, whisk together the red currant jelly and Grand Marnier. Brush the mixture over the entire tart just after it comes out of the oven. Cool the tart slightly. Cut into squares and serve warm.
