These rollups are always a HUGE hit with the kids as well as the adults. A creamy, cheesy salsa mixture provides the filling. They are easy to make and may be prepared in advance.

Steps:
- In a medium bowl, mix the cream cheese, sour cream, fiesta-style ranch dressing mix, chunky salsa and Cheddar cheese. Spread even amounts of the mixture onto the tortillas. Roll tortillas and chill in the refrigerator until ready to serve.
- To serve, slice the chilled, rolled tortillas into 3/4 inch slices and arrange on a large serving platter.

- In a large bowl, combine the mayonnaise, sour cream, cream cheese, onions, bacon and salad dressing mix. Stir in spinach until well blended. Spread over tortillas; roll up tightly jelly-roll style. Wrap in plastic. Refrigerate for at least 5 hours. , With a serrated knife, cut into 1/2-in. slices. Refrigerate leftovers.

I got this recipe from a co-worker after having them at a baby shower. They are absolutely wonderful, even if you're like me and NOT fond of spinach. They are so easy to make.

- In a medium-size mixing bowl, combine spinach, ranch mix, mayonnaise, sour cream, bacon bits and onion. Spread the mixture onto each tortilla and roll it up. Refrigerate the rolled tortillas until ready to serve.

- Spray 6-inch skillet with cooking spray.
- In small bowl, beat egg and water until combined. Heat skillet over medium-low heat, and pour egg mixture into skillet. Gently tilt or swirl skillet to ensure liquid egg covers entire bottom of skillet. Continue to cook until egg is no longer liquid. Top with cheese and bacon.
- Loosen around edge a bit with spatula. Place tortilla on top of egg, and flip onto plate. Place spinach leaves in middle, and roll up. Serve immediately.

EASY SPINACH-BACON TORTILLA ROLL-UPS
These are SOOO DELICIOUS! Perfect to serve at a get together or for a weekend snack. Plan ahead the stuffed tortillas must be chilled for about about 5 hours before slicing to firm up and blend the flavors. If you slice the rolls into about 3/4-inch slices you should get about 28-30 slices, this recipe can easily be doubled. Prep time includes chilling time. Just to let you know, I have even stuffed, rolled and sliced the tortillas then froze the slices until ready to be baked, it's a huge time-saver if you are serving them for a get together as everything is done in advance, there great to have handy in your freezer for a snack also. The water chestnuts are optional, I like to add them in!

- Cook the spinach in boiling water for about 8-10 minutes; drain and place in a bowl to cool.
- When the spinach is cool enough to handle squeeze out any excess moisture with hands, then place in a large bowl.
- Add in all remaining ingredients with crumbled bacon except the tortillas; mix well to combine and adjust seasoned salt, pepper and cayenne to taste.`.
- Heat 1 tortilla in a large skillet over high heat until warm and pliable (about 1 minute per side).
- Spread 1/3 of the filling over the warmed tortilla leaving 1/2-inch border.
- Roll up tightly enclosing the filling.
- Wrap the roll in plastic wrap.
- Repeat with remaining 2 tortillas and filling, the cover each one with plastic wrap.
- Refrigerate the rolls for about 2 hours or up to 4 hours until the filling is very firm.
- Set oven to 400 degrees.
- Remove the plastic wrap, then slice off the uneven ends or the rolls.
- Slice the rolls crosswise on a slight diagonal into about 3/4-inch thick (at this point you can freeze the slices to bake at a later time).
- Arrange on a large baking sheet.
- Bake until heated through (about 7 minutes).

- Cook bacon in heavy large skillet over medium heat until crisp; drain. Crumble bacon into medium bowl; stir in spinach and next 5 ingredients.
- Heat 1 tortilla in large skillet over high heat until warm and pliable, about 1 minute per side. Transfer to work surface. Spread 1/3 of filling over tortilla, leaving 1/2-inch border. Roll up tightly, enclosing filling. Wrap in plastic. Repeat with remaining 2 tortillas and filling. Chill until filling is firm, at least 1 hour or up to 4 hours.
- Preheat oven to 400°F. Remove plastic; slice off unfilled ends. Cut rolls crosswise on slight diagonal into 3/4-inch-thick slices. Arrange on large baking sheet. Bake until heated through, about 7 minutes.
TURKEY, BACON AND RANCH TORTILLA ROLL-UPS
Your family and friends will go nuts for these game day-ready tortilla roll-ups. Layers of melty cheese, deli turkey, bacon and ranch dressing are rolled into each tortilla. Slice them into pinwheels and serve them with plenty of Buffalo sauce and ranch dressing.

- Arrange the bacon in a single layer in a large nonstick skillet and cook over medium heat, flipping occasionally, until well browned and crisp, 6 to 8 minutes. Drain on a paper-towel-lined plate. Pour the rendered bacon fat into a small heatproof bowl and wipe out the skillet; reserve both. Once the bacon has cooled slightly, roughly chop into small pieces.
- Lay 1 tortilla on a clean work surface. Top with 3 slices of the cheese, tearing some of the slices to fit in an even layer. Next, top with 3 slices of the turkey, making sure to cover the cheese completely. Spread 1 tablespoon of the ranch dressing over the turkey, then sprinkle with half of the chopped bacon. Tightly roll up the tortilla, tucking the filling in as you go. Wrap tightly in a 12-by-12-inch piece of foil, pinching the ends to seal. Repeat with the remaining tortilla, cheese, turkey, ranch and bacon.
- Combine the hot sauce and butter in a small saucepan and cook over medium heat, stirring occasionally, until the butter has melted and the sauce is smooth, about 4 minutes. Keep warm.
- Return the reserved skillet to the stove over medium heat. Place the foil-wrapped rolls in the skillet and cook, turning occasionally, until heated through, about 4 minutes per side. (Wrapping and cooking the rolls in foil first will help keep their shape for easy slicing.) Remove the rolls and discard the foil. Add 1 tablespoon of the reserved bacon fat to the skillet. Return the rolls to the skillet, seam-side down, and cook until the tortilla is well browned on all sides, 1 to 2 minutes per side.
- Slice each roll crosswise into about 10 pinwheels. Serve with the Buffalo sauce and more ranch dressing, for dipping.
