This is a very easy but good recipe. People will think you are a gourmet chef with these dates filled with chevre cheese and pecans!

Ingredients

20 pitted dates
¼ cup goat cheese
20 pecan halves
10 slices bacon, cut in half
½ cup balsamic vinegar
1 tablespoon white sugar

Steps:

Preheat oven to 350 degrees F (175 degrees C).
Slice open the dates, and stuff each with about 1/2 teaspoon goat cheese. Top each date with a pecan, using the goat cheese to hold the pecans in place. Wrap each date with 1/2 slice bacon.
Arrange the wrapped dates on a baking sheet. Bake 15 to 20 minutes in the preheated oven, until the bacon is crisp and evenly brown.
In a saucepan over medium heat, mix the balsamic vinegar and sugar until thickened. Pour over the dates to serve.

This recipe came off the package of dates from Francies Dates, Phoenix, AZ. Flavor is enhanced if cake is aged for a day or so. A nice moist date which can be served with whipped cream sprinkled with chopped nut, or dusted with powdered sugar or with ice cream or cake au lait. Enjoy!

Ingredients

1 1/2 cups dates, chopped
2 teaspoons baking soda
2 cups boiling water
1/2 cup butter
2 cups sugar
1 teaspoon vanilla
2 cups flour
1 1/2 cups nuts, chopped

Steps:

Preheat oven to 350 degF.
Prepare a 13 x 9 x 2 inch cake pan.
Mix tog chopped dates, soda and boiling water and let stand.
Mix tog butter, sugar and vanilla, then add the date mixture.
Add the flour and chopped nuts.
Pour into prepared cake pan and bake at 350 degF for approximately 35 minutes. Test cake with toothpick to see if done.Cool in pan.
