3 pound tri-tip roast
1 teaspoon dry mustard
1 tablespoon chipotle powder, (I like adobe for spicy)
1.5 teaspoon salt
1.5 teaspoon brown sugar
1 tablespoon coffee, (ground fine, not liquid)
1 teaspoon garlic powder
1 teaspoon onion powder

Steps:

  • Trim any excess fat from tri-tip.
  • Into a small bowl mix all spices and blend well.
  • Sprinkle spices on each side of tri-tip and using your fingers rub the spices into the meat.
  • Place roast onto a sheet of foil and wrap tightly. Allow to set for 60 minutes minimum, up to overnight.
  • One hour before grilling remove from fridge and allow to come to room temperature.
  • Heat grill to high. Place roast on grill and sear for 5 minutes each side. Ideally on your gas grill you will have one area you can turn off the gas and allow meat to cook without being on the flames (indirect cooking it).If you dont have that option, place the meat on the cooler area with out as many flames. Close the lid and cook for 5 minutes at a time coming back to check to make sure the flames are not burning the meat.
  • Depending on the size and width of the roast will determine how long it takes to cook your roast. Use a thermometer to cook to 5° before desired doneness.
  • For Rare, you want to remove at 120° (during rest time it will continue to cook to 125°‚. Medium rare 130° (rest temp finish 135). Medium 140° /145° rest temp finish). Any more done than medium the meat will be too dry.
  • Once roast hits your desired temp, remove from grill and allow it to rest for 10 minutes.
  • Cut meat into slices against the grain to maximize tenderness.

This is a quick and easy way to marinate tri-tip. This really brings out the flavor of the beef. The cooking time I noted is passive cooking time and includes the time it takes to marinate the meat.

3 1/2-4 lbs tri-tip roast
1/4 cup low sodium soy sauce
2 tablespoons light olive oil
2 tablespoons water
1 -2 tablespoon McCormick's Montreal Brand steak seasoning (I use the Low Sodium kind)
1/2 teaspoon garlic powder (optional)

Steps:

  • Mix all ingredients (except meat) to a small bowl and stir.
  • Transfer all ingredients (including meat) to large plastic bag.
  • Seal bag, making sure to get most of the air out.
  • Massage marinade into meat through the bag. Let marinate in the refrigerator for 4 - 8 hours, don't marinate overnight as it makes the meat too salty.
  • Grill tri tip for about 15 - 20 minutes on each side or until desired doneness.

A great way to quickly grill large cuts of tri-tip beef. You can even make it on a busy weeknight! I've also made this for BBQ parties. It's better than buying a bunch of steaks!

¼ cup soy sauce
¼ cup olive oil
2 tablespoons water
2 cloves garlic, peeled and chopped
ground black pepper to taste
4 pounds beef tri tip, cut into 1/2 inch slices

Steps:

  • In a large, non-reactive bowl, blend the soy sauce, olive oil, water, garlic, and pepper. Place the beef tri tip in the marinade. Cover, and marinate in the refrigerator at least 4 hours.
  • Preheat an outdoor grill for high heat, and lightly oil grate.
  • Grill the beef slices 3 to 5 minutes per side, or to desired doneness. Discard remaining marinade.
