This vinaigrette does not separate for at least 30 minutes once you shake it! Simple, sweet, and savory.

- Whisk first 3 ingredients in medium bowl to blend.
- Gradually whisk in oil.
- Season with salt and pepper.
SIMPLE BALSAMIC VINAIGRETTE
Steps:
- Beat the vinegar in a bowl with the optional sugar, garlic, salt and pepper until sugar and salt dissolves. Then beat in the oil by droplets, whisking constantly. (Or place all the ingredients in a screw-top jar and shake to combine.) Taste and adjust the seasonings.
- Toss a few tablespoons of the dressing with the salad mix and desired salad ingredients, top with blue cheese and serve immediately.
- If not using dressing right away, cover and refrigerate, whisking or shaking again before use.

- Mix all ingredients together in a jar, screw lid on tight, and give it a good shake. This will last a week on your counter, longer if you keep it in the refrigerator. If you do store in fridge, remember to pull it out an hour or so before you will be needing to use it as the cold temperature will make it solidify because of the olive oil. Always shake well before using.

- Toss the greens, salt and pepper together with just enough vinaigrette to coat, about 1/2 cup. Place them in a decorative bowl and top with the grape tomatoes and bell pepper. Serve the remaining vinaigrette on the side.
- Put the shallot and basil into the bowl of a food processor fitted with a metal blade. Pulse until the shallot is finely chopped. Add the balsamic, sugar, salt and pepper and pulse again. With the machine running, add the olive oil in a steady stream through the feed tube. Pour the vinaigrette into a small bowl and serve.

This is a salad dressing that I really enjoy on a green salad with walnuts, cranberries, avocado and goat cheese crumbles. This dressing is strong, so a little goes a long way.
