GRILLED RASPBERRY CHICKEN
Steps:
- Rinse and pat dry chicken breasts with paper towels. Place in large zip-top bag. Add raspberries, vinaigrette, vodka, if using, and chopped mint. Squeeze air out and seal bag. Gently massage the bag to mash raspberries. Marinate in the refrigerator for 1 to 4 hours.
- Preheat grill to medium-high and oil the grates.
- Place the chicken breasts on the grill and cook for 4 to 6 minutes per side. Remove from grill and place on serving platter. Garnish with fresh mint sprigs and fresh raspberries.

- Season the chicken with some salt and pepper. Heat a large skillet over medium heat and add the olive oil. Once the oil is hot but not burning, add the chicken and sear for 3 minutes on each side. Remove from the skillet and set aside.
- Using the same skillet, add the garlic and shallot and cook over medium heat for 1 minute. Add the chicken stock and wine and cook until slightly reduced, about 10 minutes. Add the sliced mushrooms and lower the heat to a simmer. Return the chicken to the skillet, cover and cook until the chicken is cooked through, an additional 10 minutes. Add the raspberries, butter, balsamic vinegar and lemon zest, and continue cooking, uncovered, for 1 minute.

Steps:
- In small bowl, mix preserves, vinegar and liqueur; set aside.
- Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick. Sprinkle chicken on both sides with thyme, salt and pepper.
- In large skillet, heat oil over medium-high heat. Cook onion in oil about 3 minutes, stirring frequently, until softened. Add chicken; cook 8 to 10 minutes, turning once, until no longer pink in center. Remove chicken to plate; cover to keep warm.
- Leave onion in skillet. Add preserves mixture; cook 1 to 2 minutes, stirring constantly, until thickened. Spoon sauce over chicken. Top with raspberries.

- In a large pot, bring to a boil the water, coconut milk, ginger, and rice; cover, and simmer, stirring occasionally, until all liquid is absorbed.
- Meanwhile, in a resealable plastic bag, combine the flour, lemon pepper, and chicken; shake to coat.

EASY & YUMMY RASPBERRY CHICKEN BREAST! ONLY 6 INGREDIENTS!
I have recently edited the recipe to make the text and instructions clearer. This dish is Oh SO YUMMY! I served it with a wild rice pilaf. When I doubled the recipe recently, I added 1/3 white wine vinegar and 1/3 red wine - It was AMAZING! Also, I highly recommend marinading overnight, as opposed to only 30 mins.

- In a small saucepan over medium heat, blend first 4 ingredients until cornstarch is completely dissolved - To avoid lumps, I mix the dry ingredients first, then add them to the liquids.
- Stirring constantly, bring to a boil over medium heat, until mixture thickens (approx. 4-6 min). Add preserves, and stir until melted. Remove saucepan from burner and allow mixture to cool completely.
- Place chicken in a self closing plastic bag. Reserve l/3 cup marinade, then pour remaining marinade over chicken. Close bag and turn to coat. Refrigerate 30+ minutes.
- Remove chicken from marinade. Place chicken on grill over medium heat. Grill approximately 10 minutes or so until done, turning occasionally and basting with reserved marinade.

EASY RASPBERRY CHICKEN
This is a quick fix for those nights when you don't really feel like cooking, but you need something nice to serve. - Set out a sheet of wax paper on your counter and place chicken breasts on top, leaving some space in between each; top with another sheet of wax paper.
- Using a meat mallet or a rolling pin, bang on the chicken to flatten it- the thinner the chicken is, the faster it will cook.
- Heat oil in a large, deep skillet over medium-high heat.
- Remove wax paper from chicken, season with a tiny bit of salt& pepper if desired, and place chicken into the skillet.
- Cook 5 minutes, lid on, then flip over and cook another 5-7 minutes, lid on,- or until the chicken is cooked all the way through, but is not tough (it should be fork tender and the juices should run clear- not pink).
- The cooking time will vary based on how thin you have pounded your chicken.
- Add raspberry jam and orange juice and stir until jam is melted and is blended.
- Bring to a boil, uncovered, and let boil 1-2 minutes or until just thickened slightly.
- Remove chicken from pan and serve sauce ladled over the top.

- In a small bowl, mix together 2 tablespoons garlic powder, 2 tablespoons onion powder, the paprika, salt, and pepper.
- Drizzle the chicken thighs with the olive oil, then sprinkle with half of the spice mixture and rub to coat well. Sprinkle with the remaining spice mixture. Set aside while you make the sauce, or refrigerate overnight if you're grilling the next day.
- Melt the butter in a small saucepan over medium heat. Add the raspberries and cook until they start to break down, about 3 minutes. Add the brown sugar, chipotle powder, remaining 2 tablespoons garlic powder, remaining 2 tablespoons onion powder, the ketchup, and liquid smoke and season with salt and pepper to taste. Bring to a simmer and cook until the sauce thickens, 4 minutes. Remove the pot from the heat and set aside.
- Heat a grill pan over medium-high heat. Grease with grapeseed oil. Add the chicken and grill for about 7 minutes on each side, until the internal temperature of the chicken reaches 165°F (75°C). Once the chicken has cooked through, generously brush with some of the raspberry chipotle sauce. Continue grilling until the sauce caramelizes, 1-2 minutes, then repeat on the other side.
- Garnish the chicken with the parsley and serve warm with the remaining sauce alongside.
